0:00
- I know that I have told y'all many times
0:04
how much I enjoy getting letters
0:09
and it's a bonus if they give me a recipe.
0:13
It just makes me smile to think about
0:15
young people in the kitchen
0:17
carrying on family traditions.
0:20
And this letter came to me in November of '22,
0:27
so I'm a little behind,
0:29
but I will catch up, I promise.
0:32
Now, it reads this way.
0:34
"Dear Paula Deen, hi, my name is Casey,
0:36
"I'm a young man who lives in Tennessee,
0:39
"and here's a recipe I thought you might like.
0:43
"I hope you enjoy it as much as I enjoy giving it to you
0:47
"and sharing it with you.
0:49
"I love you, Paula, love Casey."
0:55
Now, you think you're having a bad day,
0:59
and someday sends you a note like that
1:03
it can turn a bad day into a wonderful, sweet day.
1:07
So it's wonderful that he feels comfortable enough
1:10
to express his love for me.
1:12
I mean to me that's just so sweet.
1:15
But anyway this pie is very simple, Casey,
1:20
and I love you for that.
1:23
Now we have started out with one can of blueberries,
1:28
and you wanna reserve the juice
1:30
from that can of blueberries,
1:33
and we're gonna combine that reserved juice
1:37
with the sugar, the flour
1:42
And we're gonna cook this until it thickens up,
1:49
Now I wanna use my whisk
1:52
to incorporate the flour with the sugar so it won't lump,
1:57
'cause if you don't use cornstarch
2:00
you do have to worry about flour
2:03
doing the lumpy, bumpy thing on you.
2:08
So we've got that mixed up good,
2:10
and now I'm gonna add my dash of salt.
2:13
In case y'all don't know what a dash is,
2:27
And this is a smidgen.
2:31
The smidgen's the tiniest,
2:32
and the dash is the most.
2:37
Somebody sent these to me,
2:38
I thought they were so cute.
2:40
Okay, so we're gonna turn on our eye.
2:52
And I'm going to slowly incorporate that juice
3:01
into our sugar mixture.
3:07
I want y'all to notice there is a difference
3:11
between blueberry pie filling,
3:14
and just a can of blueberries.
3:23
And if you can't find canned blueberries,
3:29
just fresh blueberries,
3:30
and make you a simple syrup,
3:37
to maybe a half a cup of sugar, something like that,
3:44
just to suit your taste.
3:49
And I mix it real good,
3:51
but I still see some lumpy little pieces of flour.
3:56
So I'll keep just whisking that
4:00
until those few little lumps are gone.
4:06
Gonna turn up a little bit,
4:09
and Theresa baked our pie shell,
4:12
and look how pretty that is.
4:16
Once in a while they're easy to burn.
4:20
- And naturally we used the baking beads,
4:23
we put down a piece of parchment paper,
4:27
and then when it's halfway done
4:29
we just lift that parchment paper off
4:32
so the bottom can finish cooking.
4:37
So I've got three bananas.
4:40
I don't know if I'm gonna need three bananas,
4:45
so I may just start out with two.
4:52
I mean bananas turn (laughs)
4:55
turn brown like you burned 'em,
4:59
they turn brown very quickly,
5:00
so I like to do that at the last minute,
5:05
and I wanna make sure that I have lemon juice handy
5:11
to put on it to prevent it from browning on you.
5:18
Brown banana just turns me off,
5:24
and it's funny how, depending on how you wanna eat 'em,
5:27
like Bobby, he likes his so, so ripe,
5:38
and I like mine just like this.
5:44
No chance of it being dark anywhere.
5:50
So it's all up to your personal preference.
5:57
This is the kind of banana I like to use
5:59
for my banana puddings and all
6:03
'cause it will stay the right color
6:08
a little longer than when it's real ripe.
6:10
The only time I use an overripe banana
6:13
is for my bread pudding
6:14
or cake, something like that.
6:23
Banana nut bread is wonderful.
6:27
I make Mikey a banana cake with all the spices,
6:31
it's one of my favorites.
6:34
So you just wanna toss that all around,
6:38
make sure the banana's coated.
6:41
Let's come back over here.
6:47
Turn that up a little bit.
6:50
Casey, I'm gonna start with just two bananas,
6:54
and see how that works out.
6:58
I can always add the third banana, right?
7:02
Just depending on how much,
7:10
whoa, get back up there.
7:12
How much banana ratio you like.
7:17
When I'm making banana pudding,
7:19
some people like a lot of custard,
7:21
some people like a lot of crackers,
7:24
and some people like a lot of bananas.
7:27
Now for my preference,
7:29
I like heavy custard.
7:34
- Uh-huh, it's just good, isn't it?
7:37
I think I'm gonna follow Casey's instructions,
7:44
and I think we can do one more, don't you?
7:47
Okay, so I got our blueberry juice nice and thick,
7:54
and I had my blueberries in this bowl,
7:56
so I just poured my syrup over the blueberries,
8:01
and now I'm gonna put them in the refrigerator
8:03
and let 'em cool because we don't want our bananas to cook,
8:09
and it's got to be nice and chilled
8:13
because our homemade whip cream,
8:16
see how nice and thick that got?
8:24
'Cause we don't want it to ruin our fresh
8:35
This looks so wonderful.
8:38
See how that tightened up,
8:40
well it's actually gotten a little looser.
8:43
It'll tighten back up.
8:45
We had this in the refrigerator chilling
8:50
because you don't wanna put hot blueberries
8:54
on top of the beautiful cold bananas.
9:00
And I'm so glad you told me to use three bananas
9:05
'cause three bananas was perfect.
9:13
So we're gonna have to...
9:15
I'm not gonna be able to cut a piece
9:19
probably until sometime tonight
9:23
because it's got to get thicker again.
9:32
Now this is fresh whipped cream,
9:35
and I add one fourth of a cup of sugar
9:41
to each cup of heavy whipping cream
9:45
so it's nice and sweet.
9:51
And I just don't like after you've used
9:55
a fresh whip cream that frozen whipped topping
10:03
just doesn't cut it to me.
10:06
And now we're gonna add,
10:09
just in case you don't know what it is yet,
10:13
we're gonna add some more blueberries.
10:19
This is a beautiful dessert, Casey,
10:22
and I so appreciate you sharing the recipe with us
10:24
because it's one of those easy
10:28
but delicious recipes,
10:33
and all of us mamas out there,
10:35
and daddies, we love us some easy recipes, don't we?
10:42
And this fresh mint is from my garden,
10:45
and look how beautiful that is.
10:49
That cream is wanting to come right out. (laughs)
11:07
Love and best dishes.
11:08
God bless you, Casey,
11:09
and thank you so much.
11:10
And I'll return that love to you.
11:16
Hey y'all it's Paula Deen.
