Y'all, I'm in the kitchen today
0:02
with one of the great caterers, Susan Mason.
0:05
And we're getting ready to share a recipe with y'all
0:09
that's one of those great recipes
0:11
that are good at cocktail parties,
0:14
especially passing 'em on a tray.
0:16
It's just a garlic shrimp crostini.
0:18
And Susan is getting our French bread,
0:21
cuttin' little rounds for us
0:22
and we're gonna toast that off.
0:24
We've got Susan's elegant asparagus quiche
0:30
So, this recipe is gonna come together very,
0:36
And I'm gonna mix the cream cheese spread for our crostinis.
0:40
It's just two cloves of minced garlic,
0:43
two tablespoons of green onions,
0:46
an eight ounce package of cream cheese,
0:49
a fourth of a cup of Mayo and a little black pepper.
0:53
- Okay Paula, do you want me to put these in the oven?
0:55
- Yes honey, if you just kind of roast those off
1:00
- We, like I said, we've got our quiche in the oven.
1:03
- [Susan] What temperature is this on?
1:04
- It's on 425 so we'll have to keep an eye on that bread.
1:08
Now right here I've just got our cream cheese,
1:10
our mayonnaise, our garlic and our minced onion.
1:14
So we're gonna go over here now and heat up our skillet.
1:20
And I'm gonna put a couple of tablespoons of butter
1:22
and if you wanna be working on three cloves of garlic.
1:27
- Okay, you want it minced?
1:27
- Uh-huh, please mince that.
1:33
I'm going to get the shrimp ready for our dish,
1:35
so, like I said, if you're having a cocktail party,
1:37
this is a great dish.
1:40
Because you can have your little crostini, you know,
1:42
done up ahead of time.
1:44
I'm gonna be using about 24 medium-sized shrimp
1:47
that's been peeled and deveined.
1:49
- [Susan] With the tails.
1:51
Now, Michael and I fuss all the time.
1:54
Now he's lived in this very spot for 52 years,
1:57
his whole entire life.
1:59
So he thinks he's a master of shrimp and crabs
2:04
And we argue all the time about tails on, tails off.
2:09
Well, I love to do my shrimp tails on
2:12
because it adds texture.
2:14
It gives you something to hold on to.
2:19
- And they're prettier, aren't they?
2:20
- They're just prettier. - They're more graceful.
2:22
- Michael said, "Don't worry about the things being pretty,
2:25
just gimme two shrimp and that'll make it prettier."
2:28
So, when you get that garlic done,
2:31
I'm going to throw that in and kind of let it sweat
2:34
in this butter and then the parsley.
2:39
And then I'm going to throw our shrimp in
2:41
and I'm just gonna saute those, y'all,
2:44
until they're just pink.
2:47
You know, I don't want to over cook 'em.
2:49
The worst thing you can do to a shrimp is overcook it.
2:53
And Susan will need about two or three tablespoons
2:57
While I'm throwing the shrimp in,
2:59
Susan is gonna be cuttin' a few cherry tomatoes
3:02
into the garnish, the crostini bit.
3:09
All right, now I'm going to take out our little crostinis
3:12
'cause I bet they're ready
3:14
and we're gonna let our, oh yeah,
3:17
they look good. - Oh, those look perfect.
3:21
So, ooh, be careful. - Hot, hot.
3:24
We're just going to take a little bit
3:27
of our cream cheese mixture.
3:33
And put that on our, I'm gonna bring this back down here
3:39
I'm gonna want a little bit of parsley
3:42
and we're just gonna take our shrimp,
3:45
see that little handle?
3:49
- We're going to set our shrimp up there
3:51
and then we're gonna take one of our tomatoes
3:55
and just kind of prop it
3:57
on that tomato. - Ooh, pretty.
3:58
- And then I'm gonna take a little piece
4:00
of parsley, just for color.
4:02
Look how beautiful that is. - Oh, that's beautiful.
4:05
- And you just put 'em on a tray and people will love 'em.
4:09
- Okay, Paula. - So, just that simple, Susan.
4:12
- Oh, it's beautiful. - Oh, thank you.
4:13
We've got 'em together.
4:16
Prop a little tomato.
4:19
- [Susan] Now a little twig of parsley.
4:20
- And a little twig of parsley.
4:23
- Oh, I don't know who invented parsley,
4:24
but it has saved many--
4:27
Oh, I love, I love the parsley.
4:31
You just put those on your plate
4:33
and have someone pass those.
4:36
- Oh, that is so pretty. - Would you have one?
4:37
- I'd love one, thank you. - Me too.
4:42
Now, how to eat this?
4:45
- I think we should hold the tail on.
4:47
- You think we should hold the tail down?
4:49
- Mm-hmm, like this. - Okay.
