- Hey everybody, it's Bobby here.
0:02
I'm filling in for my mom who is on the road,
0:04
and today I'm gonna cook you a hearty and healthy fall dish
0:08
from my mother's magazine.
0:10
And it is
0:11
(dog knocking)
0:12
from my section.
0:14
Somebody's knocking at the door. (laughs)
0:18
All right, this is from my section in mama's magazine.
0:21
Going green is the title.
0:23
This is baked grits and greens.
0:26
I love fall.
0:27
I love cold weather.
0:28
When it gets cold outside, I like to make hearty dishes.
0:31
Sometimes I even steer away from light healthy stuff.
0:35
I like to do chicken dumplings in chili,
0:37
big dump pots, you know, that kind of stuff.
0:40
So today I'm making baked grits and sausage for you, okay.
0:45
- [Teresa] Bobby, this will be a good Thanksgiving dish.
0:47
This could be a side dish for Thanksgiving.
0:49
- Hey, you know what?
0:50
Yeah, this would be a great,
0:51
if you have big Thanksgiving gatherings with your family,
0:53
and they want you to bring a dish,
0:55
this would be a great side to bring.
0:56
That's a great point, Teresa.
0:58
Okay so, I've already got my sausage going.
1:00
This is a quarter pound (skillet chinking)
1:02
of turkey sausage,
1:03
and you see I've just got it cut into rings here.
1:05
Super simple.
1:06
And to that, I'm gonna add some kale.
1:12
All right, I think that's six cups.
1:13
Wow, look at that.
1:14
- [Teresa] Packed firmly.
1:15
- [Bobby] Packed firmly.
1:16
Six cups of kale packed firmly.
1:18
And that's gonna cook down.
1:20
That looks like a lot, I know.
1:21
- [Teresa] I may have turned off the-
1:22
- Oh, turned it way down. - Stove. Just as an FYI.
1:25
- That's okay, that's okay.
1:26
Turn it back up. (food sizzling)
1:27
And I could have used maybe a little bit bigger skillet,
1:30
but that's okay we'll make it work.
1:31
- [Teresa] Oh, it's gonna go down to nothing soon.
1:33
- [Bobby] Mm-hmm
1:34
- [Teresa] That is the one thing I have learned
1:35
about greens. - Mm-hmm.
1:36
Yeah, they do.
1:36
Greens do cook way, way down.
1:39
So my kale right on top of my sausage.
1:41
(food sizzling)
1:42
(Bobby clears throat)
1:43
And I'll kind of let them get to know each other there.
1:47
- [Teresa] You know, a lot of people don't like kale,
1:48
but I don't think it's cause they don't like it.
1:50
I just don't think they know it.
1:51
- [Bobby] Yeah, I think that a lot
1:53
of people say that they don't like kale
1:55
without knowing whether or not they actually do like kale.
1:58
(food sizzling)
1:59
but- - It's a little intimidating.
2:00
- [Bobby] Well, intimidating,
2:01
well, I don't know if it is intimidating.
2:03
It just sounds so healthy.
2:04
People associate kale with just super healthy foods.
2:09
And that's good.
2:10
I mean, green leafies are great for you,
2:12
and kale is one of the best for you.
2:14
(food sizzling)
2:16
It's just packed with vitamins and minerals and nutrients
2:19
and everything that you need.
2:20
It makes a great salad.
2:22
I think when people say they don't like kale
2:25
maybe they haven't really tried it,
2:27
or what they don't like is the bitterness.
2:29
Cause kale's got a little bit of bitterness to it,
2:31
but I'm gonna cook, I'm gonna cook this kale
2:33
with the sausage,
2:34
and bitter is not even gonna be in the, in play here, okay.
2:37
You'll see.
2:38
(food sizzling)
2:39
We're gonna turn up our water a little bit
2:42
for our grits.
2:43
And you see how quickly that kale is beginning to...
2:46
You see that very tasty meal. - [Theresa] Oh my God.
2:47
- [Bobby] Cook down, like you said,
2:49
"Greens just cook down
2:50
to (food sizzling) just really nothing."
2:54
They're largely, you know, water.
2:58
(food sizzling)
2:59
(indistinct)
3:00
(dog knocking)
3:01
But look how beautiful it looks with the sausage.
3:03
- Okay so guys - Now that's-
3:04
- [Teresa] If you're listening,
3:05
if you're hearing the thumping - Yep.
3:06
- [Teresa] in the background.
3:07
- [Bobby] Yep.
3:08
- I'll tell you what that is. - That'll be the dogs
3:09
- I'll tell you what that is.
3:10
The dogs are in another room,
3:12
and there's some people working outside in the backyard.
3:14
They hear them,
3:15
and they would love to go visit and supervise.
3:19
So that is Coco, and she's knocking on the door over there,
3:21
but I'm not letting her in.
3:22
So if you hear that, that's what it is.
3:25
(food sizzling)
3:26
All right, our grits and kale look fantastic.
3:29
(food sizzling)
3:30
One more thing I'm gonna to add.
3:31
And that is two tablespoons of chives.
3:35
Right here, fresh chives.
3:36
(dog barking)
3:37
Yes, Coco.
3:38
(dog barking)
3:40
(food sizzling)
3:43
- [Teresa] We're used to this that your mom's house.
3:44
- [Bobby] You know, we love animals.
3:46
We all have lots of animals.
3:47
My mom got a bunch of dogs.
3:48
(dog barking)
3:49
My wife and I have two dogs.
3:52
We've got a little Havanese and a Shih Tzu.
3:55
And they're great companions,
4:00
and they're really sweet.
4:01
They're really yappy, so nobody ever sneaks up on us.
4:04
(food sizzling)
4:06
- [Teresa] That looks so good.
4:07
- [Bobby] Look how great that looks.
4:08
(food sizzling)
4:10
Look how great.
4:11
- [Teresa] How's our water doing for the grits?
4:12
- [Bobby] The water is just about to hit a boil
4:14
about here for the grits.
4:16
(dogs barking) (food sizzling)
4:17
This is a cup of grits.
4:18
Let me grab my whisk here.
4:19
(dog barking)
4:20
(food sizzling)
4:24
Now, when I cook grits,
4:25
I wait for that water to boil, okay,
4:26
which it's starting to do right now.
4:29
(Bobby clears throat)
4:31
I pour in my grits, whisk them in, okay.
4:35
And I immediately turn my water down to simmer.
4:38
I don't let it boil.
4:39
The water has already reached the boil.
4:41
So I turned it down to simmer,
4:43
which I'm gonna reach over here and do.
4:45
Excuse me, Teresa.
4:46
- [Teresa] That's fine.
4:47
- [Bobby] And the simmer, I'm just gonna whisk it
4:49
in real well.
4:49
(food sizzling)
4:52
And you'll, you know, not constantly but often,
4:56
you'll whisk your grits while you're cooking them.
4:58
Add I'm gonna add to that a little bit of butter, Teresa.
5:03
- [Teresa] Oh my goodness.
5:04
Your mom would be so proud.
5:05
(Bobby laughs) (food sizzling)
5:07
- Now you might need a...
5:08
(food sizzling)
5:10
Sorry, I'll be back.
5:11
(food sizzling)
5:16
You might be wondering about salt
5:18
because grits are a really blank palette.
5:20
(food sizzling)
5:22
But I salted the water.
5:26
And that might be a half tablespoon of butter.
5:29
Mom would be happy and sad at the same time.
5:32
- I was gonna say. - Cause I added the butter,
5:34
but not quite as much as she would like.
5:36
(food sizzling)
5:37
I'm just gonna whisk, whisk, whisk.
5:39
(food sizzling)
5:41
And now this is the part
5:42
where we kinda just wait a little bit.
5:45
So what we're going to do is (dog knocking)
5:47
come right back, okay.
5:48
So, y'all hang around, and I'll see you in just a minute.
5:51
- All right, so this is a super simple dish.
5:54
The grits are ready.
5:56
I'm gonna add to that
5:57
some sharp, shredded white cheddar cheese.
6:02
And I am just gonna whisk that in.
6:04
Ouu, look who's here.
6:06
Ollie.
6:08
- [Teresa] Hey Ollie.
6:10
- [Bobby] This is one of my daughters, Olivia.
6:12
- [Teresa] So she has a cold.
6:14
- [Bobby] Yeah, she does have cold.
6:15
(Olivia babbles) She doesn't feels so great.
6:16
Come here and help dad, I'm cooking.
6:19
(Bobby kissing Olivia) Hey beautiful.
6:21
Okay, I'm gonna turn the heat off.
6:23
(pot clanging)
6:24
This is where we gotta be super careful, right?
6:26
Cause you're a little, little girl, right?
6:28
And what does daddy tell you?
6:29
- [Olivia] What's that?
6:31
- Daddy tells you that you have to be very, very-
6:32
- What's that? - Careful.
6:33
Those are grits.
6:34
You have to be very careful.
6:36
And one day I'm going to teach you how to cook
6:38
but not quite yet, okay?
6:40
I just show you what I'm doing,
6:42
but we don't cook yet because we're just still little.
6:45
This is Olivia.
6:45
This is one of our triplets.
6:46
(Linton babbling)
6:48
- I hear another one.
6:49
- [Teresa] Bobby has his hands full.
6:51
- [Bobby] I hear another one.
6:51
There's my son.
6:53
- [Teresa] (gasps) Where's Linton?
6:55
- [Bobby] Mhm.
6:56
- [Theresa] Oow.
6:57
- [Bobby] Hey buddy, go dogs, man.
6:59
Hey bud. ( laughs)
7:01
- [Teresa] He says "I'm headed back out to ma"
7:03
- [Bobby] Yeah go back in the playroom.
7:04
And then Amelia is out there too.
7:06
Okay, so the cheese is in.
7:09
I've removed the grits from the heat..
7:11
(Olivia babbles)
7:12
Nice and thick, okay.
7:14
It looks beautiful.
7:15
(whisk clanks)
7:16
Now to that. (whisk clanking)
7:17
Now remember we're going to bake this dish off.
7:20
So to that, we're going to add two eggs, beaten and whisked.
7:25
Okay, and they're going to probably begin to set
7:27
in there right away.
7:28
But that's all right cause we're going to bake it anyway.
7:30
- Eggs. - Whisking in the eggs.
7:32
Two eggs, that's right babe.
7:33
- [Teresa] That's two eggs.
7:34
- [Bobby] Two eggs - [Teresa] Good job, Ollie.
7:35
- [Bobby] We love eggs don't we honey?
7:37
(whisk whisking)
7:38
Sure do.
7:39
- [Teresa] That look good.
7:39
- [Bobby] Now to that pot,
7:40
I'm going to add a little bit of pepper.
7:43
That's probably, maybe an eighth of a teaspoon.
7:45
A little bit of salt.
7:46
And that might be about half a teaspoon.
7:49
Okay. - And you got a little bit
7:50
of milk.
7:51
- [Bobby] Yeah, and I've got some milk to add
7:52
to that as well.
7:53
(whisk whisking)
7:54
And this is going to bake (dog barking) beautifully.
7:57
Eddie, Golly, we've got all kinds of company. (dog barking)
7:58
We've got stuff going on. (dog barking)
8:01
We got milk.
8:02
(dog barking)
8:07
I got dogs. I got kids.
8:09
I got people knocking on the door.
8:10
I got a pot on the stove.
8:12
I got somebody- - And we're gonna take
8:13
a break. - [Bobby] Filming me.
8:14
So I gotta take at least a short break.
8:17
- Okay, and we're back.
8:18
And I've got all sorts of help, all right.
8:20
So the grits are on the stove top. (Olivia babbling)
8:22
I added in a cup of shredded white cheddar cheese
8:25
(Olivia babbling) and also two eggs.
8:27
And a little salt and pepper and a half cup of milk
8:31
and whisked it all together.
8:32
Now, Claudia (Olivia babbling), if you would-
8:34
- Hi. - Very, very hot.
8:36
This my wife Claudia everybody. (Claudia laughs)
8:37
Very, very hot pot.
8:38
So be careful, okay.
8:39
And step over here to the...
8:41
You don't need the whisk.
8:41
We're done with that. - [Claudia] Oh, okay.
8:42
- [Bobby] Step over here
8:43
to the (pot clanging) casserole dish on the countertop.
8:46
This is a bake. (Olivia babbling)
8:46
- [Claudia] (indistinct)
8:48
- [Bobby] No, no, no, no, no, no, no, no, no.
8:50
- Oh. - Into the casserole dish.
8:51
- [Claudia] Okay.
8:52
- [Bobby] Very hot. Be careful.
8:53
Don't let it slop all over the place.
8:54
(grits pouring)
8:55
We're going to pour our grits into the casserole dish.
8:57
- [Claudia] All of it.
8:58
- [Bobby] Claudia stepped in as just help here at the end.
9:01
She was not familiar at all with this recipe (laughs).
9:03
- [Claudia] (chuckles) Clearly.
9:04
- [Teresa] But she's making
9:05
a very good sous-chef. - She's just-
9:07
- Sous-chef. - My guest sous-chef.
9:08
Careful with the hot pot.
9:09
(pot clanging) Okay, now we're going to top our grits.
9:11
Claud, you're gonna love this.
9:13
That is turkey sausage. - Mhm.
9:15
- And kale. - Mhm.
9:16
- And a little bit of chives.
9:18
- [Bobby] So just kind of spread it out evenly if you can.
9:21
Claud, you want to set the thongs maybe too?
9:24
Might help you out. (skillet thumps on platter)
9:25
You want to (Claudia chuckles) kind of spread that
9:30
as evenly on top as you can.
9:32
- Don't you love picky chefs? - Yes sir.
9:34
- [Bobby] Make it look great.
9:34
- [Teresa] Don't you love picky chefs?
9:36
- [Claudia] Oh, yeah.
9:37
- [Teresa] You can make the face, Claudia, again.
9:38
- [Bobby] Our oven is preheating at 350 degrees.
9:42
We're going to top our grits.
9:44
- [Claudia] Oh, this goes to the oven?
9:45
- [Bobby] Yeah, and we're going to bake that in the oven
9:47
for about 35 or 40 minutes until it set-
9:49
- Oh. - And looks great.
9:50
- [Claudia] So it's a casserole?
9:52
- [Bobby] It is, yeah. - [Teresa] Kind of, yeah.
9:53
- [Bobby] It's a grits and turkey sausage and kale-
9:55
- Oh, I think Ollie- - Casserole.
9:57
- [Teresa] And the nice thing about that is it'll,
9:59
the eggs are gonna to have it set really nicely.
10:02
- [Bobby] The eggs are going to set so it should be nice
10:03
and thick.
10:04
You want me to help you?
10:05
- [Claudia] Well, I was feeding Ollie.
10:06
She wanted to try.
10:07
- [Bobby] You can, my hands are clean.
10:09
- [Claudia] This looks like Christmas. (speaking Spanish)
10:10
- [Bobby] It looks like
10:11
a very nice fall dish, right? - Ollie likes the kale.
10:15
- [Teresa] We're celebrating Thanksgiving right now
10:17
on our video.
10:18
So I felt like sometimes they need a little healthier option
10:23
than just what we cook with the butter-
10:26
- [Bobby] Well this, this dish is a nice combination
10:28
of healthy and hearty,
10:30
which is just my favorite- - Yes.
10:32
- At this time of year.
10:33
- [Claudia] Ollie really likes the kale.
10:35
- [Bobby] We have, we've gotten,
10:37
we've been really lucky with our kids.
10:40
My wife is a, is a triathlete, marathoner.
10:46
That's good enough, Claud.
10:47
- [Claudia] No, she wants some.
10:48
- [Bobby] Okay, that's fine. - It's for Ollie.
10:49
- But I don't wanna scrape the,
10:49
I don't wanna scrape the pan with those thongs.
10:50
- [Teresa] Look at that good eater.
10:52
- [Bobby] And we eat lots of fresh vegetables
10:54
and stuff around here.
10:55
Look, people who say they don't like kale,
10:57
She's three and she's woofing that kale down.
11:00
It's good, and it's good for you.
11:01
So eat your kale. - (speaking Spanish)
11:02
All right, Claud, the oven is hot.
11:04
If you would please.
11:05
Casserole dish.
11:08
- Oh,(chuckles) - Is that hot?
11:09
- [Claudia] Did you see that? No.
11:10
- [Bobby] Be careful, careful don't slop it.
11:13
Casserole dish into the oven.
11:14
Middle rack please.
11:17
- [Claudia] Does it have cheese?
11:18
- It does in the grits. - Oh yeah, some white cheddar.
11:21
- [Bobby] And if you wanted to , you could top it
11:22
with a little bit more cheese - That's what I was thinking.
11:24
Yeah, put cheese on top. - You could top it
11:25
with a little bit more cheese.
11:26
Get it all the way in there, okay.
11:29
All right - [Teresa] We'll be back.
11:30
- [Bobby] Shut the oven for me please,
11:31
and we will be back in 35 minutes.
11:35
All right, everybody it's been about 35 minutes,
11:37
so let's check on our baked grits and greens dish.
11:40
It smells (oven beeping) so good.
11:42
- [Teresa] Ha.
11:43
Oh boy, woo, look at that.
11:45
Look at that.
11:47
- [Teresa] Oh, that looks fabulous.
11:49
- [Bobby] Ah, it smells so good too.
11:51
What a great fall dish.
11:55
It's hearty, but it's healthy.
11:57
It's Beautiful.
11:59
And I think that the whole family's going to like it.
12:02
In fact, this is what my kids are gonna have
12:04
for lunch today.
12:06
And it can be found in this issue
12:09
of "cooking with Paula Deen" magazine.
12:11
It's the Christmas issue, and-
12:13
- [Teresa] On the stands now.
12:14
- It's on stands now,
12:16
and it is in the Bobby lightens it up section,
12:21
which should be easier to find.
12:23
You should open this and just go straight to that section,
12:26
in my opinion.
12:27
(Teresa laughs)
12:28
- [Theresa] And there it is!
12:29
- [Bobby] Bobby lightens it up, going green.
12:30
Look. Okay, let's compare.
12:34
- [Teresa] Oh, I'm thinking it looks good.
12:35
- [Bobby] It looks very, very good.
12:37
Okay, so that's that.
12:39
Super easy.
12:42
Going green, baked grits and greens dish.
12:45
Turned out perfectly.
12:46
I think you'll love it.
