- Y'all, on this next recipe,
0:04
you know what we really crave when fall comes?
0:10
we crave a nice hearty soup.
0:17
So I'm gonna make a cheesy sausage soup
0:24
that's gonna stick to our ribs and I love that.
0:26
So let's get this going.
0:28
I've got a pound of like breakfast sausage,
0:33
ground breakfast sausage.
0:40
And I've got my bell pepper, green and red.
0:46
So this is gonna be pretty and colorful.
0:52
And like I said, it's gonna be real hearty.
0:54
It's one of those ribs sticking soups.
0:59
Okie dokie, and simple and easy
1:13
So I'm just gonna cook this
1:17
until the sausage is done
1:20
and the peppers and the onions are tender.
1:23
And then I'm gonna rain it.
1:27
We're gonna add our chicken broth,
1:30
two 32 ounce cans of broth.
1:33
And we're gonna put in hash brown potatoes,
1:38
And a cup of frozen corn kernels.
1:43
And the last things we're gonna do
1:44
is the processed cheese and sour cream.
1:51
The instructions say to drain this,
1:54
but it didn't look like but maybe a tablespoon
2:04
So I'm opting not to drain it.
2:07
Now, I just put in my flour
2:10
and we wanna cook this for a minute or two.
2:17
get all in our meat and vegetables.
2:22
We don't want it to clump on us,
2:24
so we wanna get those good and mixed in.
2:29
(mixing spoon clanking)
2:38
and our vegetables are very tender.
2:45
All right, I think that's good.
2:48
two 32 ounce bottles of chicken stock.
2:57
I would actually prefer making my own,
3:01
but one of the things
3:06
that I like about this dish
3:10
is it's easy on the cook.
3:15
But there's nothing better than homemade chicken stock,
3:18
nothing, nothing, nothing, nothing.
3:27
Now, if I feel like this soup is not thick enough,
3:33
I can always, at the very end,
3:37
mix some corn starch with some cold water
3:40
and make it the thickness that I think it should be.
3:47
It's gonna make a pretty good sized pot, y'all.
3:59
All right, now I think I got a 32 ounce, let me see.
4:02
Yeah, 32 ounce bag of frozen hash browns.
4:07
But I'm only gonna use half the bag.
4:11
So I'm gonna try to judge that.
4:21
You can't have too many taters, can you?
4:25
So since it's Paula cooking this,
4:29
you may wanna add more.
4:33
You know what I mean, Bern?
4:37
Okay, I'm gonna put in our corn now.
4:42
And remember, that was frozen corn.
4:44
So we'll let it cook a couple more minutes.
4:47
Ooh, this looks so good. I love all the fall colors.
4:53
Can you see any it, Eddie? - Yes.
4:56
I can see what's inside it. - It does look like confetti.
5:01
It's very, very pretty.
5:03
So I'm gonna let that get back hot again.
5:09
Gonna turn that puppy up.
5:11
Okay, now you'll notice that in this recipe,
5:17
that I have no salt or pepper on the list
5:21
because remember that broth,
5:23
that chicken broth, it contains salt.
5:25
So only do that at the very end.
5:28
Plus this cheese is gonna have salt in it.
5:32
But I am gonna throw some pepper in,
5:36
(pepper grinder buzzing)
5:40
for Michael because he likes his hot stuff.
5:47
But that's not gonna be very hot anyway.
5:50
All right, now I'm gonna add one cup of sour cream.
6:01
And this is gonna turn this into like
6:05
almost a cream-based soup now.
6:09
And I do love a cream-based soup.
6:12
All right, and lastly
6:20
Y'all, I had so much fun years back
6:23
when I was writing my "Just Dessert" cookbook.
6:30
using this kind of cheese.
6:35
And I had so much fun asking people to try my fudge.
6:39
"And what do you think about it?"
6:41
"Well, it's delicious. What's in it?"
6:49
What's the name of this cheese?
6:50
- Velveeta. - Velveeta, yeah.
6:52
When I told them Velveeta cheese,
6:55
they couldn't believe it.
6:57
But you'll have to look up that recipe
6:58
and make it 'cause it is fun.
7:01
So after all this melts and all those flavors get together,
7:06
I'm gonna do a taste test
7:11
and just see if it needs any salt.
7:14
I never did add any salt to this.
7:19
I did add some pepper.
7:21
And I just did this 'cause I wanted to.
7:24
I took some Japanese breadcrumbs
7:27
and I toasted them off in butter.
7:28
So it's going to be like little miniature croutons,
7:33
'cause I just like topping my soup with something.
7:39
So I think this'll be tasty.
7:42
But you could do cheese, you could do,
7:46
gosh, so many different things
7:49
if you're a topper girl like me.
7:55
Doesn't that look good?
8:07
And at this point, I may add a little salt.
8:09
It just depends on what I'm feeling.
8:12
Well, look who just came in.
8:15
- Hey. - He's always right on time
8:19
when it comes to eating.
8:21
(Michael indistinctly comments)
8:29
Michael, are you ready for lunch?
8:32
- [Michael] Oh, yeah, I can try a little.
8:41
Delicious, delicious.
8:43
- [Michael] That's why I keep coming back.
8:46
- I'm gonna take my bowl of soup and sit down and enjoy it.
8:52
I do hope y'all will try this recipe
8:54
because it is delicious.
