- Y'all I can't believe that finally, winter is on its way.
0:06
You know, I like winter food, I like winter clothes.
0:12
I feel so much better
0:14
the more I can cover, the better I feel.
0:18
And speaking of winter,
0:22
I am gonna share a recipe with y'all
0:30
Italian sausage soup.
0:32
And it's so, so easy, so, so very easy.
0:37
Let's see, maybe I can get that eye to come on this morning.
0:40
It's Italian sausage.
0:42
Now if you only have Italian sausage
0:48
that's in the shape of like a brats
0:51
or a sausage dog, just take it out the casing.
0:57
But I don't have any trouble at all
0:59
finding it like this in the grocery store already ground.
1:03
All right, so I've got some fresh oregano
1:13
and I'm just gonna give this some chops.
1:18
And I think, you know, I think I'll go ahead
1:20
and get this started.
1:22
I'll go ahead and put this in the pot and then I can finish.
1:32
And don't forget to look for a piece of paper.
1:36
Make sure you don't cook the paper.
1:40
All right, so that's my Italian sausage,
1:46
that's my onions, that's my red bell pepper.
1:52
That's my chopped green.
1:54
No, that's my green bell pepper, look like spring onions.
1:58
And this is my fresh grated garlic.
2:03
So I'm gonna turn these on.
2:09
And let those be cooking,
2:13
getting all them flavors together.
2:17
And so while that's doing its thing, I will do my thing.
2:23
I'm gonna be adding beef broth to that.
2:26
I'm gonna be adding, it costs,
2:28
a 16 ounce package of corn niblets.
2:33
They don't make 16 ounce anymore, it's 15.
2:36
But I just happened to make mine 16
2:39
'cause I had two of them.
2:43
'Cause to me the corn is so good.
2:53
Ooh, these herbs smell so good.
2:57
I just do like to recommend, you know, if you have access
3:02
to fresh herbs, by all means use them.
3:10
But one thing about it, if you are using fresh herbs,
3:14
it takes more of those
3:16
because they're not as strong as the ground herbs are.
3:21
So if it calls for a teaspoon
3:24
of oregano, do two to three teaspoons of oregano.
3:36
And by chopping these, this is gonna help it
3:40
release all those wonderful flavors
3:43
rather than if you just dropped it in the pot.
3:51
Breaking open that, we are breaking open
4:04
There we go, there we go.
4:09
That looks real good.
4:13
I have had some great guest on here
4:17
on my little cooking show on YouTube,
4:22
so I hope that y'all are hitting subscribe
4:24
so you don't miss any of them.
4:30
One of my newest favorites is Joseph Harris
4:40
and I met him at a book signing
4:42
and Joseph just happened to say, you know,
4:45
I won the best home cook in America.
4:48
I can't remember what year,
4:50
but it was on the cooking channel.
4:52
And I said, gosh, do you wanna come be a guest?
4:55
And he said, I would adore to.
4:58
And we just hit it off.
5:01
We were like Mutt and Jeff, he was here and I was here
5:05
but has the sweetest smile
5:07
and the sweetest, sweetest personality
5:11
and we just had a ball.
5:13
So I do hope y'all will catch that show.
5:15
Okay y'all, our sausage is all nice and brown
5:20
and the recipe says to drain this,
5:23
but you know, there's just not a whole bunch in there.
5:27
And like one of my favorite people
5:31
I was talking about Joseph Harris.
5:39
look what I received yesterday.
5:43
Joseph sent me these flowers.
5:46
He was here and he did about six shows with me, didn't he?
5:49
- [Speaker] Yeah, yeah he did.
5:51
- And we enjoyed being together so very much.
5:52
And thank you Joseph.
5:54
Does this mean I don't have to send a thank you card?
5:59
Yeah, you say no, I don't have to.
6:03
Thank you, thank you, thank you,
6:06
thank you darling for these beautiful flowers.
6:09
They're as sweet as you are, love them.
6:14
All right, so as Joe always said, fat equals flavor y'all.
6:19
So I'm gonna opt not to drain this
6:23
since it's not that much.
6:25
Now I'm going to add a large can
6:36
I am gonna add, this is a 32 ounce
6:45
I'm just gonna wash out the rest of the tomato sauce
6:49
with that and then add the rest.
6:51
And now I'm going to add our diced tomatoes.
6:53
It's seasoned with basil, garlic and oregano.
7:00
And I'm going to add in
7:02
our two other fresh herbs.
7:16
I am about add in our smoked paprika.
7:32
And now I'm gonna add our black-eyed peas and our corn.
7:36
And we're gonna let this simmer for 30 minutes.
7:44
These peas actually take about 20 minutes.
7:48
Let me see if I'm right, yeah, 25 to 30 minutes to cook.
7:51
So they'll be perfect.
7:54
And in goes my corn, this would be good
8:00
to serve with tortilla chips crushed on top.
8:08
And if I was going that far, I would have to add a dollop
8:11
of sour cream on top of my chili.
8:17
So I hope y'all will like this recipe.
8:20
And you know, it's a good one.
8:23
It's a good one that you can change around
8:26
and make it your very own.
8:28
Like I wouldn't mind some cumin being in there
8:35
So make it, try it and then make it your own.
8:42
I want y'all to look at this pot of chili.
8:45
Now remember, this is black eyed pea
8:53
Did I say the full name right?
8:55
- [Speaker 2] Black eyed pea and sausage chili.
9:01
And it looks just delicious.
9:05
Now I'm gonna just share with y'all
9:07
the way I'm gonna serve mine to me
9:11
and to whoever puts their feet under my table.
9:15
I'm gonna start with cheese so it can start melting.
9:20
I'm gonna put some green onion on it.
9:24
I'm going to put some tortilla chips that I just crushed up.
9:36
And then I'm on top it with a dollop of sour cream.
9:43
And I'm gonna just put a little bit
9:48
of salt because to me,
9:51
sour cream screams for salt.
10:01
I wanna try to get a little bit of everything in there.
10:10
This is truly delicious.
10:18
And y'all saw how easy it was
10:20
and it will definitely feed a crowd.
10:24
If you can't eat it all,
10:25
you can always put some in the freezer
10:28
and pull it out on a school night where you think,
10:33
I ain't got nothing to eat in this house.
10:36
And you go to the freezer and you find that,
10:41
Love and best dishes to all my friends out there.
10:44
