It's about something that's near

Today we're visiting grandma's kitchen.

And I don't have to tell you

how much my grandmother meant to me.

She made a living with her food.

She fed us, her family.

She taught us how to cook.

And she gave me choices

by taking the time to pass her love

of food on down to me.

But do you know grand mama would not consider

laying out a meal that didn't have a tater in it, would she?

I'm telling the truth there.

So that's what we're gonna do,

but this one's kind of an updated dish

that grand mama may have done in her later years.

And I've got some frozen hash browns in the freezer,

and I've got a,

Gerty's head is laying right where I'm gonna have to stand,

I hope I don't get her nose.

All right, I've got my boiling water,

and I'm gonna just put these hash browns

in the boiling water,

and I'm gonna let them cook

for about five minutes.

And then over here in this bowl

I have some herb flavored instant potatoes.

I've got butter.

I've got softened cream cheese.

They sound delicious already, don't they?

I've got some jack cheese.

And I've got some sour cream.

Potatoes are not good

if they don't have a salt in them.

So you wanna make sure you season those up good.

And while I'm waiting on those to heat up,

I'm gonna take our casserole dish

with a little softened butter.

I'm just gonna wipe our dish down with it.

And I think those potatoes are ready.

Now I'm just gonna dump those in our cullender

'cause we wanna make sure that we

get all the water out of 'em.

I'm gonna turn that eye back on.

So I've turned this eye back on.

Now what I'm gonna do is

throw those potatoes in there,

and just let that water that's in 'em evaporate.

That'll help just absorb that water

and pull that water right out of it

so it won't go into our casserole.

All right, I'm gonna dump our potatoes in there.

Okay now I've got all those ingredients mixed together.

All we have to do now is add a liquid

And I'm gonna measure up two cups.

And I see that jack cheese kind of stringing in there.

Now I'm just gonna transfer these potatoes

Now at this point all we have to do

So all it needs is about five more minutes.

let's come over here to the refrigerator

and get out the chicken

Now this time I'm actually gonna use

my grandmother's recipe.

Well my grandmother

didn't deep fry her chicken.

Grandma put the lid on her chicken

after it started browning

and she would steam it.

So I'm gonna take our chicken,

I'm gonna roll it in the egg.

And this has got lots of salt

and pepper on it.

So I'm gonna throw it over here into the flour.

You'll wanna make sure that your dark meat

has a little bit longer to cook

because your white meat cooks very, very quickly,

where your dark meat takes a little bit longer.

All right, now I'm gonna start adding the chicken.

And you can see I'm adding,

I'm starting with the dark meat,

which is your legs and thighs.

I've got to get the goop off my hands y'all.

You can see I've got my pan pretty full.

If I was trying to fry three pieces

of chicken the heat wouldn't get distributed through it

All right so I'm gonna let that brown,

and I'm gonna come over here,

and I'm gonna whip together

some cucumbers and onions real quickly.

And there's just nothing to it.

It's just a regular cucumber peeled,

or you can leave the peeling on if you'd like.

So I like to get it all off.

And my mother would fix these every day

for my daddy when he came home for lunch

And then we're just gonna add onions and parsley.

And I'm just gonna cover this with white vinegar.

And we're just gonna stir that flour up

in our drippings from our chicken.

I'm putting on these gloves

because I love my grandma's red velvet cake,

but it calls for food coloring.

So I'm gonna put these gloves on

just to make sure I don't have red hands when I'm through.

All right, we're gonna start with two sticks

of softened butter,

and two cups of sugar.

And we're just gonna beat these up

until they're smooth.

And then I'm gonna be adding one egg and a time.

All right, I'm gonna come over here now.

I've got two and a half cups of cake flour.

I'm gonna add two tablespoons of cocoa to our flour.

And I'm just gonna kind of stir those together.

And right here I have a half a teaspoon

of baking soda and a tablespoon of vinegar.

And you can see how that foamed up,

All right, I'm gonna make sure

that these are stirred up well together.

I'm gonna pour that in there.

And now I'm gonna start adding

the flour and the cocoa alternately

with the buttermilk.

So this works very, very well.

So here we go.

And the last bit of flour and cocoa.

Now you can see that the color of our batter

is a light, light chocolate.

Just two tablespoons of cocoa

Well speaking of color,

we're really fixing to change that color now.

I'm gonna do this very, very slowly.

Okay, now we're ready to divide it up.

Now I have found that I can do it more consistently

if I use some type of measuring cup.

All right now I'm gonna put these

in a preheated oven at 350 degrees,

and depending on the size of your cake pan

will determine how long you're gonna bake 'em.

But you wanna bake 'em until the center,

if you touch the center it springs back,

or till it's ever so slightly

pulling away from the side of the pan.

So I've got 'em all ready,

and I'm gonna put 'em in our oven.

And you'll make sure that your pans

don't touch each other.

You'll wanna give 'em plenty of room

so that the heat can circulate around your pans.

All right, well while our cake's baking

I'm gonna make the icing.

I've got a one eight ounce package

of cream cheese that's softened,

and one stick of softened butter.

And I'm just gonna cream these two things together.

And I'm gonna add some marshmallows

that I just heated and melted in the microwave.

All right, now I'm gonna add

one 16-ounce box of powdered sugar.

All right, now I'm gonna fold in

a cup of sweetened shredded coconut

and a cup of chopped pecans.

All right so we're ready to ice our cake now.

And you'll wanna make sure when you're making this cake

because if you try to put this on a hot cake

Now I put a little dab of our frosting
