One of Paula's favorite things to do is call viewers. In today's episode of What's Cooking with Paula Deen?, Paula calls Mildred from Chester County in Pennsylvania who surprises Paula with who she is related to. Later in the podcast, Paula talks about how she learned to cook and her favorite meals from her grandmother including chicken and dumplings. After the break Mildred and Paula talk about the dishes they both like to make including vegetable soup and potato salad.

2:47
I've had and it still works like new
2:57
because I've heard that they there's a
3:01
chance that they won't last but what ten
3:04
or fifteen years and I may be confusing
3:08
that with a heart surgery well I am so
3:26
so happy to hear that and I'm so glad to
3:30
be able to chat with you so let's get
3:32
down to the nitty-gritty and you tell me
3:35
some dirty things on Clifford like when
3:46
he was a kid was he a booger eater or
3:48
anything like that
3:56
yay-hey he was a sweet boy well he's
4:03
certainly a cute little boy yes yes
4:12
Kenzie's a very nice girl
4:16
you know Kinzie works at our corporate
4:18
office yes yeah
4:25
from my grandmother I did
4:34
oh my gosh miss Mildred everything my
4:41
grandmother cooked was so good and I
4:44
cook so many of the things that she
4:47
taught me to cook I cook them up to this
4:49
day I know it was important that I
4:53
learned how to make chicken and
4:54
dumplings because that was my daddy's
4:57
favorite meals but you know I lost my
5:01
brother and I lost our parents when they
5:03
were very young and we were very young
5:05
we were orphaned at a fairly young age
5:09
and that was my daddy's favorite meal
5:12
and it was just so important to me that
5:14
I learned how to make those just in case
5:20
you know one through and you would show
5:23
back up yes I gave birth to two sons and
5:46
then I have a stepdaughter and a stepson
5:49
that are there like mom now over the
5:54
years you know you just holler love with
5:57
them children wow you are Suzi girl
6:07
listen Miss Mildred I just have now a
6:12
total of nine grandchildren
6:15

6:20

6:24

6:27

one eight hundred six five nine 3300
7:27
that's one eight hundred six five nine
7:30
3300 well why is your what's your
7:37
favorite thing to cook miss Mildred I do
7:51
too I don't think alright how do you
7:58
make your potato salad well I probably
8:01
don't make it like you I cut celery and
8:11
I cut egg and sometimes I put a little
8:15
celery seed in with it and then I use
8:19
mayonnaise and that's about it you and I
8:22
make it just alike do you make it the
8:26
same way that same way well that's very
8:29
good anyway
8:33
and yes and I don't like it dry and no I
8:38
do not like it dry I like it yes I do
8:42
too and I must like to make filling for
8:46
turkey with my favorite things to make
8:49
oh my god
8:51
that was one thing that when you asked
8:54
me what what my grandmother told me she
8:57
taught me how to make an incredible
8:59
dressing or stuff energy well you can
9:07
find it in one of my cookbooks or on my
9:09
facebook on the website but I don't try
9:11
to remember everything pretty quickly
9:13
the first thing that you need to have is
9:16
a lot lot lot of good rich stock and my
9:21
grandmother always used a hen and she
9:26
would bawl her hand for 2 or 3 hours and
9:28
have the most incredible rich stock so I
9:32
don't like using the canned stock I
9:34
don't like using the box stock oh I just
9:38
buy enough chicken pieces that I wind up
9:43
with a real good stock and you know you
9:45
want to throw your onions your carrots
9:49
you can throw some garlic in there you
9:54
know to give it a little richer flavor
9:56
and my grandmother also taught me to add
10:01
one can of cream of celery soup yes just
10:09
stir that in your broth you know before
10:12
you start dropping your dumplings in but
10:17
she taught me how to make the dumplings
10:19
and she said they've got to be tough
10:22
Paula you want to be able to cut that
10:24
dumpling with your fork and all she did
10:28
was use plain flour and salt and pepper
10:32
if you were of a mind to and slowly add
10:37
the ice water and it is so hard to roll
10:41
out so hard because you don't want to
10:44
put too much water you know just enough
10:47
to moisten all that flour and I mean it
10:53
takes me a good while to roll it and
10:55
then I'll kind of let it sit in the air
10:57
dry for a little bit and then drop them
11:01
in my hot ball in broth but I think the
11:04
secret is
11:05
it's salty enough and sometimes I'll add
11:09
a can of cream of chicken soup to my bra
11:13
instead of cream of celery and I my
11:20
cornbread I make a homemade cornbread
11:23
you know no sugar you know any sugar in
11:26
it and and my dried-out white bread and
11:33
a sleeve of saltines okay and a bunch of
11:38
raw eggs never you judge I mean every
11:43
saltine crackers to just try it gives it
11:47
it gives that dressing a good flavor a
11:50
real jerk flavor but his Clifford never
11:56
given you one of my cookbooks
12:00
yeah I would say they shouldn't have one
12:08
here yeah I hear you it's no fun to cook
12:11
for one is it I think I think it's in my
12:28
second cookbook which is a green and
12:33
white check cover with an old man and
12:37
two good-looking young sons I look just
12:40
like an old man I had a fresh haircut
12:42
and I am one ugly woman oh yo man I
13:00
think yes I'm air fryer but Paula Deen
13:08
cuts the fat no not my grandmother's
13:12
dress and would not be in that one
13:16
it would not be in that women well miss
