- Hey, y'all, come on in and get in the kitchen.
0:03
Now, I don't know about where y'all live,
0:06
but here in Savannah, the heat is rearing its ugly head.
0:13
And you talk about not wantin' to cut
0:15
on an oven or a burner.
0:18
How bout it Eddie?
0:19
Now, Eddie comes from New Hampshire
0:21
and he came in the other day and he said,
0:23
mama said it's snowing up a storm at her house.
0:29
I can't believe it and it's 80 degrees here or 85.
0:33
So anyway, the hotter it gets,
0:36
the less I want to cut on any appliances
0:38
that's gon' bring added heat to my house.
0:43
So, I'm going to share with y'all a recipe
0:48
that's like very, very similar
0:51
to how we do it at Paula Deen's family kitchen
0:55
and the lady and sons and creek house.
0:59
So, I'm gonna start.
1:01
Now, it really depends on how much chicken you're cooking.
1:06
I'm only cooking two, four, five pieces,
1:09
just enough to show y'all.
1:11
So, I'm just goin' use one egg
1:16
and I guess about a half a cup of hot sauce.
1:25
And...
1:31
I add just a little squirt of water.
1:33
Now, the recipe doesn't call for water
1:35
but I just like to put little dab of water in there.
1:39
(sauce mixing)
1:46
Okay. So now we're going to season our chicken
1:52
with our house seasoning.
1:56
I see Eddie put a little pack of something in
2:00
to keep it fresh. Right Eddie?
2:02
- [Eddie] Yes. I went and got--
2:04
- [Paula] 'Cause this is, this is our homemade.
2:08
All right. So we want to turn those over.
2:11
So when you do make it
2:15
from scratch at home,
2:19
this is a back piece and I do love a back.
2:24
See, that's the last part
2:25
of that goes over the fence right there, Eddie.
2:27
You see there,
2:28
(Paula laughs)
2:30
the last part over the fence.
2:33
(water running)
2:36
All right. I'm gonna wash my hands
2:38
'cause I don't wanna put my hands back in my salt boxes.
2:45
Not clean.
2:47
You know, I have to do it with my hands, Eddie.
2:49
- [Eddie] You do.
2:50
- Otherwise, I would, I would get it wrong.
2:59
Okay. So now we are going to,
3:05
I can't get it all in that bowl,
3:07
but I can get it all in this bowl.
3:11
So we're gon' put our chicken over here.
3:15
And I'm gon' give it one more little squirt
3:17
for good measure.
3:21
And then I'm gonna pour my marinade over it.
3:26
Now, at the restaurant, we let this marinate
3:33
for a little while.
3:34
We just stick it in our cooler,
3:37
you know, and give it some tosses.
3:43
So, if you have that kind of time, that would be nice.
3:48
To just let it soak up
3:51
some of that wonderful flavor from my hot sauce.
3:57
Thank you Eddie.
3:58
You pulled out the soap, hand soap dish for me didn't you?
4:02
Alrighty.
4:06
So now, I'm gon' have to move our flour
4:09
to a bigger bowl so I'll have room to toss it.
4:14
And I think this one will work fine.
4:18
So, I'm using,
4:23
maybe a cup and a half of flour
4:26
for just five pieces of chicken.
4:29
So, just depends on how much chicken you're cooking.
4:33
You know, if you're cooking,
4:36
Michael said that his mother, for he and Hank,
4:42
and his father and his mother and his granddaddy,
4:46
his mother fried either two or three chickens.
4:50
I can't imagine frying two or three chickens,
4:54
for a five member family.
4:56
And I don't even know if Nick was there yet.
4:59
'Cause Nick probably wasn't even born yet.
5:02
But anyway,
5:07
so just increase your, your marinade
5:12
to match how much chicken you're frying.
5:17
You know what I need to cut this breast in two.
5:22
I did not think that of that y'all.
5:26
But I want it to match the other pieces.
5:31
So, let me find a good knife.
5:39
A sharp knife.
5:41
So Eddie found my knife for me.
5:44
So, I'm just gonna
5:46
(chicken slicing)
5:50
cut through that breast just like that.
5:56
And then go right back in the flour again.
6:04
Yeah, now that'll stand a better chance
6:09
of everything cooking even.
6:11
And the times I'm going to give y'all on the air fryer,
6:18
because your chicken could be bigger than mine or smaller.
6:24
I'm going to give you the cooking time
6:29
for the size chicken that I'm cooking today.
6:44
Come on, get over that fence.
6:46
(Paula laughs)
6:48
I love a back.
6:52
I love, love, love it.
7:02
But this is my favorite piece and that's the thigh.
7:08
I just love the dark-meated chicken,
7:11
because that's where all the juices are.
7:15
A breast can have a tendency to get dried out.
7:21
And I just like the moisture.
7:26
That one needs a little bit more flour.
7:33
I was about to cheat him.
7:36
Okay.
7:39
So, we are going to
7:44
put this in our air fryer
7:46
and I'm using the, my 9.5 air fryer, y'all.
7:51
It is, it's the largest one that I make
7:56
and it may be the largest one on the market.
7:59
You think Eddie? Theresa, do y'all know?
8:02
- [Eddie] You know, actually, I think there,
8:03
I think we have one size up. We have a 10.
8:06
- [Theresa] Oh yea, we have a 10.
8:07
- Oh, we have a 10 now?
8:09
Wow, we started y'all, when I started producing air fryers,
8:14
five, maybe, was it five years ago, Eddie?
8:17
- [Eddie] Yes. Well, it was maybe 6.
8:20
It was right before I came.
8:22
- Oh, there were 3.5,
8:30
3.5 air fryers.
8:32
I mean, I can't believe it.
8:33
They were probably not this big and the baskets were round.
8:40
So, you lost a lotta, a lotta space.
8:45
So, we've come a long way, baby.
8:48
So, I'm setting this one at 350.
8:55
And I'm gon' spray our chicken.
9:00
Because this is what makes it get nice crispy.
9:04
(oil sprays)
9:18
Put that, that side down
9:23
because I'm going to spray it again
9:30
on the other side.
9:39
Yes. Looks good doesn't it, Eddie?
9:42
(Eddie agrees)
9:46
Now you can use any kinda spray you want to.
9:51
I've got olive oil up there and I've got,
9:53
I may even have some canola oil, I don't know.
9:56
But I just, they hooked me with the butter flavored.
10:04
So, I'm going to cook this for 15,
10:09
15 minutes.
10:10
(air fryer whirring)
10:14
And you might want to double check me.
10:17
I think I've got it set on 15.
10:20
And we're going to come back
10:22
and we probably will need to spray it one more time.
10:28
So, see ya in 15.
10:33
Okay. Our 15 minutes is up and look at that chicken, y'all.
10:40
Look how good that looks.
10:43
You know, so you say you can't have fried chicken anymore.
10:48
You know, this is hard to beat.
10:53
Look at that.
10:54
It's getting so nice and crisp,
10:57
and that's because we sprayed it.
11:01
And there's no calories or fat in that spray.
11:05
So you can use it guilt free.
11:11
All right.
11:12
So, we just gon' make sure that gets sprayed one more time.
11:18
Now, we gonna put it back in but 10 minutes.
11:26
Okay, I can see the 10.
11:30
And then, at the end of 10 minutes,
11:34
we're gonna turn the temperature up to 400
11:37
and finish cooking it.
11:39
Our fried chicken is fixing to bing.
11:44
Now, if you'll remember, I cooked it for 15 minutes,
11:48
I came in, sprayed it, turned it, sprayed it again.
11:54
The spray is really the trick
11:56
that's gonna get you where you want to be
11:58
with your fried chicken cooked in the air fryer.
12:01
I cooked it for 10 more minutes.
12:07
And then I turned it up to 400 degrees
12:11
for the last seven minutes.
12:13
And I probably sprayed this three or four times.
12:18
So, let's see what we got.
12:21
(chicken sizzling)
12:23
Hear that popping.
12:25
Look at that chicken.
12:30
Look at that chicken.
12:32
Would you, Eddie?
12:35
Last piece over the fence.
12:37
- [Eddie] Looks good.
12:38
I mean, it really looks like deep fried--
12:39
- [Paula] It looks like deep fried chicken.
12:43
It truly is,
12:46
an incredible piece of equipment.
12:50
This air fryer, just when you thought,
12:54
you couldn't have fried chicken ever again.
13:00
You check out our air fryer.
13:03
And you can tell your doctor,
13:07
that doc, I think I can have fried chicken again,
13:13
as long as I fry it in the air fryer.
13:15
And see what your doctor says.
13:20
And if he doesn't believe you,
13:23
the next time you go to the doctor,
13:27
take him a piece of your fried chicken and see what he says.
13:32
I mean, that, if I didn't know better,
13:36
I would think that I had dropped that in grease, Eddie.
13:41
Look at that beautiful fried chicken.
13:45
It looks like my mother's,
13:47
looks like my mother's fried chicken.
13:50
- [Eddie] And you said she did like a, kind of like a steam?
13:54
- No, the grandma did.
13:54
- [Eddie] Oh, your grandmother did? Okay.
13:57
(Paula chewing)
14:05
- You gonna be so happy.
14:10
And I know Claudia,
14:15
she cooks very healthy for her family.
14:21
And, that is so good.
14:26
I've never seen her use regular flour,
14:29
but I know she uses an almond flour.
14:32
Right, Eddie?
14:33
- [Eddie] Yeah.
14:33
- You can get different flours that,
14:36
you know, if you don't want to eat like regular white flour.
14:41
So you can use any type of flour you want.
14:46
You're gonna be so happy.
14:49
So, so happy.
14:53
Loving best dishes, y'all.
14:58
You gotta fry you some chicken.
