- I know that y'all will recognize grandson John,
0:03
because we made a big red Texas cake together, didn't we?
0:09
Well, you know what?
0:09
Now it's brother's turn.
0:13
So you can go do your homework or read a book.
0:18
- I did it.
0:19
- Oh you did it, yay.
0:22
So we decided that John was number five, right?
0:26
In the pecking order.
0:29
- [Camera Man] Yes.
0:30
- And so would you would be number four.
0:33
All right, there's Jack, Maddie.
0:35
- Me.
0:36
- You, so you would be third.
0:39
- [Camera Man] Yeah 'cause Sully's birthday is what?
0:41
December.
0:41
- Yeah, yeah, yeah.
0:42
So you, you're third in the pecking order.
0:45
- 'Cause I'm eight.
0:46
- Yes.
0:47
- I'll be nine in 10 months, in 10 days.
0:52
- Days, yep.
0:53
You're fixing to have a birthday.
0:55
And Henry is,
1:00
don't listen to what I'm about to say.
1:03
Henry is an incredible young man, y'all.
1:05
(laughter)
1:07
He is so independent.
1:10
He doesn't want anybody doing anything for him.
1:13
He wants to learn how to do everything
1:16
in the world out there, don't you?
1:19
And if you tell him he can't do it
1:22
well, that's a big insult to him.
1:25
Isn't it?
1:27
And this boy would rather fish than eat.
1:31
And we have a little fresh pond out here in our front yard.
1:34
And so when Henry comes over, first thing he says is,
1:39
"I want to go fishing, I want to go fishing."
1:42
So you can go that way and you can saltwater fish,
1:45
or you can go this way.
1:46
- [John] Say cheese.
1:47
- Cheese.
1:49
Oh, we got another camera man y'all.
1:52
(laughter)
1:54
Or he can go out there and fish for freshwater
1:56
because personally I grew up in Southwest Georgia
2:00
and all we had was ponds
2:02
and so we ate a lot of brim and a lot of catfish,
2:07
but over here, you eat tuna and grouper and spot tail,
2:13
things like that, right?
2:14
- Right.
2:16
- Which do you like the best?
2:18
Do you like Guinea?
2:20
- King Salmon.
2:22
- King Salmon.
2:23
Okay, I was going to ask if you like salt water
2:25
or Guinea's fresh water fish.
2:27
Which one you liked the best.
2:28
So you're saying salmon.
2:32
I'm with you, honey.
2:34
When I first cooked brim for your Papa,
2:38
he didn't even know how to eat it.
2:40
He still doesn't know how to eat it.
2:42
'Cause you know, I've shown you how to do it
2:44
where you're less likely to get bones.
2:47
But Papa's kind of like you, or you're kinda like Papa.
2:51
He don't want you telling him what to do.
2:53
(laughter)
2:56
- Remember that time where I caught that female that big?
2:58
- Uh huh, uh huh.
2:59
- She was huge.
3:00
- She was huge and probably full of eggs.
3:03
Wouldn't you think?
3:04
Alright, so Henry, I think our grease is ready.
3:08
I have heated you up some peanut oil in here,
3:13
and this is a mighty big pan for just three fish.
3:17
But I wanted you to be able to cook your fish
3:19
and look that way instead of looking at your back.
3:24
So what we're going to do,
3:27
and I'm going to use Gimmes fish fry.
3:30
But the first thing we want to do is
3:33
scoot down just a second baby.
3:35
First thing I'm going to do
3:36
is just sprinkle it with a little salt now.
3:38
Not much because the fish fry has salt in it.
3:44
So there you go.
3:49
And you want to make sure you get inside the body too.
3:52
You know, you want a little,
3:55
little something, something in there.
3:58
So.
4:02
So tell everybody what you've been doing this summer.
4:06
- [Henry] Uh fishing.
4:07
- [Paula] Fishing?
4:08
- [Henry] On the boat and when I went,
4:12
I went camping up in North Carolina last week
4:15
and every day I went fishing up there in the pond,
4:20
caught brim, some black tail bass, koi, catfish.
4:24
- Koi?
4:26
- Yeah, there was koi in there.
4:27
- I didn't know koi would bite a hook.
4:30
- No they didn't, they didn't bite the hook.
4:32
They will bite the hook if they have their chance
4:35
and when they were putting the koi in,
4:37
they didn't have a little border
4:38
by the little teeny weeny little pond over there
4:42
and a couple koi got in.
4:44
- Little bit more baby.
4:45
Little bit more.
4:47
Oh, oh okay.
4:48
So they really got in there accidentally.
4:53
Is that right?
4:54
- [Henry] Right.
4:56
- [Paula] And there's a place,
4:57
- [Henry] And there's half of the pond
4:59
that you swim with the fish and half of the pond you fish.
5:02
- [Paula] You got it figured out don't you?
5:05
Well, I tell you what,
5:07
I just love you going fishing and me seeing you
5:10
and all you get up and that white powder,
5:14
that white cream stuff on your nose.
5:16
'Cause you're real fair.
5:18
You're real fair complected, so you have to be careful.
5:23
And there's a place that you hang out a lot
5:26
over at the dock.
5:29
The what is that?
5:30
- White dock.
5:31
- White dock?
5:32
- The park dock?
5:34
- Park dock.
5:35
Yeah, you go there and fish a lot don't you?
5:36
And what did you catch yesterday you was telling me about?
5:43
Don't you remember?
5:44
Oh, you've got a memory like an elephant.
5:46
Now why are you not remembering that?
5:49
You were at Aunt Jodie's.
5:50
- And I caught a stingray off the dock
5:53
and it had two babies.
5:56
- I didn't know this,
5:57
but if you catch a female stingray and she has babies,
6:03
she gets so frightened and upset that she has the babies.
6:06
So when Henry pulled her in,
6:10
she had two babies right there on, on the,
6:15
- She had one barb that she had full grown
6:18
and then she was starting to grow a tiny little barb in it.
6:21
And she was so happy, she has bending my pole
6:23
and she bit my cork, which was copper
6:26
and I had to pull her up by my hands and I got cut.
6:30
- Oh my gosh, yes.
6:32
Listen, they are,
6:33
and even these will brim, you know, that's a sharp.
6:37
- I got cut by the line.
6:39
- Oh my goodness, Henry.
6:42
You might want to think about wearing some gloves.
6:46
All right, would you like to put your fish in the hot grease
6:50
and I don't have to caution you how careful to be right?
6:54
- Right.
6:55
- Don't drop it, but just lay it in there.
6:59
Okay, it said it was hot enough, but.
7:04
Okay, you want to kind of, you know,
7:06
just shake the, the, okay,
7:08
just lay it down right next to it.
7:11
Just don't drop it where it'll pop on you.
7:17
Like I said,
7:18
this pan is really too big for just three little fish.
7:20
- But it fits perfectly 'cause they're huge.
7:23
- You think they're huge.
7:25
I think that's some of the smaller ones that you caught.
7:28
- No, those are about the biggest ones I catch.
7:32
- [Paula] Out in our pond?
7:34
In our little pond?
7:34
- That's about the biggest ones I catch.
7:36
- You know, my daddy used to love to brim fish
7:40
and I remember he and his daddy, my granddaddy Howard,
7:44
they would go fishing in lakes down in Florida
7:48
and they would come home with brim,
7:50
Henry, as thick as two of your hands.
7:54
I mean, they were huge.
7:55
You could almost get filled up on one brim.
7:58
All right.
7:59
- I know I can't.
8:01
- You can't?
8:02
- Can I flip them?
8:03
- I don't know, now that part scares me a little bit.
8:07
Now here's the deal about cooking fish.
8:12
It doesn't take long, you don't want to over cook fish.
8:18
I wish we hadn't had a whole mess of them.
8:21
You know, like a dozen.
8:24
'Cause Great Great loves these too.
8:27
So maybe y'all could arm wrestle
8:29
who's going to get these three fish.
8:30
- It's gonna be her, she's gonna win.
8:32
- Oh, you think so?
8:34
You know what?
8:35
I think you would win at arm wrestling.
8:38
All right, so Henry caught these three fish
8:42
and the afternoon he caught them, he had to leave.
8:49
He couldn't stay and let me cook them for him
8:52
so that's why I put these in the freezer
8:57
because I wanted to wait
8:59
until I knew Henry could help cook them
9:02
and Henry could eat them.
9:08
So what else have you been doing?
9:13
- I don't really know.
9:15
I've been riding my bike down to the park
9:17
and going to play basketball.
9:20
- Yeah.
9:21
- And we've been going to the pool
9:22
but we can't go anymore because John's ear infection,
9:26
we have to wait a little bit longer.
9:27
- Okay, so if John can't swim, you can't swim either?
9:31
- But I've swam over here when he wasn't here.
9:36
- When he didn't know.
9:38
- All right Henry, I think they're ready to turn buddy.
9:47
So I'm gonna gently turn these.
9:50
Now normally I would fry these in deep grease,
9:53
you know, where they were you know, completely covered.
9:58
- [Henry] And when they float, they're done.
10:01
- [Paula] Yes, but they can't float in this
10:02
'cause there's no room.
10:05
I didn't put nearly the amount of peanut oil
10:08
that I would normally.
10:10
Of course, you get that to 350
10:12
so you can see what I'm doing
10:14
that I would never recommend you do them.
10:17
I'm holding, I'm holding this electric skillet up
10:21
so they can lay completely covered in the peanut oil.
10:26
But it's dangerous, I should not be doing it.
10:31
What's the best part of this fish, Henry?
10:35
- The belly.
10:37
- [Paula] Oh, you think?
10:38
- The tail.
10:39
- [Paula] You think the tail is so good?
10:41
- [Henry] It's crunchy like a chip.
10:42
- [Paula] Yeah, and I love to take that top fin out
10:46
and just suck, just suck on it
10:51
and suck all that fat out.
10:55
So we just got another couple of minutes on this
10:58
and then we will be eating.
11:02
Okay, now I was telling Henry
11:05
that you don't want to overcook fish
11:07
because that just kind of ruins it.
11:10
But so I just put the,
11:11
I just pulled these out of the grease, Henry,
11:14
so they are so hot.
11:18
And normally when we eat brim or catfish,
11:22
we don't normally serve a tartar sauce or anything with it
11:27
because the fish itself is just so good.
11:30
All right, so you want to see if you can do
11:34
how Gimme showed you?
11:37
You don't want to?
11:38
- I don't know how to.
11:39
- Yes you do.
11:40
What did I teach you first?
11:48
- Oh yummy.
11:49
- To pull out that fin and just suck.
11:55
- Bones are hot.
11:57
- Uh huh.
11:59
Just make sure you don't pull a bone out,
12:01
but you can just suck that.
12:04
It's really just fish fat Henry, in that top bone.
12:11
- It's really hot.
12:12
- I know, and really good.
12:17
- So hot.
12:20
Can I eat it?
12:22
That part has bones.
12:23
- [Paula] Yeah, you can eat like this end
12:26
where it's just fin and not bones.
12:32
All right, you wanna squeeze a little lemon on it?
12:34
Or do you wanna eat it?
12:38
Oh, it's so hot.
12:39
All right, now we gonna go ahead
12:41
and pull this bottom fin out
12:43
and you can do the same thing with that.
12:45
- Hot.
12:46
- I know.
12:49
- That's the hottest part.
12:56
So hot.
12:58
(laughter)
12:59
- I know it.
13:03
You can eat that,
13:04
'cause see that that fin is not bones, it's just.
13:11
- The very bottom of it is.
13:14
(laughter)
13:18
- Great time of day, that's good.
13:23
- Grab those two bones.
13:25
- Okay.
13:26
- There's two bones right there.
13:28
- Okay.
13:30
Okay, let's start eating it.
13:35
And let's eat it the way Gimme showed you.
13:44
Isn't that good?
13:51
All right.
13:53
You start on the top.
13:58
- Hot.
13:59
- Yes.
14:03
- Hot. It's so hot I can't even eat it.
14:06
- Why don't I just pull it away for you?
14:08
But brim has,
14:11
- A lot of tiny bones.
14:13
- Uh huh, it has a lot of tiny bones.
14:15
It's got the,
14:17
- Spine.
14:18
Yes, and then it's got some bones up here
14:21
around the belly.
14:22
- And sometimes if you keep it all,
14:24
you can wash it off after and put it in a case
14:27
and you'll have the whole entire bone.
14:29
- Yep.
14:30
- That's what I want to do with this one.
14:31
- That's what you want to do?
14:32
Okay, I'll try not to tear him up too much.
14:34
Okay, it's important to Gimme that as you get older,
14:39
you're able to teach people how to properly eat a brim.
14:45
So I want you to know how to catch them,
14:47
I want you to know how to clean them,
14:49
I want you to know how to cook them,
14:52
and I want you to know how to eat them.
14:54
- Hm, and you feel for bones with your tongue.
14:57
- Yes.
14:58
So you want to tell our friends out there bye?
15:02
- Bye bye.
15:02
- We send y'all love and best dishes.
15:04
I hope that y'all have the opportunity,
15:06
if you're a grandmother,
15:08
I hope that y'all have the opportunity
15:10
to spend some time in the kitchen with your grandchildren.
