- Hey, everybody, I'm Bobby Deen,
0:01
and I'm here with another great recipe for you today
0:05
that I think is pretty quick and simple
0:06
and I think you'll like it.
0:07
We're right in the thick of football season
0:10
and all of us love to do some tailgating and you know,
0:12
you got friends coming over, you got to give them something.
0:15
It can't just be chicken wings all the time.
0:18
So today, we're gonna do a little something different.
0:20
It's gonna be a buffalo chicken dip,
0:22
and I think you're really gonna like it.
0:24
The ingredients are expected and simple to put together,
0:28
and then we'll just end up baking it off.
0:30
If you have to have to,
0:32
have to, if you'd like to use rotisserie chicken,
0:35
that's always fine to do that.
0:37
We've cooked off a couple of chicken breasts,
0:40
and I've got two cups of that cooked chicken meat here.
0:44
We'll start with cream cheese,
0:46
which is a great base for any dip,
0:49
and plus cheese is gonna be sort of the,
0:52
I don't know if it's the main ingredient,
0:53
but the cheese is always the star of the dip.
0:56
And I'm just checking the softness of our cream cheese.
0:59
Anytime we're using cream cheese in a recipe,
1:02
it's pretty standard,
1:03
gonna be an eight-ounce block of cream cheese.
1:06
You want to just leave it sit out for a little while
1:08
so it can soften and you can see that
1:10
that is a pretty soft cream cheese right there.
1:13
If it's super cold straight out of the fridge,
1:15
it'll really, really be a bear to mix.
1:18
So with our cream cheese,
1:19
we'll add some sour cream and some mayonnaise to start.
1:23
We'll get all of our white ingredients in the bowl.
1:37
Sorry, Theresa, I'd like to be facing the camera for you,
1:39
but it's not easy to do.
1:52
And to that, we'll add some buffalo sauce,
1:56
and this should start to make it a little easier
2:00
to mix these things together.
2:07
And then we'll start to add some dry ingredients.
2:11
One more wet ingredient over here.
2:14
Yeah, and you see that color. Oof.
2:20
Our cream cheese was a little bit clumpy,
2:22
so I broke the whisk out just to try
2:26
to get some of the lumps out.
2:29
And it's smoothing out now nicely.
2:33
So to that, we'll add a little white wine vinegar,
2:39
which will also help loosen things up.
2:48
- [Theresa] Well, you know what?
2:49
All that cheese is gonna melt in the oven anyway.
2:52
- [Theresa] It's gonna be gooey and good.
2:54
- It's gonna be delicioso.
2:57
Little paprika and some garlic powder.
3:09
And to that, we'll add some fresh herbs,
3:13
some chives, about a tablespoon of chives,
3:21
a little bit of parsley,
3:25
and about a teaspoon of dill.
3:29
Eh, one more little shot.
3:30
Let's mix this together and then we'll add our chicken.
3:37
Not only will these fresh herbs give it a little flavor,
3:42
it'll give it a little pop of color, which is nice.
3:46
To that, we'll add our chicken and a little cheese.
4:00
And we'll save some for the top.
4:03
Bowl might be shallow for our dish here,
4:06
but do my best to contain it.
4:11
Yeah, this is looking really good.
4:12
If you like buffalo and you like chicken,
4:14
this is gonna be for you.
4:17
So last but not least, a little salt.
4:28
Ready to go into our baking dish.
4:34
Does anybody recognize this?
4:35
How old are you that you recognize this?
4:38
There's probably a lot of value in this stuff nowadays.
4:42
You don't see it anymore.
4:45
That reminds me of my childhood.
4:49
Must have been cheap back then. (laughs)
4:58
I just spilled- - Runaway dip going.
5:00
- Man, I just spilled it.
5:05
Oh, well, I'll clean that up.
5:09
I don't know about you. Theresa, do you like buffalo sauce?
5:11
- Mm. - I want it too.
5:15
- [Theresa] And add it with cream cheese and those
5:17
(crosstalk drowns out speaker) - Mm-hm. Yes.
5:19
- That's my kind of deal. - Yes, mine too.
5:22
- [Theresa] I will definitely be taking this
5:24
to a tailgate. - Okay, great. Yeah, me too.
5:27
And man, I'm a cracker person too.
5:29
I just love, I'm chippy and dippy and I love all that stuff.
5:33
My vices have always been leaned in that direction.
5:36
The carby stuff, I've always liked french fries.
5:40
And man, do I like a good chip.
5:43
I like hummus and cheese and all that stuff, man.
5:51
I'm the guy, I will eat your whole bag of chips
5:54
and feel terrible about it later.
6:03
- Ready to go in the oven? - Ready to go into the oven.
6:05
I think it looks nice and even.
6:09
Doesn't have a big, round mound in the center.
6:11
Looks pretty evenly displaced there, pretty evenly placed.
6:16
Yeah. Let's bake it off.
6:18
- [Theresa] And how long does it say to cook?
6:20
- How long does it say? We're gonna do it at 350 for,
6:25
I don't know, let's go for 30 minutes.
6:27
We'll check it in 20 and spin it around,
6:29
but I think about 30 minutes total.
6:31
So we're off to the oven.
6:33
It's looking really, really good.
6:35
Gonna top it with our cheese
6:40
'cause that's what this needs is a little bit more cheese.
6:44
And we'll go back into the oven for just a few minutes
6:48
to melt that, and then we'll come back and give it a taste.
6:55
Oh, who am I kidding? (laughs)
7:00
So back in the oven for a few minutes and be right back.
7:04
Buffalo chicken dip, it looks great. It is really hot.
7:08
I just pulled it out of the oven.
7:09
And you're not gonna see me taste it because the game starts
7:11
in 30 minutes and I'm taking this one with me.
7:13
But buffalo chicken dip. Tailgating time, everybody.
7:17
You should make this at home.
