In today's episode of what's cooking with Paula Deen, Bobby and Paula answer viewer's questions:
1. Is Paula ever planning on doing reduced calorie recipes?
Yes. Paula's new recipe book "Paula Deen Cuts the Fat" has 200 new low fat recipes and 50 classic recipes with less fat. Bobby's recipe book, From Mama's Table to Mine, also looks at classic Paula meals and readjusts them to lower calorie counts.
2. My husband is also diabetic, how was Paula able to change her eating habits?
The first step was to accept that Paula was a Type 2 diabetic, which was very hard. The second step was losing some weight and then moderating the amount of food she was eating on a daily basis. This was hard due to lifestyle changes. The third step was eliminating sweet tea, which eliminated a lot of white sugar. Lastly, make sure you see your doctor regularly.

welcome to what's cooking with Paula
0:02
Deen you can see Bobby and I are at this
0:05
again we're still in the same clothes
0:07
but we're not quitters are we son no we
0:11
are not quitters we're gonna be trying
0:13
to answer questions today sent in by
0:16
some of our friends out there hmm
0:19
sometimes it's very hard you're in the
0:22
middle of the day to get folks because
0:24
most people are very very busy but we're
0:28
gonna try again today hmm just see if we
0:32
can answer some of these questions well
0:34
who is our first caller good thing we
0:36
have email so if we're not able to get
0:38
through them with we still have yeah the
0:40
question but I can still try to answer
0:42
the question hopefully they'll catch the
0:44
broadcast of course our first question
0:46
is from Pam okay we'll see if Pam
0:49
answers okay come on Pam I'm counting on
0:53
you girl gonna place a bet Bobby sure
0:58
I'll bet you don't answer well that was
1:01
my bad
1:01
mm-hmm let's just give each other on and
1:04
off okay oh gosh I almost thought she
1:10
was hey Pam it's Paula Deen from what's
1:20
cooking with Paula Deen and I'm here
1:22
with my son Bobby and today's show is
1:26
we're on a quest to answer questions
1:29
from our friends out there our listeners
1:31
so I'm so sorry that you weren't there
1:34
to take the call but just watch for this
1:37
podcast because we're gonna try to
1:39
answer the question anyway have a
1:41
blessed day girl bye bye
1:47
here's Pam's question mom is she by she
1:51
she means you I'm sure is she ever
1:53
planning to do a program of awesome
1:55
recipes in the reduced calorie version
1:58
of her original recipe oh that was your
2:02
chef is she planning that that was that
2:06
Pam that was Bobby's show oh not my
2:10
mama's meal show still is and it's still
2:13
run
2:14
I think oh my gosh what show Bobby Bobby
2:19
has a cookbook out and I do too I have
2:22
Paula Deen cuts the fat it's my newest
2:25
cookbook and it's it's 250 brand new
2:32
recipes Pam and fifty of my old classics
2:36
it I have cut the the fat and the
2:39
calories own and Bobby also has a
2:42
cookbook
2:42
what is the name couple of them got a
2:44
couple I know it but the one that every
2:46
mom is able to mine went to number one
2:48
on the New York Times bestseller list in
2:50
its category yes that's wonderful Bobby
2:53
thank you and then Bobby Dean's everyday
2:55
eats both are both of great books uh-huh
2:57
but one at one of your books like each
3:01
each meal was under 350 now 400 50
3:04
calories or less and you could prepare
3:07
every recipe in 30 minutes 30 to 45
3:09
minutes uh-huh all right now which
3:10
cookbook is that the first one from
3:13
Mama's table to mind what was tremendous
3:16
it did so well because it's relevant a
3:19
lot of people like Pam have this very
3:21
same question the reason Pam that I
3:24
wrote the book is because I love my
3:26
mom's food I love fried chicken and
3:28
collard greens and sweet potato souffle
3:30
and just all the you know favorites
3:34
classic favorite recipes and it's valent
3:38
very elementary idea to decide to take
3:40
those original recipes and just pare
3:42
them down and try to come up with a with
3:44
a with a lighter version of it and it
3:46
was really simple to do that all I did
3:49
was looked at the original recipes
3:52
because my mom always told me from an
3:55
early age to go exactly by the recipe
3:57
the first time you're doing anything and
4:00
then after that you can make it your own
4:02
and do whatever you'd like to it so I
4:04
always felt like I had creative license
4:06
to do because people asked me they were
4:08
like no you feel bad doing that to your
4:10
Mama's recipe and really I didn't cuz
4:13
you gave me permission early on to do it
4:15
of color but all you really have to do
4:17
Pam is take a recipe that you really
4:19
like and look inside that recipe at the
4:23
culprits and and and either replace them
4:26
entirely or
4:28
I'm out if you can or just you can
4:30
really cut out a lot of unnecessary fat
4:33
calories just by reducing the amounts of
4:36
things and recipe for instance if a
4:38
recipe calls for sour cream you could
4:41
use Greek yogurt to substitute or you
4:44
could use vegetables rather than
4:50
breading in some instances or you can
4:53
cut back on the cheese and a macaroni
4:54
and cheese for instance by you by
4:56
filling it with with ground cauliflower
4:58
there's a lot of little yeah absolutely
5:00
absolutely
5:01
a lot of little tips and tricks that you
5:04
can use to to dial back on the fat
5:06
calories and recipes so the answer the
5:08
question is yes she did do it she came
5:11
out with a cookbook called Paula Deen
5:13
Custis at and that's got a lot of great
5:15
250 recipes in fact of great scale back
5:18
recipes or you could go to from Mama's
5:20
table to mine that book is solid honest
5:23
recipes that work that's great and 50
5:27
calories yeah or less so that that and
5:34
it was that was very well received yeah
5:37
well Pam I'm so sorry we missed you but
5:39
we hope that you happen to catch this

5:43
question so we'll go to a little short

we're back young trying to call Karen
7:02
hopefully she will answer great question
7:07
it is a great question
7:10
relevant hey Karen it's Paula Dean along
7:23
with my son Bobby Dean we're in the
7:26
middle of doing what's cooking with
7:28
Paula Dean podcast and you had sent us a
7:32
question and we were trying to get in

8:13

8:16
alright great
8:18
Karen's question squash Karen's question
8:20
is Paula my husband is also diabetic and
8:23
I'm interested in knowing how you were
8:25
able to change your eating habits um
8:30
well Karen I'm sorry to hear I I know
8:34
nothing I know I don't know his age or
8:36
anything but the older you get the more
8:41
likely this is to happen to you and you
8:43
know you can't do the same things at 45
8:47
or 55
8:48
that you did when you were 25 it just
8:51
doesn't work that way I don't know if
8:54
he's type 1 or type 2 I really don't
8:57
don't know any of those things
8:59
but you know most people don't like
9:02
change we don't like change and it's
9:05
hard when I first said ok I had to
9:10
accept the fact that I was diabetic and
9:13
that took me about a year and a half I
9:16
think I went for three six months visits
9:19
before I had to look at the doctor and
9:22
say okay I am type 2 diabetic because I
9:29
said it couldn't be nobody else in our
9:31
family had it and but I have since found
9:35
out that after learning more about this
9:38
it's not not all genetic you know stress
9:44
and certainly genetics but your
9:47
lifestyle the way you eat the way you
9:50
play the amount of stress you're under
9:53
all those play in to whether you're
9:56
gonna be a candidate but type 2 diabetes
9:59
but age is probably one of the biggest
10:02
factors if you're lucky enough to live
10:06
long enough there's gonna be something
10:08
high on your well that'd be your blood
10:10
your blood pressure your cholesterol
10:11
your triglycerides something's gonna get
10:14
high more than likely but it was very
10:19
very hard and after I got that initial
10:22
35 pounds off then I decided that I was
10:27
gonna bring everything back in my
10:28
kitchen but I was gonna practice
10:30
moderation
10:31
I think moderation is so important I was
10:37
hell-bent that I was gonna cut down on
10:39
the portions that I ate because I wanted
10:43
to maintain that weight loss you know I
10:45
said anybody can lose 50 pounds anybody
10:50
anybody if they have it to lose they can
10:54
lose it but it takes a heck of a strong
10:57
person to keep it off because it is
11:01
really as a
11:02
lifestyle change so I have done that
11:09
through my airfryer having enjoying
11:13
fried foods without the frying I have
11:17
certainly lowered my portions on the
11:20
amount that I eat now and so if it's an
11:25
ongoing process one that you have to
11:28
work out all the time and I hope Karen
11:31
that maybe you and I can talk one-on-one
11:33
and maybe knowing the specifics we can
11:40
talk a little bit better sorry I missed
11:41
your girl well you're leaving one out
11:44
that I'm really proud of before
11:46
why you really only had one vice sweetie
11:50
well no I had many more vices son but
11:53
you know what I'm southern people love
11:55
their sweet tea we love our sweet tea
11:59
and from 12 o'clock or 11 o'clock own I
12:03
kept a glass of sweet tea in my hands
12:06
and I no longer do that I drink
12:09
unsweetened tea now but you'd be amazed
12:13
at the calories that are located in our
12:17
liquids I love you you're downplaying it
12:20
that's huge that you gave up sweetie
12:21
that's enormous well it was the southern
12:24
sweetie is loaded with white sugar oh
12:26
that's that that is the culprit if you
12:29
look at if you start paying attention to
12:31
what's in the foods that you buy
12:33
processed foods anything that you can
12:35
see the ingredients on if you look at
12:36
directly at the sugars and the diabetics
12:39
have to look have to pay close attention
12:40
to those items in their buying a good
12:42
way to eat healthier for a diabetic when
12:45
we were doing when you were first
12:47
diagnosed with type-2 diabetes I really
12:50
began to pay a lot of attention to how
12:53
you get type 2 diabetes and what you
12:55
should do about yes and people with
12:57
diabetes particularly type 2 are really
12:59
bummed out because they do have to make
13:00
a change because and we don't a lot of
13:03
that is brought on by the foods that you
13:05
eat and the things that you drink and
13:06
yes something that you can do is shop
13:08
around the edges of the grocery store if
13:10
you can eat more say exactly real food
13:13
more whole
13:15
foods more fruits and vegetables and
13:17
grains and nuts and things like that and
13:20
cut back on the processed foods and the
13:22
sugars it is really not that hard a
13:25
change to make and it is but it's things
13:28
like people aren't aware of how many
13:30
calories they're drinking so if you
13:32
enjoy a cocktail look if you enjoy a
13:34
cocktail or if you like beer you might
13:37
not be aware of how many calories and
13:39
how much sugar that you're taking in
13:40
through that so you can drink more water
13:43
if you're a southern person like mom and
13:45
you really like sweet tea if you can go
13:47
to change to unsweetened tea instead and
13:50
use a liquid stevia for instance or
13:53
sugar in the raw or something like that
13:55
that's a great way to make and don't try
13:57
to eat the whole enchilada at once make
13:59
small changes be proud of yourself
14:02
congratulate yourself your changes that
14:03
you do make because your doctor will be
14:05
real happy that you made any changes at
14:07
all and once you feel some progress like
14:09
you did start drinking more water rather
14:11
than sodas or rather than sweet tea
14:14
start taking a walk during the day and
14:16
eventually you're walking maybe a mile
14:18
every afternoon you will feel so much
14:20
better and with each of those small
14:23
progresses that you make you'll want to
14:25
make more so keep up the good work don't
14:27
get discouraged and and make those small
14:30
changes in your life and you'll feel
14:31
better and the people in your family and
14:33
the people that love you and care about
14:34
you will be super proud of you and I can
14:37
tell you that for me tell you I am
14:40
addicted to diet sodas and my doctor
14:44
informed me last time I went in to visit
14:47
and I've got one more thing to say to
14:49
you Karen about that doctor but she said
14:52
diet sodas
14:58
diet sodas increase your chances of
15:02
becoming a type-2 diabetic mm-hmm and
15:06
that sounded so weird to me it's fake
15:08
sugar that's your body here's the most
15:09
immature yeah here's the most important
15:12
thing Karen is that your husband go to
15:14
the doctor on a regular basis and
15:17
because each of us are different and
15:19
it's important that that he visit with
15:24
the doctor and keep up and does this the
15:27
doctor says cuz like said each
15:29
of us are different what worked for me
15:31
might not work for him and vice versa so
15:34
anyway good luck and you can do it just
15:38
keep trying you can do it well Bobby
15:41
well mama we didn't have too much luck
15:43
again today I think what I call them I
15:47
think we ought to come in and do a
15:48
podcast at night when folks are home
15:51
don't y'all yeah that makes more sense
15:53
doesn't it we tried y'all thanks for
15:57
your questions and we'll see y'all next
15:59
