- Hey, y'all, well, I'm in the kitchen right now by myself,
0:04
except for Theresa and Eddie
0:07
and Michael's sitting over there and his easy chair.
0:12
But Jamie was here for a few hours and I enjoyed being
0:17
in the kitchen so much with him
0:19
because we were cooking out of his cookbook
0:23
that he said is his favorite book of all
0:28
that he and his brother co-wrote.
0:31
And this was always a favorite book of mine too, because
0:36
on the back was little Jack.
0:38
He had a play kitchen in his playroom,
0:44
and I went over one day and he said,
0:45
"Ganny, I've opened a restaurant."
0:50
I said, "You have?
0:53
Well, go and take me to it and tell me the name of it."
0:58
Oops, and he said, "It's called Rooster's Restaurant."
1:05
And a fan out there that watched my show
1:10
played with metals, he made things in different metals.
1:14
And he made and sent to me
1:17
a metal sign saying Jack's Rooster Restaurant.
1:24
(laughing)
1:25
And it was so cute.
1:27
And I mean, he did that for a couple of years.
1:29
He was in love with Rooster's Restaurant,
1:32
but oh my goodness, he was so cute.
1:37
So I do love that cookbook too, son.
1:40
So, we're cooking out of that cookbook
1:44
for the last few three or four shows,
1:46
and this is Jack's favorite pasta salad
1:49
with loads of veggies.
1:52
And so I've started our pasta.
1:56
Now, Jamie tells us that they use the wagon wheels
1:59
because that was Jack's favorite shaped pasta.
2:05
So I'm using a cork screw
2:08
because Theresa said they don't make
2:11
wagon wheel pasta. - I don't know if they
2:11
don't make it, but I couldn't find it
2:13
in two different grocery stores.
2:14
- Okay, well.
2:16
- [Theresa] It wasn't even missing
2:17
on the shelf, though, that's what.
2:18
- It wasn't?
2:20
Well, maybe they've discontinued that one.
2:22
So, Jamie tells us to cook this three minutes less
2:28
than what the box says,
2:31
because we're gonna cook in stages.
2:35
We're gonna add one cup.
2:39
Well, one cup of edamame.
2:44
Did I say that right?
2:45
Sometimes my words don't come out exactly right.
2:49
- [Theresa] That was frozen edamame.
2:51
- Yes, it was frozen.
2:54
And about a half a cup of carrots.
2:59
So we're gonna let that cook for two minutes.
3:04
And then we're gonna add broccoli to the pot,
3:09
and we're gonna let that come back to a boil
3:12
and cook it for about one minute.
3:14
So three minutes shy of the recipe on the box brings us up
3:19
to the proper amount of cooking time for the pasta.
3:24
So I might need to cut that back up.
3:27
I cut it down, it was boiling to beat the band.
3:32
So, you know how in our cookbooks some of our recipes
3:35
will tell a little story or something like that,
3:39
and this is what Jamie said about this.
3:45
He said, "You can use whatever pasta you like,
3:48
but we often go with wagon wheels
3:50
because they're Jack's favorite.
3:54
And I'm good with it as long as he doesn't think
3:56
it's hilarious to roll them across the table
4:00
during dinner time."
4:01
(chuckling)
4:03
So I can see him just rolling those wagon across the table.
4:11
So that's pretty much,
4:15
pretty much it.
4:17
I mean, all we had to do is cook the pasta
4:20
and the veggies for a little while.
4:23
And, like I said, next, it's gonna be the broccoli.
4:28
So that's been in there for two minutes,
4:31
our carrots and our edamame.
4:33
And then we're gonna put in
4:37
one crown of broccoli.
4:44
And that's from just one head,
4:47
one head of broccoli.
4:56
I'm gonna have to keep stirring this
4:58
'cause I almost didn't put enough water in that pot,
5:01
did I, Eddie?
5:04
- [Eddie] Looks like the noodles...
5:06
Got to it.
5:08
- The noodles got fat, fat, fat, fat.
5:14
But we sure don't want that broccoli to overcook.
5:19
So when we drain this,
5:23
we are gonna immediately run cold water
5:31
over our pasta and veggies so it won't keep cooking.
5:41
(pot bubbling)
5:49
Okay, you think that's been a minute, Eddie?
5:52
- [Eddie] I mean, the broccoli turned a nice-
5:53
- Yeah! - Bright green.
5:54
- Yeah, the broccoli's such a pretty green.
5:57
But you want that broccoli crisp in this pasta salad.
6:03
When the boys and I started The Bag lady,
6:09
I used to fix a pasta salad,
6:12
and people loved it,
6:14
but after we closed The Bag Lady...
6:23
I found that we didn't make much pasta salad.
6:27
But some people really love, love, love the pasta.
6:33
All right, so there we go.
6:35
(water splashing)
6:40
I wanna make sure
6:43
we get that all stirred up.
6:47
I'm thinking I'm gonna turn the spray on.
6:52
That way it covers more surface.
7:08
Oh, I love the way that broccoli stayed
7:10
so pretty and green.
7:14
Oh, yeah.
7:22
Yep, it's stopped cooking.
7:24
Now, we'll want to shake this out real good.
7:28
Because we're using corkscrews,
7:32
water will get trapped into that pasta.
7:38
So you wanna not rush up the process of draining it.
7:46
'Cause that water has got to find its way
7:48
out of these little corkscrews.
7:53
Mm, the pasta's cooked perfectly.
7:56
All right.
8:00
So...
8:07
While we're letting that drain,
8:11
I'm gonna make our dressing.
8:15
Which is red wine vinegar.
8:20
Oh yes, sugar, teaspoon of sugar.
8:24
And...
8:25
(bowl clanging)
8:30
Let's see if Jamie tells us to salt the dressing.
8:41
No, he just said combine the oil, vinegar, mayonnaise,
8:43
sugar, oh, and salt and pepper.
8:46
And Jamie recommends us using it in a ball jar,
8:53
like you use for your canning,
8:55
because you can shake this dressing real good so it will...
9:02
So it will get mixed up real good.
9:04
So there's a little salt, a little pepper,
9:07
and in goes the oil.
9:23
Okay.
9:26
In goes the mayonnaise.
9:34
Now, I think I would probably add
9:35
a little bit more mayonnaise (chuckling),
9:39
but...
9:42
My sons and I don't always see eye-to-eye
9:46
on butter, mayonnaise, sour cream, cream cheese (chuckling).
9:51
(bowl clanging)
10:04
Whoa, that is so very good!
10:09
So, so good.
10:13
All right.
10:17
I don't know that we're gonna need
10:21
all this pasta.
10:23
I may save some of it and make an Alfredo sauce
10:30
with it.
10:33
I love the edamame in there.
10:39
And every one of my children just love that.
10:42
When we go to eat Asian, they always order the edamame,
10:50
so I make sure I get all of those out.
10:54
So we're just gonna toss that
10:57
in with our dressing, and we're going to add
11:01
some cherry tomatoes that have been sliced.
11:05
And we're gonna add a cup of, is that mozzarella?
11:10
- Yes, mam. - Yeah, mozzarella cheese.
11:15
So you can see, oh, how pretty that looks!
11:21
And Jamie said that...
11:27
That sometimes they'll have this just as the main meal.
11:31
But quite often, Jack loved it so much he would eat
11:37
just this and of course, Matty wasn't even a twinkle
11:40
in his daddy's eye at that time.
11:44
Because Jack is five years ahead of Matty,
11:47
five years older.
11:48
But Jamie said that he would fix he and Brook
11:52
a chicken breast, a roasted chicken breast
11:57
and put it on top of their salad.
11:59
But look how pretty that is.
12:02
And of course, you know how we always say,
12:05
you can add anything to it or take away.
12:11
Just let your imagination run wild
12:16
and pick the things that you really, really love.
12:22
All right, I want a piece of edamame.
12:30
This is so good.
12:32
Mm!
12:36
Mm!
12:43
This makes me think,
12:44
why did I not make pasta salad?
12:47
You know (chuckling)?
12:53
And the mozzarella.
13:00
You could actually use fresh, sliced mozzarella in it,
13:06
or you could actually use any kind of cheese you want in it.
13:10
I think fresh shaved Parmesan cheese
13:14
would be real good in it.
13:17
So that's it.
13:21
- [Eddie] From Rooster's kitchen.
13:23
- Uh-huh, from Rooster's Restaurant
13:26
to y'all's kitchen.
13:29
And I know that little Jack
13:31
is one of the sweetest young men, he's 14 now.
13:35
And I know if he was standing up here beside me, he'd say
13:39
"Tell him I send love and best dishes too, Ganny."
13:42
(chuckling)
