- All right.
0:01
Every Thanksgiving meal, has to have a salad, doesn't it?
0:06
But, and I always do,
0:08
I always have some kinda salad,
0:10
but if y'all are like me,
0:12
you've noticed that
0:13
the salad, is the least eaten
0:17
of all the dishes.
0:19
The macaroni and cheese,
0:21
the cornbread dressing,
0:23
the mashed potatoes or the rice,
0:26
all that's gone.
0:28
- [Man] You gotta step up your game with the salad.
0:31
- (chuckling) Yes.
0:32
And then I got enough salad for days.
0:35
So,
0:36
I think this Thanksgiving,
0:39
you know, that's really up to you
0:41
what kind of salad you want.
0:42
But I think I'm gonna do
0:44
a brussel sprout and cranberry salad,
0:47
that is in "Cooking with Paula Deen" magazine.
0:52
And this is what it's gonna look like.
0:54
And the brussel sprouts right now, they're so popular.
0:58
I think they're at the height of their popularity.
1:02
Don't y'all?
1:03
Eddie?
1:03
- [Theresa] Yes. - [Eddie] Oh, yeah.
1:04
- I mean, you can't go into a restaurant
1:05
and not find brussel sprouts on the menu.
1:08
So, what I'm gonna do is,
1:10
I'm gonna make my dressing first.
1:13
And I'm just gonna pick this up and read it off to you.
1:18
and maybe you won't have to replay this video
1:21
to get all your ingredients.
1:23
Okay, I need four and a half--
1:26
Four and a fourth tablespoon
1:29
of apple cider vinegar.
1:34
That's the apple cider vinegar.
1:38
I'm not sure what that is.
1:40
- [Theresa] Maple syrup?
1:41
- [Paula] Could be, I bet it is.
1:43
And it's probably my diet maple, right?
1:45
- [Theresa] Nope.
1:46
- [Paula] Oh, it's not. It's the real deal.
1:47
- [Theresa] It's the real deal.
1:49
- [Paula] Yay!
1:50
I can tell you real quick like,
1:53
that's a real deal y'all.
1:57
Mmm!
1:58
So four teaspoons of maple syrup,
2:00
one and a fourth teaspoon of Dijon mustard.
2:06
We're gonna put three fourths of a teaspoon of kosher salt,
2:09
and a half a teaspoon of ground black pepper.
2:13
And we've got two tablespoons of extra virgin olive oil,
2:19
one pound of brussel sprouts, trimmed and thinly sliced.
2:24
Now, like I said, Theresa is getting so good
2:27
at prepping all these dishes for me.
2:29
She actually did her brussel sprouts,
2:33
with her mandolin.
2:36
So I really like that, Theresa, it's beautiful.
2:39
- [Theresa] Thank you.
2:40
- [Paula] Beautiful, beautiful.
2:42
And it's gonna be easy to eat that way.
2:44
Alright, and a half a cup of sliced almonds.
2:49
Toasted.
2:50
Have those been toasted, Terez?
2:52
- [Theresa] Yes, ma'am
2:53
- [Paula] Okay, they look like it.
2:54
And a half a cup of dried cranberries,
2:57
and a half a cup of crumbled, feta cheese.
3:02
So we're gonna make our dressing first,
3:07
and we're just gonna pour everything.
3:12
Alright, now how much olive oil?
3:15
Two tablespoons of olive oil.
3:18
Yeah, that's the olive oil.
3:25
Sometimes it looks just like a little too much and all.
3:29
Go behind.
3:31
Well, that's perfect.
3:34
Alright, and then we're gonna add our Dijon mustard.
3:41
Our pure maple syrup (chuckles).
3:43
It's gonna give that little sweet tangy taste, Eddie.
3:48
Alright, I don't know,
3:49
I might wanna save the almonds for on top.
3:55
But in my recipe I said, "Toss it all in."
3:59
And of course our half a cup of dried cranberries.
4:04
And a half a cup of crumbled, cheddar cheese.
4:10
- [Theresa] No, feta cheese.
4:12
- [Paula] Feta? What did I say?
4:13
- [Theresa] Cheddar.
4:14
- [Paula] Cheddar cheese? (Eddie chuckles)
4:15
- [Theresa] (indistinct)
4:16
- [Paula] That's the funniest looking cheddar cheese
4:18
I've ever seen. (laughs)
4:21
And a half a cup of feta cheese.
4:25
So we're just gonna stir all those together.
4:27
And how much salt did I say?
4:31
Three fourths of a teaspoon.
4:34
Okay, that looks like three fourths of a teaspoon.
4:37
And then, how much black pepper does it go for?
4:43
Half a teaspoon.
4:46
Hopefully the children will eat this.
4:52
You talking about an easy, easy, beautiful salad,
4:56
this is it y'all.
5:02
This is it.
5:04
Now, we just wanna stir that all together,
5:08
and make sure it's moistened
5:14
through and through.
5:21
And then, we found this pretty, pretty bowl.
5:27
That Bobby and Claudia had here at the house.
5:29
(tap water running)
5:30
And that's what we're gonna put our salad in.
5:33
And it looks real fancy, doesn't it?
5:38
Oh! Eddie, you didn't tell me how much it weighs.
5:41
- [Eddie] It's a little bit of a weight--
5:42
- [Paula] Michael, come on in.
5:44
- [Eddie] I just got a little bit of a...
5:45
- [Paula] Come on in.
5:46
- [Eddie] (laughs) You scared me for a second.
5:47
(Paula laughs)
5:48
(Eddie laughs)
5:50
- Michael just walked up to the glass door
5:52
and we couldn't hear him.
5:54
Michael, you're just came just in time
5:55
to move this bowl for me.
5:58
- Okay, what you need?
5:59
- I'm kidding you.
6:00
I went to pick it up and it weighs a ton.
6:04
So nobody's gonna be passing this bowl around the table,
6:07
I can promise you that.
6:10
- [Michael] It can be my ice cream bowl.
6:11
- Yes.
6:13
Alright, so look what I've got ready Michael,
6:19
for our Thanksgiving meal.
6:23
- [Michael] Not what I was thinking.
6:24
(Paula laughs)
6:25
- What were you thinking?
6:26
- [Michael] I wasn't thinking a salad for Thanksgiving?
6:28
- [Eddie] We're going all healthy, this time.
6:30
- [Michael] That's good.
6:33
- [Paula] That's what I said, Michael.
6:36
You know, I always have some kind of salad at Thanksgiving.
6:39
(oven timer ringing)
6:41
- [Paula] Okay, I think something's ready in the oven.
6:44
- [Michael] We usually have it
6:45
the day after Thanksgiving too (laughs).
6:46
- [Paula] Mm-hmm.
6:47
- [Eddie] You're gonna love the tofu turkey. (chuckles)
6:51
- [Paula] That's what I said.
6:51
You know, all of the sides are gone,
6:55
and I've still got a great big bowl or pan of salad.
7:00
- [Michael] Yeah.
7:02
- [Theresa] Not this year.
7:03
- [Paula] Not this year.
7:04
Who wants a taste?
7:08
- [Eddie] It kinda reminds me
7:09
of like Asian slaw or something.
7:15
- [Paula] Mmm.
7:18
Come taste, Michael.
7:19
- [Eddie] Yeah, you would never know
7:20
you're eating brussel sprouts.
7:22
- [Paula] Mm-mm.
7:24
- [Theresa] Another dish (indistinct)
7:25
- [Paula] So good.
7:26
- [Theresa] I bet Claudia would approve that dish too.
7:28
- Mm-mm.
7:29
- That's good.
7:30
- [Theresa] She might not have to cook today.
7:33
- [Paula] Ain't that yummy?
7:34
- Mm-hmm.
7:35
- [Eddie] I think you could slice some apples or something
7:38
in there too.
7:39
- You know what? I'm thinking--
7:41
- Or shrimp, or (indistinct)
7:43
- Yeah, shrimp would be delicious in there,
7:46
But I'm thinking I'm gonna top it,
7:48
when I take it to the table,
7:49
I'm going to top it with some homemade croutons.
7:51
- [Michael] Mmm, okay. - [Eddie] Yummy.
7:54
- Mmm.
7:56
So good.
7:59
I'm so glad you like it.
8:00
'cause that's what you're having for Thanksgiving.
8:02
- [Michael] Not me.
8:04
- [Paula] No?
8:05
- [Michael] No, I'll go get a turkey salad somewhere.
8:08
- (chuckles) You know you don't want that.
8:13
Mmm.
8:14
- [Theresa] You also know you'll have a turkey sandwich.
8:16
- Mm-hmm. - Yeah.
8:17
- Well, it is good,
8:18
but I don't really think
8:19
that's what I've been thinking about for Thanksgiving.
8:22
- I say this will be the last thing on the table.
8:25
This will have the most left,
8:27
but it's delicious, y'all.
8:33
You gotta have your token salad,
8:34
might as well be a good one.
8:36
- [Eddie] Actually, you know,
8:37
when you make your Turkey sandwich the next day,
8:39
that would be good.
8:40
- Oh, and that be good, won't it?
8:42
- [Eddie] Mm-hmm.
8:44
- Yum-yum.
