- Hey everybody, it's Bobby here today
0:02
with day two of our cooking camp
0:03
and we are gonna prepare macaroni and cheese
0:09
from our "Made with Love, Kids in the Kitchen" cookbook.
0:11
This is so awesome.
0:13
I've got kids
0:14
and you have a lot of fun teaching kids how to cook.
0:18
There's a lot to learn.
0:19
I remember learning how to cook when I was old enough
0:22
to see over the stove.
0:23
And it's a great way to get invol-
0:25
get your kids involved in cooking at an early age.
0:28
So let's get started.
0:30
I've got a stick of butter that I'm gonna melt in my,
0:36
on my stove top here, and a stick of butter, y'all.
0:38
Look right on the side here, shows you
0:41
that it's broken down into tablespoons, right?
0:43
So 1, 2, 3, 4, 5, 6, 7, 8 tablespoons of butter in a stick.
0:49
Okay, my recipe calls for six to be melted over here.
0:53
And then reserve two more for our topping.
0:55
So here's what I'm gonna do.
0:56
One, two, cut.
1:01
And I'll save
1:06
these two tablespoons for a little bit later on
1:09
for my topping.
1:11
So there's two tablespoons
1:13
and they'll be over here waiting for us.
1:14
So I'll take the other six tablespoons of butter
1:18
and I'll go ahead and begin to melt them in our pan.
1:21
And we're making one of my favorite things
1:23
and something that all kids really love
1:25
and that's macaroni and cheese.
1:27
Such a fun dish.
1:28
So tasty and I don't know, it's just always a big hit.
1:32
And you can make different
1:34
variations of macaroni and cheese.
1:35
You can add things, take things out.
1:37
It's just a fun kid's dish.
1:40
So I've got my stove top on
1:42
and my butter is quickly beginning to melt here.
1:47
I'll help it out with my whisk.
1:48
And to this, we're gonna add some flour.
1:54
Won't take long.
1:56
And I've already made, let's come right over here, Ed.
1:58
I've already made...
1:59
The recipe calls for 16 ounces,
2:02
which is one pound of elbow macaroni pasta.
2:05
And I've already cooked it and drained it
2:07
and I've got it here in my bowl ready to go.
2:09
And we're gonna get to that in just a minute.
2:11
Okay, so going exactly by the directions.
2:14
Cook the pasta, we've already done it.
2:16
Preheat the oven, I've got the oven on,
2:18
in a medium sauce pan melt the butter over medium heat,
2:22
that's happening.
2:23
Set aside two tablespoons of butter.
2:25
We've already done that for our topping.
2:27
Stir in the flour and slowly add milk.
2:30
Okay, so our flour, how much flour does it call for?
2:34
It calls for 1/3 of a cup of flour.
2:38
Now my mom has got some beautiful measuring cups over here.
2:42
Measuring spoons, excuse me.
2:44
And this one's marked 1/3.
2:46
So here's our 1/3 of a cup of flour.
2:48
"Well, Bobby, that's a big tall,
2:50
that's more than a 1/3 of a cup, isn't it?"
2:52
And it is, you're right.
2:54
So what we'll do is we'll pack it down
2:56
and I'll scrape off the top, to get it nice and even.
3:01
So that way we know that we've got 1/3 of a cup of flour.
3:06
I'll add it into my butter.
3:09
And little stir, stir, stir.
3:11
Whisk, whisk, whisk.
3:12
I wanna make sure that this is not too high, right?
3:17
Because I don't wanna burn my butter.
3:18
Butter burns everybody.
3:19
Remember that butter will burn.
3:24
You can burn just about anything,
3:25
but butter will quickly burn on you
3:27
if you don't tend to it.
3:29
So I've got my butter and my flour together in our pan.
3:35
And to that I'm gonna add some milk.
3:38
Okay, let's see.
3:42
Slowly add the milk.
3:43
How much milk?
3:44
Three cups.
3:45
Okay, this is a dry measuring spoon.
3:48
So it's made for dry ingredients,
3:50
things like flour or sugar.
3:52
And then you've got wet measuring cups for your wet stuff.
3:58
How do you know that this is for wet?
3:59
Well, if you look on the inside,
4:01
you'll see that the measurements are facing you.
4:04
So you can see them as you fill it up with liquid,
4:06
with water or with milk or whatever.
4:09
I need three cups.
4:10
And there are different kinds.
4:11
So you'll see like,
4:12
here's a good example of one right there.
4:14
And you can see how the numbers all face you
4:17
so you can see them.
4:18
So as you're filling this up,
4:21
you can see the liquid rise up to what you need.
4:26
So we'll do two cups of milk
4:33
because this is a two cup measurer.
4:37
We'll have to do two and then come back and do one more,
4:40
okay, for our three cups.
4:43
So slowly add in the milk.
4:48
And that milk is cold,
4:48
so that's gonna cool everything way off.
4:51
And plus your milk will curdle.
4:54
Butter will burn, and milk will curdle.
4:57
So I want to add it in kind of slowly.
4:59
I don't wanna scald it.
5:04
You get these things going together.
5:07
This is gonna be, make a nice wet base
5:09
for our macaroni and cheese.
5:14
Okay, so two cups and then we'll come back
5:16
and we'll do one more cup.
5:20
I can see my number one measurer down there,
5:24
the line that says one cup.
5:25
So I'll fill up to it.
5:30
One cup.
5:42
Alright, so I've got three cups of milk
5:46
that I've measured out with my butter and with my flour.
5:51
I've got my stove top on low.
5:54
Let's see what's next in our cookbook,
5:59
slowly add the milk stirring constantly
6:01
while bringing to a boil.
6:03
I'm gonna take my temperature up from really low,
6:07
like a medium.
6:11
What'd you do with your whisk, Bob?
6:14
- [Crew Member] There it is.
6:17
- We'll stir this and bring it to a boil.
6:18
Now that's gonna take just a minute.
6:20
So why don't we take a quick break
6:22
and then we'll come right back to Kids Cooking Camp.
6:27
So we've come to a boil with our milk, flour,
6:29
and butter combination.
6:30
It's nice and thick.
6:32
I've turned off the stovetop.
6:34
And now to this, I'm gonna add our cheese,
6:38
and salt, and pepper.
6:42
All right, let's see.
6:43
The recipe calls for 12 ounces of cheddar cheese.
6:50
This is a 12 ounce bag of cheddar cheese.
6:58
But I think what I'll do is I'll add our salt
7:02
and pepper first.
7:03
- [Crew Member] It's actually a 16 ounce bag,
7:05
just so you know.
7:06
So you have to kind of cut a little out.
7:08
- Ah, 16 ounce bag of macaroni and cheese.
7:11
Sorry, I didn't read the label.
7:12
There's a lesson right there.
7:14
So I'm gonna have to leave a little bit behind
7:16
'cause I only need 12.
7:18
Okay, salt and pepper.
7:19
Let's see how much salt and pepper.
7:23
3/4 teaspoon of salt and a 1/4 teaspoon of pepper.
7:27
So we'll find our 3/4 teaspoon.
7:33
We don't have a 3/4,
7:34
so we'll go with 1/4 three times of salt.
7:40
So one...
7:45
Two...
7:50
Three 1/4 teaspoon of salt.
7:51
And 1/4 teaspoon of pepper.
7:54
This is my 1/4 teaspoon measure.
7:59
So in goes my pepper.
8:03
And now...
8:06
Stir that in a little bit,
8:08
get our salt and pepper in there.
8:15
Now to that we'll add our cheese.
8:18
So 12 ounces.
8:19
This is a 16 ounce bag.
8:37
A little bit more.
8:41
And that's gonna be about...
8:47
I'm imagining two 2 oz cups.
8:49
That's gonna be about four ounces of cheese left.
8:55
That's really gonna thicken up our custard.
8:59
My mama calls this a custard for the macaroni and cheese.
9:03
This is really gonna get thick.
9:06
Let that cheese melt,
9:08
and salt and pepper get in there real good.
9:12
Yeah, that's quickly, quickly melting, looking real good.
9:17
And we will add this to our macaroni
9:23
and mix it all together
9:24
and then we'll put it in our casserole dish.
9:30
Wonderful, that looks great!
9:37
All right, here we go.
9:41
All over that macaroni.
9:52
Mm-hmm!
9:54
All right, and now we'll mix together
9:56
our macaroni and our custard together.
10:06
And Eddie, take a look while I'm mixing this,
10:09
right down in front of Eddie, there's this super,
10:11
super neat little apron.
10:13
This is from the Made with Love collection.
10:15
Look, there's Mom on the front.
10:17
Some cool stuff that you get
10:22
in that little box with this great little cookbook.
10:28
I'm really, really happy that my mom taught me how to cook
10:33
when I was a kid and how to clean up after myself.
10:37
And those two things have served me very, very well in life.
10:41
Alright, now that looks really, really, really good.
10:45
Couple things I still have to do.
10:46
I've got to grease my casserole dish here.
10:51
So I'm gonna use some PAM coating.
10:53
I think I'll find it right down here somewhere.
10:56
Let's see. - Middle drawer.
10:58
- Middle drawer, here we go.
11:03
Alright, so lightly greased.
11:08
Just a little spray.
11:14
So our macaroni doesn't stick.
11:20
And we'll add that, whoops,
11:29
right into our casserole dish.
11:39
Yeah, look at that thick and creamy macaroni and cheese.
11:42
Gosh, wow, look at that, woo! (laughs)
11:47
Have your friends come over, guys.
11:50
Bring all the kids from the neighborhood.
11:55
Have them come over for macaroni and cheese
11:59
'cause you're gonna have enough to feed a kid army.
12:04
All right, get it all spread throughout.
12:08
And now one more thing that I have to do
12:10
is make the topping.
12:12
For the topping two tablespoons of butter.
12:15
We've got that here already melted
12:20
and we measured it earlier
12:21
so we know that it's two tablespoons,
12:24
and four tablespoons of dry breadcrumbs
12:28
and a little bit of salt and pepper.
12:30
It doesn't tell us how much salt and pepper.
12:32
I'm just gonna use a little pinch salt
12:37
and a little pinch of pepper.
12:41
And now our four tablespoons of dry breadcrumbs
12:47
and this is our one tablespoon measuring spoon.
12:54
So one.
12:59
Two.
13:03
Three.
13:06
And four.
13:09
Great.
13:12
Now we will mix that together.
13:18
And we'll put it right over the top
13:19
of our macaroni and cheese.
13:22
And that's gonna give us
13:23
a nice golden brown crust on the top.
13:34
Yeah, that looks great.
13:35
Not a whole lot of it.
13:36
So we're gonna have to be strategic
13:39
with how we put this on top of our mac and cheese.
13:46
Okay, let's try to evenly
13:57
spread this out.
13:59
Okay, and what does it say to do with our macaroni
14:02
and cheese now that we've got it ready?
14:07
Bake for 30 minutes and remove from the oven
14:11
and let it cool prior to serving.
14:13
So we're done.
14:15
All we gotta do is pop in the oven 30 minutes at?
14:18
What's the temperature?
14:20
375, oven's already hot.
14:22
So we'll pop this in the oven,
14:23
take a break and we'll come back.
14:25
Our macaroni and cheese is outta the oven
14:27
and it looks and smells so, so great.
14:30
Okay, guys, way too hot to taste right now.
14:33
I'm gonna have to let that cool a little bit.
14:34
But let's talk about the measuring that we did earlier.
14:37
You'll remember that our recipe called
14:40
for a 16 ounce box of pasta, right?
14:44
It called for like three cups of milk and a stick of butter,
14:47
which is broken down into tablespoons.
14:49
So the tablespoon of butter, or excuse me,
14:51
the stick of butter is 1, 2, 3, 4, 5, 6, 7, 8 tablespoons.
14:56
And we cut that and reserved off two tablespoons
14:59
for the topping.
15:00
We talked about a wet measuring cup, right?
15:02
And why it's a wet measuring cup.
15:05
So when you're pouring in your liquids and stuff
15:08
and you see your lines on the inside, you can read them,
15:10
they're facing you.
15:12
Which is really handy for measuring like milk
15:15
or water or stuff like that.
15:16
And then you got your dry measuring cups, right?
15:18
So it would be a dry cup
15:21
and it would measure a little bit differently than this.
15:24
This is for things like flour and sugar,
15:26
and then for water and milk and things like that.
15:29
And you've even got teaspoons, tablespoons,
15:32
1/2 teaspoon, 1/2 tablespoon.
15:36
My mom has this beautiful set
15:39
of measuring spoons that I love.
15:43
And she's even got, look at this, guys,
15:47
you've probably never seen anything like this.
15:50
Look, so here's a smidgen, here's a pinch,
15:55
and here's a dash.
15:57
How about that?
15:58
You ever seen anything like that?
16:01
I love it.
16:02
So anyhow, we're learning to measure
16:04
and we're learning to cook at the same time.
16:06
So cook with your family, make delicious things
16:09
like macaroni and cheese
16:12
from this great "Made with Love" cookbook,
16:15
"Kids in the Kitchen".
16:17
I think that you'll really enjoy it.
16:19
Anything that gets you in the kitchen cooking
16:20
with your family is a plus.
16:22
So that's it for Kids Camp today.
16:25
Keep joining us for more and we'll see you next time.
