And today I'm making one of my mom's recipes,

It's a few of my favorite things.

I really like quiche, I really like artichokes

So, let's get started.

In fact, I already have gotten started

by cooking five slices of bacon here.

I've got it on sort of a medium heat,

but our bacon looks really nice and ready.

It smells so good.

Nothing like the smell of bacon in the kitchen, you know?

- [Theresa] So this is going to be a quiche type recipe.

- This is going to be a quiche recipe.

We're gonna use a small muffin tin.

We're gonna use some crackers and butter mixed together.

We've got beautiful bacon, artichoke and green onions.

So I'm just gonna set that bacon right out front there

so Theresa, it can just waft under Theresa's nose

for a few minutes.

And now, to my pan,

I'm gonna add some green onion,

right into that bacon renderings.

And I'm gonna let the green onions cook

for just a minute.

- [Theresa] What are the triplets want for Christmas?

- Well, you know,

it's hard to say.

Our children are still at a young age,

so they're not really asking for much stuff yet,

but our kids are pretty typical.

My little boy is a huge fan of superheroes,

so he loves all things Spider-Man and Batman

and Captain America and just all that stuff.

- [Theresa] He is all boy.

- And there our, he is all boy.

And then our little girls love "Frozen," right?

So we got a lot of "Frozen."

We got a lot of Anna and Elsa stuff

and Olaf and and Kristoff and I know 'em all.

Never would have thought that that would happen.

So a lot of "Frozen," lot of Spider-man,

a lot of Batman and lots of love.

That's really the most important part, right?

So these green onions smell wonderful there,

the bacon grease is just magic.

It just really is.

Okay, so to that,

I'm gonna add a half cup of artichokes hearts

and they've been sort of rough chopped

- [Theresa] And they're actually marinated.

- And they're marinated.

- [Theresa] So they come in the jar, not the can.

And we're gonna let that work in here

with the bacon grease.

And this is just a wonderful smell.

You know, we all have our favorite seasons.

I love spring and fall.

I love Easter and I love the fall because

these seasons all come with sort of their own dishes.

And so, you get the scents and smells and flavors

and ingredients that just remind you

of a time in your life,

maybe from when you were a child.

You know, for me, that's definitely true.

My mom, cooking in the kitchen, and my dad too,

and all of us cooking in the kitchen and

just really brings back wonderful memories

of this time of year.

Okay, so this is my mom's recipe, as I said.

So I'm going to read a little bit of the directions here

and make sure that I'm going by what she wants to do.

So we cook the bacon and we've got the green onion

and the artichoke going together, beautiful.

And we're gonna crumble the bacon back in.

That's what I thought was next.

So I'm gonna tear this bacon with my hands,

ooh, and it's still hot from the skillet.

- [Theresa] I'm gonna let you do that,

and we're gonna come right back.

- Yeah, you know what,

since this is not glamorous or beautiful,

why don't we take a little break

and I'll see you right after I get all this bacon crumbled.

Okay, our bacon is crumbled in.

So what we did was we cooked the bacon,

pulled it out, drained it on a pan,

on a paper towel lined plate.

And then we added in the green onion

and we cooked it for a couple of minutes.

And then we added in the artichoke hearts

and we cooked them for a couple of minutes.

We crumbled the bacon

and then added it back into the whole thing.

So we've got a beautiful base here.

It smells and looks so good

and this will eventually be the center of our quiche.

So we're gonna let this just sit and cool

and we'll come back to that in just a few minutes.

Okay, let's get over here to our muffin tin,

I've taken some, a softened stick of butter

and you can see that I sort of ran it around inside these,

inside the muffin tin here to sort of grease it up

and get it ready.

Okay, so let's try that again.

Our butter was congealed and hard

and I had to hit it back in the microwave for a minute.

So this is gonna be half a stick of butter?

- [Theresa] No, it's more like four tablespoons.

- Four tablespoons, I'm sorry. - [Theresa] Three to four

- Four tablespoons of butter.

And I'm gonna add that to some crumbled, buttery crackers.

to press this mixture into our muffin tin.

and I'm gonna use them to further combine

the butter and these buttery crackers.

So I'm gonna, I've got a big muffin tin here.

This recipe serves 15 people,

so I'm not going to use the whole muffin tin.

I'm just gonna use a portion of it.

And the areas that we don't use,

we'll add a little water maybe around the edges.

And so while I'm doing the not very fun part here,

I'll have these crackers all pressed into the tin, okay?

Okay, so here we are.

I've got the butter and

the butter cracker and butter mixture

So remember now, I used a stick of butter

and I sort of greased up the pan with that.

And then I combined,

it was probably five tablespoons of softened butter

And I pressed them in and made sort of a bowl.

I went up the sides of the muffin tin as much as I can.

So there's a base and it's sort of is a little bowl.

And it's gonna make kind of like a cup,

like a quiche cup, okay.

So this looks really, really nice.

And I did not use all of the available space

in the muffin tan, pan.

I only used a dozen.

And so I'll just put a little water

in these extra, unused spaces over here.

And that'll give us some moisture in the oven

while we're baking this.
