Well, Adam's gonna do a few,

just a few wonderful things for us today,

- So I have in here a little easy

hot chocolate mix to make at home.

- And so what I did was, I just,

I opened up my pantry, and I said,

"What can we do with the ingredients

we normally have in our pantry?"

- Right. - So I raided yours.

- Good. - And this is kind of

what I came up with.

- I usually have all this stuff. - Yes.

- Which is cocoa...

- Yes, and we have cocoa powder here,

and then we have some cornstarch.

- I thought that looked like cornstarch.

Now, why do we want cornstarch for?

- It's gonna thicken just a little bit

to make it nice and rich and creamy.

- Okay, okay.

- And then I have some sugar here to sweeten.

- Some salt, and then our chocolate chips.

- So the recipe,

- And so I have some milk going, and I have it to where it is--

- And, now, what kind of milk is that?

- Absolutely. So now we're gonna get into the dry rack,

and so we have Georgia pecans right here

and then we have some spices.

All spice, we have ginger, cardamom, cinnamon,

and then we have powdered milk right here,

and some sugar, and this vanilla extract.

- Okay. And here you've got cloves.

- So we're not actually gonna make this today, but, again,

And what did you do to get this?

- Yeah, so we pan roasted these Georgia pecans,

and we candied them with some sugar.

- Okay, sugar, and did you put any butter in the pan?

- No butter actually.

Just the sugar, a little bit of water, and we stirred it,

and then we threw in those pecans,

and then covered it with these spices.

- Made like a simple syrup so it would stick

- Exactly.

Yeah, and then we have--so what these spices all kind of created

to get to this is a chai spice.

- Uh-huh, it's delicious. - Thanks.

- Delicious. - Yeah, it's really nice,

something to put out at parties

or I even have, like, I go to Michael's

every now and then, and so for little favors--

- You can find everything at that store, can't you?

Now, we're gonna get a little bit sciencey,

So here we have, I put on here--

- So this is simply- what we have back here,

Paula is just a can of sweetened condensed milk

and submerged in water at a low temperature.

- Right. - If should just be simmering

or a little bit under, and I've done this.

I've been here for four hours already. I'm exhausted.

But, so all it is is sweetened condensed milk

that after that four hours--

- Do you need a rag, honey? Is it too hot?

- No, we'll be okay.

So how this kind of takes its transformation

is sweetened condensed milk,

it has a lot of sugar in it,

and so when we submerge it under water

at a low temperature for a long period of time,

what happens is, those sugars caramelize inside

of the can slowly,

and that's where we see kind of how it increases in color,

and it's just building more flavor and caramel.

- This is, this is beautiful,

and I appreciate you showing me that,

but am I just supposed to sit here and stick my finger in it?

- Well, absolutely not.

So I thought what we could do is have some ice cream,

and pour that right over there.

- So we're just gonna put this over ice cream like we would

if it was a chocolate syrup or...

Yeah, and it's nice and warm and gooey too,

so this'll be perfect, so let me--

my friend that's the chocolatier here in town,

and he has showed us a couple of things that's so easy

to do here at the house.

- All right, so here's the main course.

So what we're gonna start out doing

is I went to the grocery store

and got a 60% bittersweet chocolate.

- Okay. - And so we're gonna melt

this bad boy

down over a double boiler.

- Okay, and how do you feel about the microwave?

- You know, I don't recommend it

because it is very easy to burn.

- You know, I've never had any luck,

I've never had any luck melting chocolate in the microwave.

It always got gunky.

I really messed up chocolate before, y'all,

but this is the way I recommend,

and it's the way Adam recommends.

- I do, yes. It's very much the safest way to go.

You never have to worry, so,

but you always want to be stirring it

because the bowl is still getting hot.

- Sure, yeah, I would love that.

You'll notice that I reserved a quarter of the amount.

I got the traditional bag of chocolate,

and there's ten ounces in here.

I just reserved a quarter of it, and I'm gonna show you

after we pull that off, after it's melted,

then I'm gonna add that to it to cool down the chocolate.

- And that's gonna kind of temper it, if you will.

- Well, while I'm stirring this,

and you don't have anything to do this second,

tell us as quickly as you can everything

that you want to know about chocolate.

- Absolutely. Well, I know that sometimes it's intimidating...

- When you're trying to make candy to go to the grocery store

and trying to find the perfect type of chocolate,

and so I kind of did some scouting around

to some of the grocery stores,

and, you know, there are great chocolate companies here

making chocolate in America,

more so than there were ten years ago even.

So there are some great companies like Ghirardelli

that I use often.

Scharffenberger, Valrhona, Ouray.

- I'm not familiar with those.

This is the one I see in the grocery stores.

- Yeah, and what you're really looking for

when you're trying to do chocolate candy making is,

your key is that you always want to look

in the back on the ingredient list,

and you're gonna notice it's gonna say,

from far away...

- Do I need to get my cheaters for this?

- It's gonna say cocoa butter,

and so we want to see that as an ingredient.

- Cocoa butter, is that important?

- It is very important.

- Cocoa butter is important. - So it's an ingredient that,

as this is melting,

you'll start to see that it'll flow really nicely.

- Yeah.

- It'll run almost and fall right off your spatula,

and that's the kind of chocolate we want to be using.

- So what I'm gonna do, I'm gonna bring this over here,

and I was gonna have a little rag

because water's kind of

our worst enemy when dealing with chocolate.

- Yes, yes. - And so I'm just gonna

add this other--

- Oh, oh, oh, you're gonna add that chocolate.

I thought you were gonna add the white.

- No, because what I want to do is I want to cool this down now.

- Are we gonna melt the white?

- Okay, well, I need to bring you a pot back.

- So this is the first layer. And I'm stirring it

and this is what we call tempering.

- Right, just like we would an egg if we were making custards.

And so, once this is all melted, then we'll be good.

So this is a special type of bark.

It's called my exploding bark.

I shot a show down in Costa Rica a few years back.

You know, they were talking about that cacao.

- You are. So that refers to-- cacao refers to the bean

before it's been hulled and fermented.

The percentage really kind of just really represents

the amount of sweetness.

So if it's 60% cacao,

that's the chocolate part, it's unsweetened.

So if it's 60% of that, then 40% is remaining,

and that is usually sugar.

Some other options at the store, we actually sell at the store

for anybody who's diabetic or has any issues,

I went to Hershey, Pennsylvania

one time to do a demo or something,

and I'm telling you what, when I left they had me a basket,

a gift basket this big.

They had me a Hershey bar like this big.

- I grew up in Pennsylvania, so I'd go there every year

and see the factory.

- Oh, gosh, I just loved my trip there.

- Yeah, but now, I mean, over the years,

Hershey, when he started,

there were no manufacturers making chocolate.

Now we have Scharffenberger, like I was saying,

we have Ghirardelli, we have all these manufacturers

producing European-style chocolate.

All right, so I think we're all melted,

so we're just gonna need to grab

that dark chocolate with the Pop Rocks.

- No, it looks good. It's nice and melted.

- I mean, you touch it to be sure, but I felt like it was--

Now, I'm gonna reserve a little bit of this,

And all we have to do is just let this harden.
