- Today's show is all about tart things.
0:10
Give mama a big ol' kiss.
0:12
- You look like you've been eating lemons.
0:19
Bobby is gonna be showing me y'all
0:21
a delicious grilled salmon with key lime butter.
0:25
All right son, what are you gonna be making?
0:28
- Well, I'm gonna make salmon
0:29
with, uh, key lime butter
0:31
and I'm only using the butter because I'm cooking with you.
0:37
That, that is got a little bit of bite to it like yours.
0:40
I'm gonna go ahead and cut for key limes
0:42
because I'm gonna need about
0:43
two tablespoons of key lime juice for this.
0:46
And I'm gonna need about five tablespoons of butter,
0:49
which is equivalent to about half stick a little bit more.
0:52
- So I'm gonna go ahead and squeeze these key limes in here
0:54
with this half stick butter and get it melting.
0:59
So how is your butter coming son?
1:01
- It's coming well, it's melting.
1:03
- And I moved on over to my fish here.
1:05
- I've got four, six ounce fillets of salmon.
1:07
All I'm gonna do is very simply just salt
1:08
and pepper them lightly.
1:12
- [Bobby] All right, I've added a little pan coat
1:13
into my grill here to make sure my fish doesn't stick.
1:18
It's got a little dry seasoning on it
1:20
and I've got my key lime butter melting over here.
1:24
And I'm just gonna go ahead and just brush,
1:26
brush this fish with it real lightly while it's cooking.
1:29
Rule of thumb with fish is about
1:31
three minutes per side, per inch of thickness.
1:34
So if I've got a half inch thick piece of salmon here,
1:37
I'm gonna cook it maybe,
1:38
two, two and a half minutes per side.
1:40
I just wanna make sure that I don't overcook it
1:41
in fact a lot of people like their fish
1:43
a little on the undercooked side.
1:45
- Yeah, so especially tuna. - Right.
1:46
- And a lot of people don't like
1:48
their salmon completely cooked either.
1:52
- And, ain't that beautiful?
1:55
- [Bobby] All right, my fish is getting pretty close here.
1:57
- [Mom] That looks really, really good.
2:07
Y'all don't go anywhere,
2:07
'cause Bobby and I are in here in the kitchen today
2:12
- All right. - And we'll plate this.
2:13
When we come back we're gonna taste it.
2:15
You get ready to pucker up out there.
2:22
- Okie dokie, Bobby, it looks great.
2:25
We're in here plating up this wonderful salmon
2:30
and we've got our yummy asparagus.
2:32
- Uh-huh, that's a good old white rice.
2:33
- And a citrus butter.
2:36
Ooh, doesn't that look yummy?
2:41
to be able to get done in just like
2:43
just a few minutes y'all.
2:45
- And it, it's just so easy.
2:48
There's nothing to it.
2:49
Not very many ingredients,
2:50
I mean this is really the way that I like to cook.
2:57
- I told you, I know,
2:59
that's why it's my favorite thing to eat.
3:03
- Bobby, you have cooked that salmon like perfectly
3:08
and the lemon, ain't that good on it?
3:10
It's kind of. - The key lime.
3:11
- Just a little bit of tart.
3:12
- I love a little citrus on my fish.
3:14
No matter how I'm cooking it,
3:15
I love a little citrus on my fish, that is great.
3:17
- [Mom] It's out of this world.
3:18
- [Bobby] That's great.
3:23
