Bobby Deen here on the Paula Deen Channel.
0:03
I'm so happy that you're here.
0:05
And I wanna share with you today.
0:06
Another great, simple and quick recipe.
0:10
You know, collard greens are a Southern staple.
0:13
We absolutely love them down here.
0:16
And the more that we learn about food, the more that we know
0:19
that leafy greens are, are absolutely fantastic for you.
0:22
So Southern food sometimes gets a bad rap
0:24
and I think it's 'cause of all the butter
0:25
and cream that we use, but the ingredients,
0:29
excuse me, the things that we cook down here
0:33
are really, really good for you.
0:35
Almost everything that we do.
0:37
I mean, think about yams, collared greens, chicken,
0:40
all these things are really healthy foods.
0:43
we are so fortunate to have farmer's markets
0:47
all around us nowadays.
0:48
So it's easy to get fresh, good, big leafy greens
0:52
or you can go to the grocery store
0:53
and you can buy them pre-trimmed and washed and bagged.
0:56
However you choose to do it.
0:58
I like to go to the farmer's market.
0:59
But collard greens stemming them and trimming them,
1:02
if you don't know exactly how to do it
1:04
can be a bit of a pain.
1:05
Collard greens are really big leafies.
1:07
Okay, and you would hold the stem
1:09
and just grip that collard green like this
1:12
and just kinda pull all the greens off of the stem.
1:16
And you get six or eight of them together
1:18
and you stack 'em up and roll 'em up and trim 'em
1:20
and they'll come out looking, you know, something like this.
1:25
Okay, so this is an easy recipe
1:27
and we're gonna do it right on the stove top in a skillet.
1:31
So the first thing I'm gonna do
1:32
is get my saute pan going at about a medium
1:36
and to it, I'm gonna add two tablespoons of olive oil.
1:41
And one and there's two tablespoons of olive oil.
1:47
And it won't take long for that to start to heat up.
1:52
And as it does, I'm gonna add to it some fresh minced garlic
1:57
and also some red pepper flakes.
2:00
This recipe, the ingredients are few
2:01
which I really, really like.
2:03
It's just the greens themselves, the minced garlic
2:06
and red pepper flakes, little chicken broth
2:08
and a little bit of salt and pepper.
2:09
And these things are absolutely going to,
2:13
they're gonna just shine in your mouth.
2:14
You're gonna be surprised
2:15
at how good this recipe is with so few ingredients.
2:19
Okay, so let's go ahead and add our minced garlic.
2:28
I'm gonna wait on the red pepper flakes because they can be,
2:33
you know, depending on who you're cooking for,
2:38
I might decide to add none or maybe just a very, very few.
2:51
I'm gonna go ahead and add a few right now
2:53
and let them sort of get married with the olive oil
3:00
And to that, I'm gonna add my leafy greens.
3:07
And we'll saute them until they're nice and shiny
3:12
and they cook down a little bit.
3:14
It's gonna be about four minutes.
3:15
So why don't we take a short break
3:17
and I'll see you all in just a couple minutes.
3:20
Okay, we've been sauteing our greens for about four minutes
3:22
and you see how they're really nice and shiny.
3:25
And they've sort of cooked down a little bit.
3:27
With leafy greens, that's always the case.
3:31
I'm gonna season them with a little salt and pepper.
3:38
I just love collard greens.
3:40
For those of you who have never had them
3:42
or don't cook them because you know, you don't know how
3:46
or you're a little afraid.
3:47
There are a lot of things like that.
3:48
A lot of people don't cook fish.
3:49
They don't bake bread.
3:50
I don't wanna cook collard greens.
3:51
I don't know how to do that.
3:53
It's so easy. It's so easy.
3:55
And I'm showing you a really great simple recipe, right now,
3:58
today, that you can for your family tonight.
4:01
And like I said, you can go to the farmer's market
4:03
and get good fresh greens or you can buy 'em pre-washed
4:06
and precut at the grocery store.
4:09
Okay, so to that, we're gonna add some chicken broth
4:18
and we're just gonna saute and cook this
4:19
until those juices cook off, for about two minutes.
4:24
So this recipe total, the prep time is probably,
4:29
I don't know, to get those collard greens prepped
4:31
probably about 10 minutes.
4:33
If you know what you're doing.
4:34
Cook time is about I don't know, eight or 10 minutes.
4:38
So in no time at all, you can have yourself some beautiful,
4:40
fresh collared greens right there at home in your kitchen.
4:44
Your family will thank you.
4:48
Mm-hm, look at how great these look.
4:52
They smell so wonderful.
4:56
Leafy greens, so good for you.
4:58
They would go great with chicken.
5:02
Yeah, collard greens and chicken,
5:03
that's like peanut butter and jelly.
5:10
So, just about another minute
5:10
and these things will be ready.
5:14
After another two minutes of cooking,
5:16
our collard greens look really, really good.
5:18
The chicken broth has cooked off,
5:21
they're beautiful and shiny.
5:22
They smell so great and they are hot and delicious.
5:26
Oh boy, look at that, collared greens.
5:28
Good and so good for you.
5:32
And now collards, traditionally in the south
5:35
we cook 'em with hog jowl with different types of meat.
5:39
There's no meat in this.
5:41
So for you vegetarians out there
5:44
this recipe would be really, really great.
5:46
I need fork, 'cause I want to try them.
5:56
Got me a little baby fork and I'll take my little baby bite.
5:59
Hope I don't burn my mouth in front of you.
6:06
Mm-hm, mm-hm, mm-hm. Oh boy.
6:12
Tender and delicious.
6:13
Really quick collard greens.
6:15
Oh my gosh, is that great.
6:18
They don't have to cook all day long
6:20
and smell up your kitchen.
6:21
You don't have to be concerned about how to cook greens.
6:23
They cook really quick, really easily,
6:26
right on your stove top with just a few ingredients.
6:28
You will love these collared greens.
6:30
