- Well, hey y'all! I'm Jamie Deen.
0:02
Welcome back to Mama's Kitchen.
0:03
You know, I'm gonna bring you some easy, delicious recipes
0:06
that you can cook for your family.
0:08
And today is one of the top recipes in my family's.
0:12
This is what they like, chicken and rice.
0:15
Chicken, rice and broccoli casserole.
0:17
I went ahead and got started a little bit
0:19
this morning, y'all.
0:20
I've got some butter in here.
0:21
I've got a red onion and I've got some garlic
0:24
and I've cooked this down.
0:25
I want to get this translucent
0:27
and I've probably about five minutes cooking in there.
0:31
Now we're just gonna do a traditional roux here.
0:33
So I've got our butter, our onions, and our garlic,
0:36
and now I'm gonna gradually (metal scrapping)
0:38
start stirring in some of this flour,
0:41
which is gonna be a thickening agent for us.
0:44
(metal scraping)
0:45
And this is the start to making a delicious casserole.
0:51
This will thicken up our casserole for us
0:53
and also give us a really toasted flour butter base
0:58
to our recipe, which we love, love, love.
1:01
I'm gonna get this really, you gotta be careful in here.
1:04
You see how quick this has clumped up on us.
1:07
So I want this to brown, not too long.
1:09
I'm just gonna give it a couple of minutes.
1:12
Now to this, I'm gonna add, we have chicken stock.
1:16
And Theresa said it best,
1:17
there's really nothing to this recipe
1:19
except for the prep part.
1:21
As you can see, we've got a lot
1:22
of different parts here today.
1:23
And if your chicken,
1:24
if you want to use a pulled rotisserie chicken,
1:26
that will take a lot of the heavy lifting off of your plate.
1:30
(metal scraping)
1:32
All right, I'm happy with this.
1:34
It doesn't look like much right now, but we're gonna add,
1:39
we're gonna add this slowly to,
1:41
'cause I don't want to break this. (metal scraping)
1:51
This will cook for just another couple of minutes.
1:54
(metal scraping)
1:56
Oh yeah. (metal scraping)
2:02
And since I've seen y'all last,
2:05
I think our youngest child has celebrated a birthday.
2:08
Davis is six years old now.
2:11
Jack's still off at school working hard.
2:14
We miss him so bad.
2:17
He loves it up there.
2:19
He says he loves it.
2:21
He's working very hard
2:22
and it has been a brutal winter up there.
2:25
I saw this is the seventh highest snowfall total
2:29
that Boston has ever had in their history.
2:31
And Boston's got some history.
2:34
So my poor little Georgia guy's up there freezing this year.
2:40
He's making good grades
2:42
and he is learning a lot about himself,
2:44
exactly what college is supposed to be.
2:47
See, this is a little loose here, y'all,
2:49
but ooh, so full of flavor.
2:51
I'm gonna cook this for just a few minutes.
2:53
Y'all stick around, we're gonna take a break
2:55
and when we come back, we'll put it all together.
2:57
Get hungry, chicken and rice casserole today y'all.
3:01
Woo!
3:02
All right y'all, look in here.
3:04
That is perfect.
3:06
So this is our base. We've got it all built up.
3:09
And now to this, we are going to add
3:13
just a little bit of flavor.
3:15
Eeh!
3:17
We're gonna whip in our cream cheese,
3:22
because of course, cream cheese.
3:26
Hm-hm, I'm gonna get this incorporated a little bit
3:30
before I start dumping all the rest of the stuff in here.
3:34
Whoa! Doesn't that look good?
3:39
When I was in college, chicken and rice
3:42
down the street from where we lived was one of the meals
3:45
that we could afford regular.
3:48
And ever since then, I have really loved chicken and rice
3:51
with a little broccoli in it.
3:53
Hmm hmm!
3:54
All right, that's going good. (spatula clacking)
3:56
Now we've got our mustard.
4:00
(spatula clacking)
4:01
Give it a little bit of bite and some good flavor.
4:03
We're going to get our salt in here.
4:08
We've got some lemon zest
4:14
and we've got some black pepper.
4:19
And now it's time for some thyme.
4:22
Theresa's got me some thyme to put together here.
4:24
- [Theresa] You might pop that up a little bit more.
4:26
- Oh, I've already dumped it all in, Theresa.
4:28
You had it. You had it.
4:30
You had it chopped perfectly.
4:32
Now I'm gonna remove this from the heat.
4:38
And this is our base.
4:40
So our mustard, our thyme, salt, pepper,
4:44
onions, garlic, cream cheese and butter.
4:49
Mm mm mm mm! (spatula clacking)
4:54
Now what this needs is some heft.
4:58
So, Theresa has pulled the chicken for me.
5:00
Hey peeps, you're just in time for chicken and rice.
5:04
We're gonna fold in our chicken
5:07
and our rice that we pre-prepared.
5:10
I'm gonna get these two things in first.
5:13
I thought I grabbed a big enough pot.
5:16
You hungry, peeps?
5:19
- [Peeps] Not really but-
5:20
- It's always time to eat.
5:22
- [Peeps] Always gonna eat something.
5:23
- Well, you got about 30 minutes.
5:25
This is going to go into the oven.
5:27
- [Peeps] I'll be back.
5:28
(Jamie chuckles)
5:31
We're afraid of that, weren't you?
5:32
(Jamie chuckles)
5:34
- Somebody's gotta eat all this stuff-
5:36
- [Theresa] That you weren't gonna come back.
5:39
- Yeah, this pot turned out perfect of that.
5:42
Look how beautiful this is.
5:46
The only thing we're missing is a little bit of color
5:51
and that's when we're gonna get our broccoli in here.
5:54
Um um!
5:57
This is just a straight raw broccoli, too
5:58
because this is going into the oven
6:00
so it doesn't need to be cooked anymore.
6:02
Or it would just turn out to be goopy glop
6:05
if we cooked it twice.
6:10
Ooh, wee!
6:12
Theresa, this looks delicious.
6:14
- [Theresa] I know. I'm excited.
6:17
- All right.
6:18
Now I've got our pan here that we've sprayed
6:22
so it doesn't stick.
6:26
And let's see how we cook in here.
6:31
Uh-oh! Made a mess on the range.
6:38
Great, that fits every bit of this.
6:42
Oh wee, that looks delicious.
6:46
Okay, y'all.
6:47
And now we're gonna stick this in the oven at 350 for,
6:50
I don't know how long.
6:51
I'd say probably 20 minutes maybe.
6:55
What's that paper say T?
6:58
- [Theresa] Don't forget to melt your crackers.
7:01
- I won't forget. That goes on after we cook it.
7:06
Right? - [Theresa] Well.
7:07
- Okay. It's 25 to 30.
7:09
It says in a small bowl, stir together crackers
7:11
and melted butter and sprinkle it onto chicken mixture.
7:13
So here we go.
7:14
- [Theresa] Where's your poppy seeds? Did you not use them?
7:16
- Oh, I forgot to put my poppy seeds in there too.
7:19
- Let me help you.
7:22
This is the first day a week cooking for me y'all.
7:25
- It takes us a little while to get in the group.
7:28
- And since it's called poppy seed chicken,
7:30
perhaps we should get our poppy seeds in here.
7:34
Our snooping mom said poppy seed.
7:35
And I thought well maybe she was just toughing,
7:38
it was poppy seed. (laughs)
7:42
Well, this is how it goes sometimes y'all.
7:45
If you don't put your poppy seeds in till the end,
7:49
doesn't matter, nobody's gonna know.
7:51
I can mix it right in here.
7:57
And some of y'all might wanna leave poppy seeds out.
8:01
Because I know that poppy seeds can mess up a drug test too.
8:06
Isn't that funny?
8:08
Did you know that
8:08
that if you eat too many poppy seed bagels,
8:12
your drug tests could show up you were using poppies,
8:15
which I think is some kind of drug?
8:20
- [Theresa] It is.
8:21
- That's what I thought.
8:26
Okay, now I'm gonna put our crackers down in here.
8:29
This is not the way that I should do this,
8:31
but hey, we've already put our poppy seeds in
8:35
after we made it.
8:36
So, we're gonna wing this last part.
8:40
Got our butter here.
8:41
I'm gonna sprinkle some crackers over the top.
8:52
Now we'll get our butter in here.
9:00
And nobody knows except for me and y'all.
9:06
Yeah, we went a little sideways on this.
9:09
Look how perfect that turned out.
9:11
I bet nobody eating it will complain.
9:14
Y'all don't tell peeps that I did all that as backwards.
9:17
Going in the oven, 350 for 25 minutes. Stick around.
9:21
Woo wee y'all!
9:22
Look fresh and hot out of the oven. Doesn't this look good?
9:26
I'm gonna pull a little bite out here
9:28
'cause I think Mama Mike might have this for dinner later.
9:31
Let me see if I can't not mess that up too much.
9:36
My mouth is watering.
9:39
Let's see y'all.
9:40
Hm, just like in college,
9:42
except I'm fatter and older
9:45
and I can afford to eat somewhere else
9:47
besides the cheap chicken and rice place.
9:49
Not much nicer than that.
9:53
Hmm!
9:58
Delicious. Oh, it's so good.
10:03
Hmm-hmm!
10:07
The last time I was here
10:09
I made a chicken and collard green bake.
10:12
I went home that night and made it for dinner.
10:14
Tonight, this might be my dinner.
10:16
It's delicious y'all. It just tastes like home.
10:20
It's good old southern cooking and I love it.
10:22
And I hope y'all do too.
10:24
Thanks for tuning in. I'm Jamie Deen.
10:25
See y'all round the kitchen!
