- Y'all today I am making one of my favorite dishes
0:05
that's kind of a one pot deal and it's beef stroganoff.
0:11
And in the magazine, in Cooking With Paula Deen Magazine,
0:16
we ran the recipe as like a casserole.
0:19
So this is perfect, isn't it, Theresa?
0:22
If you got company coming, get that puppy done.
0:26
I've got a little bit over two pounds of ground beef
0:29
and you can see it's got some fat and some water,
0:34
so I'm gonna drain this 'cause we don't want it too greasy.
0:40
And while it's draining, I'm gonna add, oh gosh
0:45
about a cup of onions and like a tablespoon of garlic.
0:53
I love this dish.
0:56
And that looks like a 12 ounce carton of mushrooms,
0:59
right, Theresa?
1:01
- [Theresa] Yes, ma'am.
1:02
- I thought that's what it looked like.
1:06
Okay.
1:11
So, there we go.
1:16
Now we gonna cook the onions and the mushrooms
1:25
along with the ground beef.
1:26
And the ground beef is still just a tad pink in places,
1:29
which is good so it's definitely not overcooked.
1:34
All right so while this is cooking away,
1:38
I'm gonna come down here.
1:41
Well actually, I'm gonna turn that up.
1:44
I'm gonna come down here
1:45
and go ahead and make our ranch dressing.
1:47
And it's one cup of mayonnaise.
1:50
Ranch dressing is really easy to make
1:54
and I'm constantly running out of it.
1:57
So you can throw this together in just a second.
2:03
And I'm using fresh herbs, I've got dill, I've got parsley
2:08
and I've got chives and I've got buttermilk
2:13
and I've got lemon juice,
2:16
like a tablespoon of lemon juice.
2:22
So I'm gonna get these mixed together real quick like,
2:28
'cause the longer this one sits y'all, the better it is.
2:34
See how simple that is?
2:37
A fourth of a teaspoon of salt.
2:41
Fourth of a teaspoon of pepper.
2:45
And like I said, I have a tablespoon of each of those herbs.
2:49
Now, if you don't have any fresh and you want to use dry,
2:52
just remember to back off on 'em
2:54
because they're much stronger.
2:58
The dried ones are much, much stronger than the fresh ones.
3:02
It sounds like it should be opposite, but it's not.
3:12
That dill is what really brings that ranch dress into life,
3:20
you know? - That smells so good.
3:22
- Doesn't it smell delicious?
3:26
All right, so you wanna put this in the refrigerator.
3:31
Just let those flavors marry.
3:34
All right, the next step to this beef stroganoff is flour
3:41
and we're gonna sprinkle that on there
3:43
and that will help thicken it.
3:45
So we'll wanna cook that for about 10 minutes,
3:47
make sure the flour taste is gone.
3:54
This is gonna be delicious.
3:56
My whole family loves this dish.
3:59
Lots of times on Sunday, I'll have all the kids over
4:03
and once in a while they'll actually request this.
4:09
And I love those Sundays when they want this
4:14
because it really is easy and delicious
4:18
to feed a crowd with.
4:21
All right, now we are gonna put, I think it's like
4:29
two cups of yes, two cups of chicken broth.
4:36
And that broth will tighten up with us using that flour
4:44
and plus give it wonderful, wonderful flavor.
4:50
So we're just gonna let that cook
4:52
and stir it just occasionally.
4:57
And so over here, I've got my, easy for me to say,
5:01
mozzarella cheese.
5:04
We got our sour cream, salt and pepper
5:06
and we've got our egg noodles.
5:09
So we are gonna be mixing all this together.
5:13
And we're gonna top it with panko.
5:17
And I like to go ahead and melt my butter
5:23
when I'm putting a topper on my casseroles,
5:27
because it's so hard to dollop pieces of butter
5:33
and get it even, so this just makes it so much easier
5:37
and it all gets buttered equally.
5:41
We don't wanna cheat any of those crumbs
5:43
out of their butter. (laughs)
5:46
Whoops.
5:53
So there they are nice and buttered
5:56
and they'll be be ready for us when we
6:00
get everything in our casserole dish.
6:02
And this makes a good bit, y'all,
6:04
so be prepared to find you a big dish to put it in.
6:10
I'm gonna turn that up just a wee little bit.
6:19
And you know what?
6:20
I can't with like Jack and Maddie and Jamie and Brooke,
6:26
I can't get enough mushrooms in there to suit them.
6:29
They love the mushrooms that are in it.
6:32
Okay, so we got about 10 minutes on this, y'all
6:37
to let it cook and thicken.
6:41
Let that chicken broth flavor go all through that
6:44
ground beef and onions and mushrooms.
6:51
I got my egg noodles here
6:55
and now I am gonna add my mozzarella cheese.
7:00
That's two cups, but y'all know you can go into this link.
7:04
And 'cause sometimes I'm not good about
7:07
giving the proper amounts, but you can go to this link
7:12
and it will give you your exact measurements,
7:16
but I could see that that was two cups of mozzarella.
7:21
And sometimes pasta can not wanna separate,
7:26
so I wanna make sure that that cheese gets all through it.
7:31
And now I'm gonna add my sour cream
7:35
and that is what makes it so creamy and rich and delicious.
7:43
So what'd you say you were making Theresa?
7:46
- [Theresa] We're gonna be making a little shrimp cristini
7:48
in another recipe. - Ooh, I love cristinis.
7:53
(laughs) - That's what I'm making
7:54
is the cristini part.
7:56
- All right now for the salt and the pepper.
8:01
You know sour cream screams for salt,
8:04
to me, that is my opinion that, and I love sour cream
8:11
but I sure do love it with a little salt on it.
8:15
All right.
8:16
Whoa, did you see what I almost did, Eddie?
8:19
With my thumb I almost slung this off the stove.
8:24
(laughs) - That would not be good.
8:26
- I would've cried.
8:28
- Me and you both and Eddie. (laughs)
8:30
- We'd all cried and ruin it.
8:34
All right.
8:37
I mean, it's barely gonna fit in this pot, y'all.
8:41
All right now I'm putting this in a 13 by nine by two pan
8:45
and I am gonna spray it a little bit.
8:48
Theresa, what size was that noodle container?
8:51
- It was a 16 ounce. - 16 ounce package, okay.
8:55
- And just. - So, you know
9:00
if you don't need this much,
9:06
if it's too much for you to cook off at one time.
9:10
- Even half that. - Oh, easily half it.
9:16
But it's so good left over, y'all.
9:21
So good left over.
9:26
Oh my goodness, do you know what I forgot?
9:28
(laughs)
9:31
Do you know what I forgot?
9:32
I forgot to add the ranch dressing to it.
9:36
- Oh goodness. - I know it,
9:38
I put it in the refrigerator so it could.
9:41
So now I'm gonna have to.
9:44
Do y'all ever do things like that?
9:47
All right, I'm so glad I remembered that.
9:50
'Cause I thought this needs to be a little bit looser.
10:02
First your mind then you close in your money.
10:05
(laughs)
10:13
I can't believe I remembered, Theresa.
10:16
(laughs)
10:18
You wanna just rinse this out please?
10:20
- Sure. - So it'll be
10:22
not so gummed up.
10:24
All right, here we go.
10:26
See this nice bucket?
10:28
It's wonderful.
10:29
What material is this made out of, Eddie?
10:32
- [Eddie] Maybe aluminum.
10:34
- That's what I think.
10:36
I know it's not stainless steel.
10:40
All right so in goes the ranch dressing.
10:50
Creamy, creamy, creamy.
10:52
Now that looks a whole lot better.
10:58
Whole lot, now that's the right.
11:00
- [Theresa] I'm sure people out there were watching going
11:01
when is she gonna add the? (laughs)
11:04
- Did she make that ranch dressing to pour on top of it,
11:06
when she took it outta the oven?
11:08
(laughs)
11:09
That'd be good too.
11:12
But yeah, now that creaminess is right.
11:19
- [Theresa] You need me to spray this (indistinct)?
11:21
- Yeah, I'll spray it.
11:22
I do need to spray it? - No I said do you?
11:24
- [Paula] Oh, I sprayed it the first time.
11:27
- [Theresa] I thought you sprayed everything.
11:28
- I pretty much, if there's a chance fit to, you know
11:32
bake in on the, whatever the container is,
11:39
so we don't have to scrub too, too hard.
11:44
Okay we're gonna try this one more time.
11:47
(laughs)
11:54
Yeah, I thought, how come this isn't juicier?
12:14
This is going to be to the tipity top.
12:22
That's so good.
12:26
So now everything is done in this.
12:30
So it's not gonna take a whole long time in the oven.
12:33
All you got to do is bake it off
12:37
until it's nice and bubbly and hot.
12:50
All right, remember that panko that we buttered
12:54
a little bit earlier?
12:57
Well, now it's going on top and this makes the best crust.
13:03
You know, we use crackers, buttered crackers
13:10
on top of a lot of our recipes,
13:13
but I tell you what this panko,
13:15
it's on the money as a topper
13:20
for any kind of casserole you're cooking,
13:25
I love it.
13:30
Okay, it's ready to go in the oven.
13:35
Look at that beef stroganoff, y'all.
13:37
I just took that out of the oven and it's so much easier
13:42
than cooking it on top of the stove
13:47
and having to watch it
13:48
to make sure it doesn't get too hot or anything.
13:55
So a little, little vegetable, you know,
14:01
mama always told us to eat our veggies so here we go,
14:06
along with our noodles.
14:10
That looks so good.
14:12
You know you brown you up some French bread and a salad
14:20
and you got a wonderful meal with very easy efforts.
14:25
Ooh, thank you, Theresa.
14:28
Let me see.
14:32
Could you spare a fork?
14:34
- [Theresa] Sure.
14:35
- Thank you.
14:38
(laughs)
14:42
- [Theresa] You don't wanna use your fingers?
14:43
(laughs)
14:46
- Whatever you want me to do, Sally.
14:49
(laughs)
14:51
- [Theresa] Can you do a song and dance for us?
14:53
- Oh sure, just give me your request.
14:58
- [Theresa] (indistinct).
14:59
- Dance, little monkey, dance.
15:01
(laughs)
15:03
How many times have I said that
15:05
with these producers over the years?
15:08
(laughs)
15:09
Why don't you just go ahead and say dance little monkey?
15:13
So I start dancing.
15:15
(laughs)
15:19
Ooh, this is piping hot.
15:21
Can you see the steam, Eddie?
15:23
And see that mozzarella cheese, look at that.
15:26
You see that string of?
15:29
Thank goodness it was cheese and not a hair,
15:32
'cause it was getting pretty long, wasn't it?
15:35
(laughs)
15:36
- [Theresa] That's like good mozzarella cheese you have.
15:38
- Yes I bought the finest the other day
15:42
at the grocery store.
15:42
I can't remember what I was making,
15:44
but I said, I want the very best.
15:47
- [Theresa] Lasagna for Ollie.
15:50
- You're exactly right.
15:51
(laughs)
16:00
This is really good.
16:02
I love it with the Japanese bread crumbs,
16:05
that little bit of crunch.
16:11
Delicious.
16:12
Only thing it needs is a little more salt and that's it.
16:16
And I thought we put a good bit of salt in it, Theresa.
16:21
- [Theresa] I did too.
16:26
- So just a little I did. - You put it twice?
16:28
- I did.
16:29
So that's it,
16:33
easy and delicious beef stroganoff.
16:38
I'll see y'all tomorrow.
16:40
(laughs)
