- Y'all I hope the recipe that I'm sharing with y'all today,
0:04
you're really gonna like,
0:06
I'm hoping it'll be a real crowd pleaser.
0:09
You know, children, children, children,
0:12
they can be so picky if you don't start them out
0:17
in the cradle eating and loving vegetables
0:20
and things that are good for 'em is just so, so hard
0:24
to switch them over.
0:27
So this is a barbecue macaroni and cheese.
0:31
So it'll have that macaroni and cheese
0:33
but then it'll also have the protein of the barbecue sauce.
0:37
And I have one pound of cooked barbecue, Boston butt.
0:44
And I added, I think it was like one cup of barbecue sauce
0:48
to it.
0:49
And a vinegar based barbecue sauce
0:51
really works a little better.
0:55
So I'm gonna spread this in the pan.
0:58
But right now, I have melted
1:03
about a fourth of a cup of butter,
1:05
and I'm gonna add my flour
1:10
and I'm gonna whisk this, stirring it constantly
1:13
for a couple of minutes, you know to just get that flour
1:17
taste cooked out of it.
1:22
And this is gonna make our macaroni and cheese
1:26
thick and creamy.
1:36
I'm supposed to be stirring that constantly,
1:38
but I want to come over here and I want to go ahead
1:41
and get our barbecue in our 13 by nine by two pan.
1:49
So maybe it'll be alright for a second by itself.
1:57
I used to say when I was working in that kitchen
2:00
all the time, I said,
2:01
when I die, I wanna come back as an octopus.
2:06
Can you imagine how much six more arms you could do with?
2:12
You could do a lot. (laughs)
2:20
Okay, I'm gonna come down here and spread it out.
2:33
I think this recipe was in my magazine.
2:38
I would probably like a little bit more
2:42
a heavier pork base if I were feeding, you know, my family,
2:48
but the one pound will cover the whole bottom of that
2:55
13 by nine by two pan.
2:58
It is just amazing where
3:03
I'll write a recipe and I will change it.
3:06
(laughs)
3:08
You know, it's like, I can't make up my mind.
3:12
So it's bad when you change your own recipe,
3:17
but that is what I like for y'all to do.
3:21
I like for y'all to take our recipes and make it your own.
3:27
All right, now I'm gonna whisk in my milk.
3:30
(pan sizzles)
3:33
And I'm gonna let this go until it starts to thicken.
3:42
And I'm switching over to my whisk
3:44
because I don't want it to be lumpy.
3:48
And I'll have a better chance of whisking out those lumps
3:51
using my whisk.
3:58
We're just gonna let this cook until it thickens,
4:04
working on getting our lumps out of there.
4:11
We have to cut that back up a little now.
4:26
And after this gets smooth and lump free,
4:32
I'm gonna be adding cheese,
4:36
chili powder, paprika, salt, cream cheese
4:42
and a little bit more pork. (laughs)
4:46
Nice, crisp bacon.
4:52
Okay, y'all I felt like our flour and butter mixture
4:58
needed a little bit more milk.
4:59
So I probably added on top of the cup and a half,
5:02
I probably added another cup of milk
5:05
'cause we got a lot of pasta there that we got to
5:08
cover the territory.
5:10
All right, now I'm putting in my chili powder,
5:13
my paprika for color and a little flavor, a little salt,
5:21
my cream cheese.
5:28
And we're just gonna mix that all up.
5:30
It'll take just a minute for that cream cheese to melt
5:35
and get creamy in there.
5:39
But this is looking good.
5:42
And then we've got our cheddar cheese that's grated,
5:47
so it's not going take as long to melt as our cream cheese.
5:52
So I'm gonna get this cream cheese smoothed out
5:56
a little bit and then we'll add our other cheese
5:59
and then we're ready.
6:04
I think this will be a home run for a family meal
6:10
and for a quick family meal.
6:13
Oh my gosh.
6:14
When Sullivan comes home,
6:17
his cousins are hankering to see him.
6:22
I think Maddie, Jamie's son, spent the first two nights
6:28
with us and then Henry spent two nights.
6:35
Alright I'm gonna put in my cheese, y'all.
6:39
Oh, and my onion, I forgot my onion.
6:43
Got to get that in there.
6:48
You know, I used to not like purple onions
6:51
but you know what?
6:53
I like, 'em now Eddie.
6:55
Isn't that weird? (laughs)
6:58
Sometimes I just feel like they're so strong
7:03
with flavor and heat.
7:11
All right.
7:14
Look at the cheese.
7:18
This is gonna be so good.
7:23
And you know what?
7:24
I think I'm going to even add a little bit more milk, Eddie,
7:28
what do you think?
7:30
This is thick, isn't it?
7:33
- [Eddie] It is, but I think once it bakes
7:35
it's gonna. - Yeah.
7:38
I'm still gonna add just a little bit more of milk.
7:46
And this is just based on my experience of
7:50
cooking so much macaroni and cheese over the years
7:54
at the restaurant.
8:00
Look, it looks good, I wonder what it tastes like.
8:03
It's been a long time since I tasted this recipe.
8:11
Oh, it's good.
8:12
It's so good, Eddie.
8:19
Okay, so I don't know that I'm going to use,
8:27
I didn't put quite all that salt.
8:29
I don't know that I'm going to use all these noodles.
8:35
I'm just gonna have to take a look at it and see.
8:38
So I'm gonna put what I need over in here.
8:47
'cause you know, I can always add to,
8:49
you just can't take away.
8:54
Oh wow.
8:58
Wow.
9:11
- [Eddie] I don't know I think you might need them.
9:13
- [Paula] I think I'm gonna need 'em too.
9:20
I'd rather do it slow and easy though, you know?
9:34
Now this is not gonna need to cook for very long
9:37
because everything in it is cooked.
9:42
So you'll just wanna make sure it's like hot and bubbly
9:47
all the way through.
10:02
Oh yeah.
10:05
It did, but you know what?
10:06
I'm so glad I added that extra milk.
10:11
'Cause I think it would've been pretty, pretty hard
10:16
'cause that flour.
10:18
Ow.
10:20
You know what?
10:23
There we go,
10:24
I didn't wanna have to put that little bit of milk up.
10:27
(laughs)
10:29
Right, Theresa?
10:31
- [Theresa] So how much milk have you added
10:32
to that recipe now?
10:35
- [Paula] We've probably used three and a half cups maybe.
10:40
And come look at it.
10:44
- [Theresa] Ooh it looks good.
10:46
- [Paula] It does, but oh, I forgot my bacon.
10:51
- [Theresa] That's important.
10:53
- You can't have macaroni and cheese and barbecue
10:55
without bacon.
11:00
Listen to that squishing sound.
11:01
(laughs)
11:03
Okay, here we go.
11:08
We're just gonna put our mac and cheese
11:09
right on top of that barbecue.
11:14
This would be a great potluck recipe for anybody that's.
11:22
Let's see, what's our next holiday?
11:24
Memorial Day or Labor Day?
11:27
- [Theresa] Labor Day.
11:28
- I get 'em mixed up. - Memorial Day
11:29
has come and gone, my friend.
11:30
- I know, but I get those two mixed up.
11:34
(laughs)
11:35
Memorial and Labor.
11:37
Okay so there we go.
11:39
And I'm gonna wait and put more cheese on it
11:43
after this is ready.
11:45
'Cause you know, I just don't like my cheese turning brown.
11:48
- We know.
11:50
- We know, yes.
11:50
You wanna stick that in? - Sure.
11:52
- And for how long? - Now this is 375
11:56
for about 20 minutes.
11:58
- That'd be about right.
12:00
Well, this is a recipe
12:01
I'm hoping that your family will like,
12:03
it's great for a quick night.
12:06
We didn't cook the pork off.
12:09
We just used the pork from the grocery store
12:13
that's already done
12:15
and it's actually a pretty good barbecue, y'all.
12:19
So look at that, looks good, doesn't it?
12:25
And remember I added extra milk
12:29
because I think if I had not,
12:33
I would think it would've been a little too dry.
12:36
So it called for what, a cup and a half of milk, Theresa?
12:41
- [Theresa] Yes, ma'am and you doubled it.
12:44
- Yeah, I mean I probably ended up adding two cups,
12:48
maybe not quite so much.
12:52
But remember the barbecue is on the bottom
12:56
and the creamy mac and cheese is on top.
12:59
And
13:03
if you gonna make this,
13:05
I would cook me off a fresh Boston butt.
13:09
And of course I love to cook mine in the pressure cooker
13:11
'cause I can do it just a quarter of the time
13:15
that it would take to go in.
13:17
Well, you could do it in the slow cooker when you go to bed
13:20
and then the next morning get up and the butt would be done
13:24
and you could have macaroni and cheese.
13:27
You know and if your children don't like barbecue sauce,
13:31
I think it would be fine to just shred up
13:34
your Boston butt and lay it down.
13:38
But we do recommend, if you toss it in some barbecue sauce,
13:43
that you use a vinegar based barbecue sauce.
13:49
I really do think the whole family will enjoy it, y'all.
13:55
Love and best dishes barbecue.
13:59
Do you want some barbecue, Michael?
14:02
- [Micheal] I do, but.
14:03
- You're gonna stick with your apple?
14:06
- Six months. - I think it's delicious.
