- So many wonderful recipes, y'all, that I share
0:04
with you on Paula Deen's Love and Best Dishes
0:07
comes from my magazine
0:10
because I love my kitchen team with my magazine.
0:21
Did I say that right?
0:25
I don't wanna get my mords wixed up.
0:30
So I'm sharing with y'all the Creamed Greens
0:34
and Onion Macaroni and Cheese.
0:36
So I'm just gonna start by cooking the macaroni,
0:40
and I can't pronounce that, Eddie, can you?
0:48
- [Eddie] I dunno that I've heard of that.
0:49
- I don't either, but this is what it looks like.
0:55
Looks like a little sea shell,
0:58
you know, that we see so many
0:59
of those when we're walking on the beach.
1:02
So I'm gonna go ahead and cook that.
1:05
So I'm gonna heat up my cast dutch oven
1:12
and I'm gonna add my butter
1:17
and then I'm gonna add country ham
1:19
and I'm gonna cook that
1:23
until our country ham is kind of a nice brown,
1:29
just brown it off a little bit.
1:33
Now with us using country ham in this recipe,
1:37
I want you to remember that country ham
1:40
is very, very, very salty.
1:43
So you wanna make sure you under-salt
1:48
rather than over-salt.
1:50
And plus your cheese, your cheese has a lot of salt in it.
1:54
And your butter, because I use salted butter.
1:58
That's just my favorite.
2:00
Even if I'm making sweet dishes,
2:05
like my cakes, I always use salted butter.
2:09
Okay, so I'm gonna need another spoon,
2:16
and we're just gonna put that in our skillet
2:26
and it won't take but a few minutes.
2:29
Okay, so about five minutes on our country ham.
2:32
Now I'm gonna add a teaspoon of garlic,
2:37
1 1/2 tablespoons of rosemary.
2:45
And that rosemary is fixing to burst in our nostrils.
2:50
If I can smell anything today, I'll enjoy the smell.
2:54
All right, now we're coming in with our purple onion.
3:01
We're gonna stir all of our ingredients together.
3:11
Make sure they're all coated good in that butter
3:17
and a little bit of fat
3:19
that has rendered out from the country ham.
3:24
All right, so we're gonna cover this
3:31
and we're gonna let it cook,
3:33
gosh, probably eight minutes, maybe eight minutes.
3:38
But I'm gonna come back and I'm gonna stir it occasionally.
3:41
All right, y'all, this has been about eight minutes cooking
3:45
and now I'm gonna stir in our flour,
3:49
which is gonna be our little thickening agent.
3:54
And we'll cook this for a couple of minutes.
3:56
I'm gonna turn that heat down just a wee little bit.
4:04
Now this recipe, y'all,
4:09
you know, in this world we live in today,
4:14
we have to learn to improvise,
4:19
especially when you can't find products,
4:21
and this one called for,
4:27
excuse me, this called for Swiss chard.
4:33
And Theresa went to the grocery store
4:34
and she said it was organic
4:36
and it looked perfectly awful, the Swiss chard.
4:40
So she picked up kale, which I think all
4:44
of those greens can be intertwined.
4:52
Okay, this is beginning to stick
4:56
because we added that flour.
5:00
So I'm gonna turn this down real low.
5:03
Our pasta has been cooking for about 11 minutes,
5:08
and I like to cook my pasta done,
5:11
especially when it's going into some type of casserole,
5:16
because if it's not done,
5:18
it's gonna keep absorbing the liquid to finish cooking
5:23
and then your dish is gonna be dry.
5:26
So I wanna make sure that mine is done
5:35
and it won't want anything else to drink.
5:42
Okay, so that's the flour.
5:45
And now I'm going to remind myself
5:52
the milk is gonna go next.
5:54
I've got two cups of milk.
6:02
I'm gonna slowly add to
6:06
our onion and ham mixture with the rosemary and the garlic.
6:12
All right, so now I'm gonna slowly
6:15
add a cup and a half of our Fontina cheese.
6:29
And then I'm holding out a little bit
6:31
so I can cheese the top.
6:35
Okay, now I'm gonna stir in kale
7:02
And it calls for one bunch of Swiss chard, y'all.
7:08
So I'm gonna try to guess
7:16
how much kale would be used
7:21
equaling one bunch of Swiss chard.
7:25
This is where I'm gonna be guessing.
7:28
I don't think we're gonna need a full pound of pasta.
7:36
So that's two heaping cups,
7:40
three heaping cups of cooked pasta so far.
8:01
'Cause this is gonna get thicker as it bakes in the oven.
8:07
Now, I don't know about you, Eddie,
8:08
but three heaping cups of pasta looks pretty good to me
8:14
because I want it moist.
8:22
Because when I cook our macaroni and cheese,
8:31
it's got a little soup to it.
8:33
- [Eddie] That still works.
8:34
I definitely prefer this.
8:36
It's got some juice to it.
8:38
- Yeah, because I don't want it dry.
8:40
So I think I may stop right there.
8:45
Or maybe let's go 3 1/2 cups,
8:51
and I'm definitely stopping with that.
9:06
That kale looks beautiful in there, doesn't it?
9:10
Along with the country hams.
9:12
- [Eddie] Smells good?
9:14
So this is going into our oven, y'all.
9:19
Well, I plan on baking this at 350
9:23
until it's hot and bubbly
9:26
and then towards the end
9:29
I'm going to top it with more cheese.
9:34
Y'all, I've chosen not to add any salt
9:38
because of the reasons I told y'all earlier,
9:41
but I am gonna it with some fresh ground pepper
9:54
can determine whether they want more salt or not.
9:57
Always add more, but you can't take it out.
10:01
All right, y'all, I opted to put 3 1/2 cups
10:06
and they were pretty kind of like heaping
10:11
and the recipe called for the whole pack,
10:13
but I like my macaroni and cheese juicy,
10:18
and so that was the call I made.
10:22
So when it depends when you go to make this,
10:26
it really depends on if you want a drier one
10:30
or a wetter one like I like.
10:33
So that is the last of the Fontina cheese,
10:39
and that's gonna stay,
10:41
probably take five minutes for that to melt.
10:44
This is cooled down enough now for me to taste it.
10:49
And I think that I made the right call
10:56
on the amount of pasta that I put in
11:01
because it's a little creamy, not totally dry.
11:07
So make that call yourself, y'all, however you like it.
11:16
It looks and smells delicious.
11:19
The rosemary in it was just delicious smelling.
11:30
It's interesting flavors, y'all.
11:37
I wish that we had had the Swiss chard, but we didn't,
11:53
works out really good too.
11:58
It's a whole new taste macaroni and cheese, y'all.
12:04
And I hope you like it.
