0:01
- I'm fixing to share a recipe with y'all
0:04
for a cookie that I made years
0:07
and years and years ago.
0:10
And I loved them then.
0:13
I can't exactly remember what I did with them.
0:16
It was on one of my shows,
0:18
best dishes or home cooking, I can't remember.
0:22
So I'm gonna make those same kind of cookie,
0:29
I'm gonna address them differently
0:34
from what I did a hundred years ago.
0:37
So these are called chocolate dipped brandy sticks.
0:45
And in the recipe, it tells you
0:46
to bake no more than six at the time.
0:49
Well, if memory serves me right,
0:53
I didn't wanna bake, but like three at the time,
0:56
because we're gonna be rolling these up
0:59
and they're gonna be thin.
1:02
And if we don't get 'em while they're still warm,
1:05
ain't no way we're gonna get 'em rolled.
1:07
So I don't decide about that as we come along.
1:10
- [Cameraperson] Why are we making these, Paula?
1:11
- Oh, y'all, guess what?
1:14
This is a ninth day of Christmas cookies.
1:19
I forgot to tell y'all that.
1:22
I think in an earlier film, I was doing some cookies,
1:25
and I said 10 days of Christmas.
1:27
It's 12 days of Christmas cookies,
1:30
and this is number nine.
1:33
All right, I've got my butter, I've got my heat on low,
1:39
I've got my sugar, I have got my dark corn syrup,
1:49
I've got my cinnamon, and I've got my ginger.
1:55
Now if Michael was here, he'd say,
1:57
"Well, I always like Maryanne better." (laughs)
2:02
I mean, I can bank on him saying
2:04
that every time I mention the spice ginger.
2:08
All right, so in goes our cinnamon
2:12
and in goes Miss Ginger. (chuckles)
2:17
All right, so we're just gonna stir this
2:19
until it's melted over low heat.
2:26
And then I have a cup of all-purpose flour over here
2:30
and I've got a little brandy
2:35
that we're going to add to it.
2:40
And when this is nice and everything's melted,
2:45
we'll add that flour and our brandy to it.
2:49
It appears to be everything nice and melted.
2:55
I'm just trying to work the butter and our melted butter
2:59
into the rest of our ingredients.
3:03
I'm gonna go ahead and add our two teaspoons of brandy.
3:12
Whoa, I'm going over on that one.
3:20
(metal utensil rattles)
3:29
And I've got my cup of all purpose flour
3:33
and take that off the heat, and we're going to stir it in.
3:39
And I'm using, I love this parchment paper
3:44
'cause you can reuse it.
3:47
And I had baked some cookies on it earlier,
3:50
so we gonna get the goodie out of that.
4:01
Now we're gonna bake these for about 10 to 14 minutes
4:10
until they're kind of a caramel color,
4:12
when they're already almost a caramel color right now.
4:17
All right, so we're gonna drop these
4:20
by a heaping teaspoon.
4:34
And you know what I'm gonna do?
4:38
I'm gonna go for six and hope it works. (laughs)
4:46
All right, that first one was a little shy,
4:48
so I'm gonna go back in.
4:57
Oops, I forgot to cut my fire off.
5:00
All right, so in the oven this goes
5:04
about 14 minutes, and we're gonna take 'em out.
5:08
And you see this spoon right here?
5:11
This spoon is very important
5:14
because we're gonna take them off of our cookie sheet
5:17
and we're gonna roll 'em around the handle of this spoon.
5:21
So you have to work quickly.
5:25
That's all I gotta say about that. (laughs)
5:28
So in the oven these goes, these goes. (laughs)
5:34
Okay, y'all, we're gonna have to work quick, quick, quick.
5:48
I wish I could get them off of there.
5:53
There we go. (laughs)
5:55
Now I can work better, more gooder.
5:59
Okay, I am going to get 'em started,
6:02
and then I'm gonna wrap it around my spoon,
6:12
And I'm gonna let 'em cool.
6:17
So see, you can't let 'em get too crisp
6:37
Come on, tighten up, baby.
6:38
That one's not tight enough.
6:43
I think I can do that one better just by hands.
6:58
So I think I'm gonna be able to do six at the time,
7:01
y'all, with not a great deal of effort.
7:08
And you wanna roll 'em tight
7:10
because we're just halfway home with this recipe.
7:14
Once we get 'em all rolled, we'll be half through.
7:23
I just love these things.
7:28
If you wanna get cheap, (laughs) really cheap,
7:32
you could buy these things that are like in the can.
7:38
What are they called?
7:39
- [Cameraperson] Pirouettes.
7:42
And you could just do the second half
7:44
of the recipe. (laughs)
7:47
But I want 'em all homemade.
7:52
- [Cameraperson] You ready to put the next batch in?
7:54
- Yeah, just one second.
7:56
I wanna roll this one a little bit tighter if I can.
8:07
Okay, now it's time for our cookies
8:14
to get the last step.
8:17
I've got a cup of chocolate chips
8:20
and one tablespoon of butter flavored shortening.
8:26
And I'm gonna melt this in the microwave
8:29
and I'm gonna start like at 45 seconds,
8:31
I'm gonna take it out, stir it,
8:33
put it back for 15 or 20 seconds.
8:37
Okay, y'all, I've got my butter and my shortening melted,
8:41
and I'll probably have to go back
8:45
and I decided to put mine in a cup
8:46
'cause you wanna go about halfway up,
8:52
and then we gonna come over here
8:53
and we gonna roll it nuts.
8:57
And that's number nine of our Christmas cookies.
9:12
Now I love the base of this cookie
9:17
because, you know, there's so many ways
9:19
that you could change it up
9:21
and do it a bunch of different ways.
9:24
I love to think about maybe piping it,
9:27
you know, before I make that last thing
9:29
with maybe some flavored cream cheese or something.
9:36
I mean, just let your imagination run wild with you, y'all.
9:43
Yes, with a cup of coffee.
9:53
Look at our finished product.
9:59
Now, you know, if your family's not a chocolate fan,
10:03
you can do like buttercream icing, you know,
10:08
just make it a little bit thicker than you normally would.
10:11
But I just happened to think about this container
10:13
that I had and I used to put little small glass,
10:18
like shot glasses in there, and put fresh flowers in it.
10:24
Sometimes I would use them to stick my wooden utensils in.
10:28
But Eddie, when I asked Eddie, I said,
10:31
"Have you seen anything like that?"
10:33
He said, "Yeah, I know right where it is."
10:37
So he went to my garage that's swipe full,
10:43
and look how cute this is because they're hard to stack.
10:48
And I put these in the refrigerator
10:50
for about 10 or 15 minutes,
10:54
and I'm so ready to taste them.
10:58
I'm gonna start at the other end.
11:08
(stick continues crunching)
11:16
Michael and I adored crispy stuff.
11:20
And this kinda tastes like Susan Green, my bubbles.
11:33
She makes a cookie that's real, real thin.
11:38
She doesn't roll 'em up.
11:38
And that's why it reminds me of that particular.
11:46
You about to shut up, Paula.
11:59
Please try this for Christmas.
12:02
And remember, this is the ninth day of Christmas cookie.
12:07
It's the ninth cookie of...
12:11
- [Cameraperson] The 12-day Christmas.
12:15
- I don't know why that's hard for me to say.
12:17
I'm sweating like a fat girl, right?
12:19
And I'd love another, y'all.
12:20
I'm so hot in here. (laughs)
12:27
It's fun, it's different, and it's delicious. (laughs)
12:34
Hey, y'all, it's Paula Deen.
