0:00
- Now we've got that wonderful Turkey
0:03
that I cooked for Thanksgiving and it was succulent.
0:07
I really hope you'll think about maybe
0:09
using that recipe this year for your Thanksgiving Turkey
0:12
because it's good.
0:15
All right.
0:17
Thanksgiving is not Thanksgiving
0:18
unless you have cranberry sauce.
0:20
And the funny part is most people don't even eat it.
0:24
- [Eddie] It's gotta be there.
0:26
- It's got to be there
0:27
because you need that little twang with that Turkey,
0:30
you know, every bite a little cranberry sauce
0:33
along with that Turkey.
0:34
So this year I'm actually making it just a tad different.
0:40
I am gonna take, I'm just shy of two cups of cranberries
0:47
about a cup and a half, and I'm gonna put a little water.
0:56
I'm gonna start off with like a cup and a half.
0:59
I mean a half a cup.
1:02
So I don't want 'em too, too juicy.
1:04
And I'm gonna cut these along with some sugar.
1:11
Let's see, how much is this?
1:13
A fourth of a cup?
1:17
I think that's what I'll do.
1:19
And we're gonna bring that to a boil.
1:23
Now, you won't find this recipe anywhere.
1:27
You'll find combinations, different combination
1:31
with the ingredients.
1:32
But now we just gonna cook those cranberries until they pop.
1:39
And then we'll have to let 'em cool off for a minute.
1:44
And you can use as much sugar as you want to.
1:51
Less sweet, more sweet, however you want it.
1:54
And I've got, gosh about a half a cup of nuts,
1:57
pecans that I'm gonna chop up.
2:02
This is my favorite cranberry sauce.
2:05
And a little lady gave it to me years ago.
2:10
I can't remember where I met her.
2:13
Her name was Ms. Holmes..
2:15
- [Eddie] Hogal.
2:16
- Hogal? - [Eddie] Yeah.
2:19
- Well, Miss Hogal I use a piece of you every Thanksgiving
2:24
in my recipes.
2:26
And her recipe was homemade cranberry sauce cooked.
2:37
Actually, she would slice the jelly cranberry sauce
2:43
like this.
2:45
She would slice it and put in between two slices
2:50
of cranberry sauce a mixture of cream cheese,
2:55
and a little mayonnaise and nuts.
2:59
And it just made all the difference in the world
3:02
in that cranberry.
3:03
So I'm gonna do the same thing,
3:05
but I'm gonna put mine in a like a cylinder.
3:09
And I'm going to use the jelly.
3:12
I'm gonna use the jelly cranberry sauce.
3:14
And I'm not gonna be slicing it,
3:16
I'm gonna be stirring it up and I'm gonna be mixing it
3:19
with a little of the fresh whole berries.
3:23
Y'all, I hear the cranberries popping.
3:26
Kinda like popcorn, hear it?
3:29
(cranberry sizzling)
3:38
Come on, pop.
3:38
You had it all popped.
3:42
I know as soon as I start making noise, it'll start popping.
3:51
But you can see how they're popping open.
3:56
I'm just gonna let that boil and boil.
3:59
You can really tell on this one right here.
4:05
So I really didn't have to do this.
4:09
I could have used just all jelled
4:12
or I could have bought the whole berry cranberry sauce
4:16
in a can at the grocery store.
4:19
But I don't know, there's just something about
4:21
throwing some fresh cranberries in our dish.
4:28
I'm gonna give this a taste
4:29
and see if we got it sweet enough, Eddie.
4:44
You can see it's already start get a little syrupy looking
4:48
from the sugar cooking in the water.
5:00
I think it could be just a tad sweeter, Eddie.
5:05
So I'm going probably wind up with a third of a cup of sugar
5:10
for the cup and a half of cranberries.
5:12
Let's come on down here
5:18
And we'll open up our jelly cranberry sauce.
5:41
Okay.
5:44
A lot of people just love the jelly.
5:49
In fact, Theresa on a cruise right now.
5:53
But when I told her I needed a can of jelly cranberry sauce,
6:00
she got so excited.
6:02
She said: Oh, that's my favorite.
6:05
All right, this is nice and thick.
6:09
See how that sugared right on down
6:13
created like a syrup for our cranberries.
6:19
And it didn't take, but a couple of minutes.
6:22
So I'm gonna have to let this cool.
6:27
So let's see where I can stick it.
6:31
I think I'm going to stick it right down here
6:36
in the drink drawer, Eddie.
6:39
(tools clattering)
6:42
And let that cool.
6:45
And then I'll be right back.
6:47
Now while my cranberries are cooling
6:51
I'm gonna go ahead and cream my cheese with my mayonnaise
6:58
and then I'm just gonna stir in the nuts.
7:00
But I got a little something extra that I decided
7:05
to do at the last minute.
7:08
Orange zest is so good, it gives so much flavor.
7:14
So I'm gonna be in the zest to the cream cheese
7:19
or I could add it to the cranberries,
7:21
it really doesn't matter as long as you got
7:25
that zest taste in there.
7:28
So I've decided that I'm gonna use
7:34
an eight ounce package of cream cheese plus a half.
7:39
Now it really depends on how many people you're having,
7:45
how much you think they're going to eat it.
7:49
If you're feeding 20 or 25 people
7:53
the way people are so finicky about the cranberry sauce
7:56
it may be a plenty 'cause you really only
7:59
use like a table swim on your plate, most people.
8:05
Alrighty.
8:08
Now to that 12 ounces of cream cheese
8:17
I'm gonna add maybe about a third of a couple mayonnaise.
8:23
We'll start with that and see how that works out.
8:33
(mixer whirring)
8:37
Gonna add a little bit more mayonnaise.
8:44
Little bit more.
8:48
(mixer whirring)
8:51
All right, Eddie, I want to ask you a question.
8:53
I'd like to ask my friends out there there
8:55
but I won't be able to hear 'em.
8:57
Do you think I should put the orange jest in, zest,
9:00
oh, I sound like Aunt Peggy. (laughs)
9:03
She calls jest.
9:06
Should I put the zest in the cranberry sauce
9:09
or the cream cheese, what do you think?
9:12
- [Eddie] Let's see, I would put it in the cranberries.
9:14
So let's do the cream cheese.
9:17
(both laughing)
9:18
- Wait, that's two different answers.
9:21
- [Eddie] I'm trying to think, you know what?
9:22
It would probably taking a bite out of the cream cheese,
9:26
it would add a little extra something.
9:30
- Yeah, and it would flavor the cranberries berries.
9:35
So very good too, you know?
9:45
Eeny, meeny, miny, moe-
9:46
- [Eddie] What about both?
9:47
- Huh? - [Eddie] Both.
9:49
- Both?
9:50
Do you think I got enough to put it in both?
9:53
I'll try it.
10:03
Right now I want you to put your finger in this
10:08
and see if you can taste the jest in it.
10:17
- [Eddie] Yeah.
10:18
- You like that?
10:19
- [Eddie] Yeah, you can definitely taste it.
10:23
- So good.
10:27
All right, so I'll put the rest in the cream cheese.
10:38
I think I could put a little bit more sugar
10:40
in our cranberry sauce, Eddie.
10:45
- [Eddie] It's pretty tart.
10:49
- Stick your finger in that and see what you think.
10:55
'Cause I can always add a little more sugar in.
10:57
- [Eddie] I mean I think it's sweet enough.
10:59
It's got, you know- - It's tart.
11:02
- [Eddie] ...nice little ting to it.
11:05
- Yeah, which is what you want with that Turkey.
11:13
All right, so now I'm gonna add my pecans
11:23
to my cream cheese.
11:30
I'm gonna stir that up.
11:46
I might need a few more nuts, what do you think?
11:51
I think we need just a few more nuts, Eddie.
11:55
Eddie just broke the news to me that that was the last
11:58
of the pecans that I just put in there.
11:59
But you know what?
12:00
It doesn't matter.
12:01
I'm gonna use these chop walnuts.
12:07
Walnut is such a delicious, I don't like black walnuts.
12:12
Do you, Eddie?
12:13
They have a totally different taste from regular walnuts.
12:25
So let's see.
12:30
I'm gonna go ahead and add my jelly
12:34
to cranberry sauce to my fresh cooked ones.
12:43
Ooh, I smell that zest.
12:45
- [Eddie] It smell it?
12:46
- Uh-huh.
12:50
I probably should have let it cool a little longer
12:52
but it'll be okay.
12:58
It's all going in the same pot anyway.
13:01
Now I'm gonna try to do this
13:06
without messing up the sides of our pretty cylinder glass.
13:13
And I think I'm gonna start.
13:19
(glass clings) Oh no. (laughs)
13:24
I didn't get that outta my mouth
13:29
before I flung it up on the side.
13:38
Okay a little bit more
13:43
To me, this is goodest dessert, Eddie.
13:47
Have you ever tasted this, ever?
13:49
- [Eddie] No, I don't think you've ever made it.
14:04
- [Paula] Okay.
14:14
My cranberries.
14:19
So this is gonna be a cranberry sauce
14:23
that you have to dig deep to get.
14:28
You know what I'm saying, Eddie?
14:31
- [Eddie] Yeah, it's like a little bit of dessert
14:33
with turkey. - Yeah.
14:46
It's looking pretty.
14:51
Okay.
14:55
And you can make this a couple of days ahead,
14:58
which is makes life a little bit easier.
15:04
That's the last of it.
15:07
Now we're just gonna top it
15:10
with the last bit of our cranberry sauce.
15:30
Pretty as picture, isn't it, Eddie?
15:33
- [Eddie] Yeah, it is.
15:36
Actually, a lot more people might eat cranberry sauce.
15:38
- You know, they may.
15:42
Of course it's you go to a little trouble,
15:45
it's a little bit more work rather than just
15:48
opening up a can.
15:49
But I mean, you know, you wanna be originally different
15:58
and catch people's eye.
16:01
All right now to that, just gonna top it with a few nuts.
16:11
So that'll give a hint as to what everybody's getting.
16:16
I love it.
16:19
I'm ready to slice the Turkey right now.
16:23
So what do you think Eddie?
16:25
- [Eddie] I think it looks great.
16:28
- It's like a cranberry trifle.
16:30
- [Eddie] Yeah.
16:34
- [Paula] Very little work.
16:37
A whole bunch of taste
16:38
- [Eddie] Smear some of that on your cornbread.
16:43
- On a cracker.
16:46
It'd be delicious.
16:48
Well, I hope that y'all enjoyed watching me
16:51
putting that together
16:53
and I Sure do hope that y'all will try it.
16:56
'Cause I think you'll like it.
16:59
Yum, this is so good.
