we're going to celebrate my deep fryer

with collard green wontons. And how does

mustard sauce sound, y'all? Then it's

the best crab hush puppies in the whole

entire South. And just wait till y'all

bite into my deep fried cheesecake. So

batter up y'all because today's recipes

are going to fry me to the moon. Well,

the first dish that I'm going to start

off making is a recipe that we came up

with for mine and Michael's wedding.

wanttons that have been stuffed with

collard greens and cream cheese. Now to

cook our collard greens, I'm going to

start by putting a couple of ham hawks

into my boiling water. And now I'm

fixing to add my seasonings. I'm going

to add a teaspoon of seasoning salt, a

teaspoon of our house seasoning. My

house seasoning is so simple. A mixture

of salt, pepper, and just garlic powder.

Now I'm going to add probably a table

tablespoon or two of hot sauce. And this

is going to give our collard greens a

nice little bite.

Now I'm going to just put a little olive

oil because I'll tell you the secret to

good greens is that they have to have

that fat and that seasoning on them. I

had filled my pot up with water, but

while I was getting everything else

ready, it kind of boiled down a little

bit. So, I think I'm going to add just a

wee little bit more water. You know, not

too much. You don't want your collard

greens swimming.

But you certainly want to have enough

water that that ham hawk can cook in

there. Now, the ham hawk is smoked, so

it's fully cooked. And let's move on to

our collarded green. In the center of

each collard leaf is the stem.

So, you want to get rid of that stem.

And you just do that by just stripping

that leaf away from the vein.

And all we're going to do

is just stack up our collarded greens.

Fold them over.

And we're just going to roll those up.

And we're just going to slice those

rolls of collards into strips. And this

is kind of what they're going to look

Now, we're just going to take our

collards,

throw them in the pot, and

you know, I can't hardly cook anything

without a little butter. That butter is

going to give it a wonderful flavor. So,

I'm going to cover those up and I'm

going to let that cook for about 45

minutes to an hour. And we're just going

to kind of turn those down and kind of

let them simmer for that long. Well,

Oh, and that ham hop. Now, what I'm

going to do is just come in here and

lift out my collards. and let them

drain.

So, there are collards

and I want to take

a little bit

I want to try to get a little bit of

off of my ham hawk.

And I have some cream cheese that I've

really, the amount of collard greens

Now, I'm just using just like wonton

shells. You usually find these in the

produce section at your grocery store.

And they'll come in different sizes. Uh

you can get the bigger squares or you

can get this size. Now, I'm just going

to take these

and rub the edges with a little water

cuz we don't want these to come loose on

So, we're just going to put

a little dab of the collard greens. And

collard greens in the cooler, so I just

dropped them down into the deep fryer

and only cook them for just a little

bit. Not long at all.

Oh, and those collards smell so good

frying. And I kind of keep them stirred

using my tongs.

All right, now we're going to drain

And I'm going to take just a little

seasoning salt and sprinkle on them.

Toss them around. And you can hear them

just mixed up a quick dipping sauce

halibet. It's a beautiful white mild
