0:01
- Well hey everybody,
0:02
I'm here in the kitchen with mama today
0:05
I love cooking with ya.
0:06
Well, since we're here in Savannah
0:07
we've got access to all this great local seafood.
0:10
- Especially the blue crabs.
0:11
And I'm catching 'em right now,
0:13
so I'm in the mood to do--
0:14
- [Paula] Oh that's wonderful.
0:15
- Like a nice spicy crab dip.
0:16
- Listen, you don't go to a party in Savannah
0:18
without your tomato sandwiches
0:20
and your shrimp or crab dip, or both.
0:24
- And a good hot crab dip.
0:25
Well, you can do it a few different ways.
0:26
- Well put me to work son.
0:27
- I need you to open up that mayonnaise,
0:28
and get us a half cup.
0:29
So I'm gonna start out with a cup
0:30
of pepper jack cheese.
0:31
- That pepper jack y'all is gonna
0:33
give it a little bite.
0:34
- 'Cause this is a hot, spicy dip.
0:37
We're gonna add a little hot sauce to it.
0:39
- And the cheese that I'm using
0:40
is gonna have pepper flakes in it.
0:42
- All right in with the mayo.
0:44
- All right, eight ounce package.
0:46
- Eight ounces of cream cheese,
0:47
and it's been softened.
0:48
- [Paula] May I go ahead and start--
0:52
- Now we're gonna use our little hand mixer on this,
0:54
but after we put in our crab
0:57
because we don't want our crab to be beat to death.
1:00
And I'm also gonna give you the juice of two limes.
1:03
- And that should help blend it together,
1:05
and make it a little easier too.
1:07
- This looks delicious, son, already.
1:10
- In with a little bit of lime juice.
1:11
- I'm gonna go ahead, son,
1:12
and add one teaspoon of hot sauce.
1:15
- [Bobby] That's a lot of juice in that lime too.
1:17
- I'm telling you, that was a juicy lime.
1:20
- And a little bit of salt and pepper.
1:21
- Looks like half teaspoon of pepper you got lined up.
1:25
- Fourth of a teaspoon of salt.
1:27
Not much salt, y'all because, you know,
1:29
crabs live in salt water
1:32
their own salt to the party you might say.
1:35
- About the limes, tell 'em about that little trick you use.
1:38
- If you drop 'em in the microwave
1:40
or 15 seconds you'll get a lot more juice from 'em.
1:43
All right, I'm gonna take two cloves of garlic here
1:47
Chop 'em up a little bit.
1:50
- I love what cream cheese does to hot dip, son.
1:55
- It adds a lot of flavor.
1:56
- That's mixed up really, really well,
1:59
and I'm gonna be chopping your tomatoes.
2:03
Does the recipe call for--
2:05
- I need you to dice 'em.
2:06
It calls for two medium tomatoes,
2:09
those are kind of small
2:10
so we got three of 'em.
2:11
- So you just want these diced.
2:17
Chopping these onions.
2:18
I'm gonna drop some green onions in there.
2:22
And it looks beautiful already, doesn't it?
2:24
- [Paula] It does look beautiful.
2:26
- [Bobby] Love the color.
2:27
- And the tomatoes are gonna add
2:28
a wonderful little flavor and color to it.
2:32
This is gonna be great.
2:33
- And I'm gonna finish it off
2:35
with a little bit of basil.
2:39
Love it mixed with tomatoes,
2:40
you know what I'm mean,
2:41
like in a tomato pot?
2:43
- [Bobby] And also in this crab dip it's gonna be great.
2:46
- So you think that's enough, son?
2:48
Does that look tomatoey enough for you?
2:50
- I think so, don't you?
2:50
- I think so too, yeah.
2:54
- I sure do smell it.
2:55
All right, so you've got
2:57
your little casserole dish out here for us.
3:00
- How about it I give it a quick little spray?
3:03
And the oven on 350 please.
3:13
- You know, the thing about a crab dip,
3:15
really with everything,
3:17
what you've always told me is to go right by the recipe
3:20
the first time you make something--
3:21
- And then anytime after that
3:25
So you could, you know, there's a couple
3:26
different variations that you could do with this crab dip.
3:27
And finally, I'm gonna add about a pound of crab meat.
3:31
- All right, you're using lump.
3:36
- Mm, oh it's so good.
3:38
- I know, it is good.
3:45
- [Bobby] We're gonna cook it at 350
3:46
for about 30 minutes.
3:50
We're taking it easy today, y'all.
3:52
And we made a wonderful crab dip
3:55
a few minutes ago, y'all.
4:00
- We've got fresh basil,
4:02
some pepper jack cheese.
4:04
- [Bobby] Fresh blue crab.
4:05
- Uh-huh, a pound of lump blue crab.
4:08
Now I'm gonna just chop a little fresh avocado
4:11
to put on top of our dip,
4:16
just to kind of green it up.
4:18
- Oh I'm sorry (indistinct).
4:26
- [Bobby] It's really hot, so be careful.
4:28
Is it hot, is it hot season wise?
4:34
- It's got a little of my hot sauce in it, not much.
4:39
- Oh my gosh, it's out of this world.
4:41
- Very good, very rich.
4:42
- I love the avocado with it.
4:46
We gotta balance this out
4:47
because that's really, really,
4:48
I mean let's face it,
4:49
that's a heavy dish, it's kind of fattening.
4:51
- No, it's perfect for like appetizers
4:55
when you're standing around getting your meal ready.
