0:03
I'm walking down memory lane today
0:05
with a friend of mine, actually, a married couple.
0:09
I'm gonna share a recipe
0:11
with Cheryl and her husband Griff Day.
0:15
If you ever visited Savannah,
0:17
there might be a good chance
0:19
that you went to Back in the Day Bakery.
0:22
Cheryl and Griff, Griff was a great bread maker,
0:26
and Cheryl was kind of the sweets girl,
0:29
making all the desserts,
0:30
but they were just a lovely couple
0:33
and here's their book.
0:38
And I think they had two or three cookbooks, didn't they?
0:41
They were such a cute, sweet couple.
0:48
Cheryl's been on my show, what, several times.
0:55
And then, one day I heard,
0:58
I don't know if this is the truth,
0:59
but the rent on their building went up so high
1:02
they decided not to resign.
1:05
So, Cheryl, if you are watching this video,
1:08
please call me, girl,
1:09
I wanna know where you are and what you're doing.
1:13
And I know whatever you're doing, you're doing it well
1:18
'cause they were perfectionists.
1:21
So I'm gonna share Cheryl's banana nut bread recipe
1:26
I've got lots myself,
1:28
but I thought I wanna give a shout out to Cheryl and Griff.
1:35
So we're gonna start with,
1:37
I think it's two cups of plain flour.
1:41
And we're gonna sweeten Cheryl's with brown sugar.
1:47
And I'm just gonna take my,
1:50
I don't even think we have to use a mixer for this one.
1:57
Because breads and muffins,
1:58
you know, you don't wanna over beat 'em
2:02
because it's just not good.
2:03
But I wanna make sure that brown sugar
2:06
is broken up in that flour,
2:08
I don't want any lumps of brown sugar in it.
2:17
Okay, and now I'm gonna add,
2:21
I think that's baking powder, right, Theresa?
2:24
- [Theresa] No baking soda.
2:25
- It was baking soda and a little salt,
2:34
and Cheryl puts a little mace in her recipe,
2:38
so I'm gonna add the mace
2:41
so that gets all the dry ingredients.
2:50
And I'm gonna go ahead and put the nuts,
2:54
and we're using pecans for this.
3:00
Because that's what she used
3:02
and she's generous with the nuts,
3:04
which I love, love, love, love.
3:07
All right, now we're gonna come over to this bowl
3:09
and we are gonna add our mashed bananas,
3:30
which is not melted anymore. (laughs)
3:35
- [Theresa] It says to cool down,
3:37
I don't know how you have it.
3:38
- Well, it ain't melted, honey, it's solid.
3:41
You wanna stick this in the microwave
3:43
or you want me to do it?
3:44
Are you busy on your computer?
3:46
- [Theresa] No, no, no, I was just texting the girls.
3:48
- I mean, you can't get it to pour.
3:51
- (laughs) I love it.
3:55
All right, then I'm gonna add my two eggs
4:03
and two teaspoons of vanilla extract.
4:09
I'm getting weak in my old age, y'all.
4:19
Now we are preheating our oven at 350 degrees,
4:24
which is normal baking temperature.
4:27
Let's see how long she says to bake it.
4:32
She said, "Bake for 45 to 55 minutes
4:34
until the loaf is golden brown
4:37
and a cake tester inserted
4:38
in the center of the loaf comes out clean,"
4:41
I don't have a cake tester.
4:44
I didn't even know they made a cake-
4:46
- We call it a toothpick.
4:47
- Yeah, (laughs) I think you might be right.
4:50
- And the normal one.
4:53
- [Theresa] You're welcome.
5:02
Oops, get back in there.
5:06
You don't wanna lose any of that butter.
5:10
All right, so we're just gonna mix this up real well.
5:16
sour cream, melted butter
5:23
All right, so now we're gonna take our wet ingredients
5:41
You know, I don't think I've ever made this recipe,
5:44
so I'm looking forward to tasting it.
5:52
We're just gonna fold this all together.
6:02
Did you ever hear where Cheryl and Griff went?
6:06
- [Theresa] No, I think they're still in Savannah.
6:08
I don't think they left Savannah, I just don't know where.
6:12
- [Theresa] They're probably enjoying
6:13
what's called retirement.
6:15
- Well, they worked very hard for years.
6:19
- And, you know, bakery hours are not like mine.
6:22
You talking about three o'clock in the morning,
6:26
that's baker's hours.
6:36
I could never own a bakery (laughs)
6:41
because sometimes at three o'clock in the morning,
6:43
I'm still walking around drinking coffee,
6:45
ain't even been to bed yet.
6:49
Okay, here we go, it's mixed up good.
7:00
Okay, and we're using a 9x5 loaf pan and we've sprayed that.
7:10
Cheryl said using a spatula,
7:13
she's very precise in her recipes,
7:19
she doesn't miss a step.
7:32
She tells us to take a spatula
7:35
and spread this out evenly in your pan.
7:53
- [Theresa] It just looks like a lot
7:55
'cause it's a lot of ingredients.
7:56
- Uh-huh, but it's so simple, so easy.
8:04
Now Cheryl said if you have decided to use
8:09
a brown sugar rather than white sugar,
8:14
she recommends that you sprinkle
8:18
some additional brown sugar on top.
8:24
And I sure do like that idea,
8:26
(laughs) don't y'all?
8:30
- Yes. - I thought I seen more sugar.
8:37
That was a hard little chunk.
8:49
350 for 45 to 55 minutes.
8:59
This is just beautiful.
9:04
I love the end piece where it's crispy.
9:11
Oh Cheryl, look at that.
9:15
Look at that beautiful banana nut bread.
9:19
Now I love to get a softened,
9:25
you know, spreadable cream cheese,
9:28
look, that's not wanting to melt on this.
9:32
I love it with cream cheese.
9:34
You know it, we keep our kitchen so cool
9:36
that my butter almost gets hard again.
9:42
But, so you can decide
9:47
what you want on your bread.
9:56
and it's wonderful to slice it and butter it
9:59
and put it in a cast iron pan and toast it.
10:12
Like I said, honey, if you see this video, call me.
10:17
I wanna know what you're doing
10:19
and what you're cooking.
10:38
I am sure this cookbook is still available in the stores,
10:46
if you wanna do something nice for yourself, pick it up
10:56
Hey, y'all, it's Paula Deen.
