I am thinking about y'all for New Year's Day
0:08
because it may be, just maybe,
0:12
that you had a late night the night before
0:17
bringing in the new year
0:19
and maybe one or two adult beverages too much.
0:25
on what you're gonna have to eat on New Year's Day,
0:29
and I'm fixing to share with y'all a recipe
0:31
that is a Swiss chard black-eyed pea,
0:35
let me get it right, black-eyed pea and rice casserole.
0:39
And you can make this ahead of time
0:41
and just throw it in the oven on New Year's Day.
0:44
And I also want to come up with y'all a good cold dip,
0:48
you know, using the things
0:52
for luck, wealth, and health,
0:57
getting all those things in there.
0:59
So I'm gonna start with our casserole
1:03
by adding water, my water,
1:12
and frozen black-eyed peas.
1:15
And they have a way now
1:17
that they flash freeze the vegetables
1:21
and the frozen vegetables are really so good.
1:24
Maybe the only one I don't like frozen
1:26
is maybe a green bean,
1:28
but the rest are really, really, really good.
1:32
All right, so I've got some red pepper flakes
1:35
I'm gonna put in there.
1:37
And I've got some salt
1:40
and I've got some butter.
1:44
And we're gonna bring this to a boil
1:50
and then we're going to cut it down,
1:53
cover it and cut it down,
1:54
and we're gonna let it cook, well, about 20 minutes
1:59
or until the rice is done.
2:00
You know, rice, it takes 18 to 20 minutes every time.
2:06
So as soon as it starts boiling,
2:09
I'm gonna cut down the temperature, cover it,
2:12
and let it have a nice slow bath.
2:20
I wanna go ahead while I've got my spray out
2:24
and I'm using a three-quart casserole dish
2:33
Now, while we're waiting on that to get hot,
2:38
I'm gonna go ahead and saute our Swiss chard
2:42
along with a little olive oil,
2:55
And I think I've got like 12 cups of Swiss chard
3:06
I love the red in it.
3:08
Don't you, Eddie? - Yes.
3:13
Now, we really just want
3:22
You know, it won't take five or six minutes
3:27
And while we're waiting on that,
3:30
I'm going to cut up my bacon.
3:35
And remember, I always advise,
3:39
you see how this bacon is cooked?
3:44
A lot of people want it real, real, real, real, real crispy.
3:49
But when I'm putting it in another dish,
3:54
I like it to be undercooked a little bit
3:57
because there's still enough fat left in this bacon,
4:00
even though it's been cooked,
4:05
And to me that's just real important.
4:10
So I'm doing it the easy way with my scissors.
4:14
Now I'm gonna add five cloves
4:17
of fresh chopped garlic.
4:20
Now, I didn't wanna put that in my pan first
4:22
'cause, you know, garlic can burn real bad
4:28
It can burn real, real fast.
4:30
All right, our Swiss chard is wilted.
4:35
And so now I'm just gonna stir my bacon into this.
4:39
And when our rice is done, we're gonna mix this in the rice
4:45
and put it in the oven.
4:47
It looks real good, doesn't it?
4:50
- [Speaker] And so easy.
4:51
- I think that would make a good dip right there
4:55
with a little cream cheese, uh-huh.
5:03
Okay, step two is done.
5:13
Now, while step one is not done yet,
5:16
step two and three is done.
5:21
So now this is the final step that I'm going to do
5:25
while we are waiting on our rice.
5:28
And I've got breadcrumbs.
5:30
In fact, the recipe calls for just breadcrumbs.
5:34
But I love mixing some panko.
5:39
You know, it just gives it a little bit more
5:44
character or something,
5:47
more depth, I don't know.
5:49
I love panko (chuckles).
5:51
That's the bottom line.
5:53
And when I do use just breadcrumbs,
5:57
I like to put it in my food processor,
5:59
you know, and make my own breadcrumbs.
6:05
Now, I'm gonna put just enough butter in here
6:10
to coat all of our breadcrumbs.
6:13
You know, you could go ahead
6:14
and just put it like this on the casserole,
6:17
but you will never, ever get that butter
6:22
on each and every crumb.
6:24
So this way you can make sure
6:26
that everybody gets their fair share of butter.
6:30
All right, my butter's melted,
6:32
so I'm just gonna stir our breadcrumbs and our pankos
6:40
and get 'em all buttered.
6:42
And if you find you didn't put enough butter,
6:46
not a problem because I know where I keep my butter.
6:52
So you just add a little bit more
7:00
has got a little butter.
7:04
Our water has been absorbed.
7:09
Our rice is still just a teeny bit crunchy.
7:12
To me, you have to cook brown rice just a little bit longer,
7:16
but it's still gonna have 30 minutes in the oven,
7:21
so I'm not too worried about it.
7:27
I think it'll finish right up beautifully.
7:29
So we're going to add our garlic, bacon, Swiss chard
7:36
to our beans and our rice,
7:41
and we're gonna stir those together.
7:43
And like I said, make these the day before
7:46
or, you know, even two days before.
8:04
And now I'm gonna put this,
8:07
oh, Michael, just in time.
8:09
Would you hold that side of the pan?
8:12
My strength is not what it used to be.
8:18
- I'm gonna keep an eye on this
8:19
because if I think it's getting too dry,
8:24
I'm not afraid to add a little liquid to it.
8:28
But we're gonna cook it at 350 for about 30 minutes.
8:33
And I've got my buttered panko
8:37
and breadcrumb mixture,
8:42
and I'm gonna have some leftover, I think,
8:44
for my next casserole,
8:48
I'll just put it in the refrigerator
8:54
and use it when I need it.
8:56
Y'all, this is so tasty.
9:00
It's been a long time since I have made this.
9:09
It's out of this world.
9:12
And the crunch of the panko.
9:16
The only thing I might recommend to y'all
9:21
to use a little bit more water
9:27
than what the recipe calls for.
9:32
Or you could even add,
9:36
when you got all your ingredients mixed up,
9:38
you could also add like a half a cup of heavy cream
9:46
which would give you a little bit more moisture.
9:48
But this is wonderful.
9:52
And like I said, if you make it the day before,
9:54
which I highly recommend,
9:57
you may have to cook it a little bit longer
9:59
than the directions say
10:01
because it's been in the refrigerator.
10:03
But you'll definitely wanna take it out
10:05
and let it sit on the counter for about 30 minutes
10:11
Mm, it's just so tasty.
10:16
