Last week Paul show us how to make a delicious flank steak, but we need to have sides.
Scalloped Potatoes
1. Peel and slice 3 lbs of red potatoes 1/4 inch thick
2. Cook potatoes in salted water over Medium High heat until they are almost tender.
3. Pour into colander and drain well
4. Transfer to a 13 x 9 x 2 pan
Make a simple white sauce
1. Melt a stick of butter
2. Dice two shallots and toast off in the butter
3. Add 1/4 cup of Wondra flour (great for sauces) and stir into the butter
4. Stir in 1 cup of 1/2 and 1/2. Make sure you are constantly stirring. If the sauce is to thick, add more 1/2 and 1/2
5. Top with 1 cup of shredded cheddar cheese and 1 cup of shredded gruyere cheese.
6. Put in 350 degree oven. Bake until hot and bubbly - about 30 minutes. If your cheese is browning, cover potatoes with tinfoil to keep your cheese from browning too much.
Brussel Sprouts
1. Start with 1 lb of fresh brussel sprouts - washed and sliced in half

hey y'all welcome to another episode of
0:03
what's cooking with Paula Dean last week
0:06
I shared with y'all uh a recipe for
0:09
flank steak and uh I hope you enjoyed
0:12
the little piece that you saw with Tom
0:14
enjoying the steak well you know you got
0:18
to have sides when you're going to have
0:19
steak so I love a scallop potato and
0:23
it's such a nice change from just a
0:25
baked potato boil potatoes so in order
0:29
to to make those wonderful Scarlet
0:32
potatoes we're going to peel and slice
0:35
three lbs of red potatoes and I'm going
0:38
to slice them about A4 of an inch thick
0:42
and uh I'm going to cook those over
0:45
medium high heat until they're almost
0:50
tender uh you don't want to overcook
0:52
them because you don't want them
0:53
breaking up and falling apart so just
0:57
before they're done and you want to make
1:00
sure that you've cooked this in nice
1:02
salted water and um I pour my potatoes
1:08
into a collander and drain them well and
1:11
then I transfer them to a 13 by 9 by two
1:15
pan all right now all I'm going to do
1:17
now is make a simple white sauce I'm
1:22
going to uh melt a stick of
1:25
butter and I'm going to dice up two
1:28
shallots and lightly toast those off in
1:33
that stick of butter and then I'm going
1:35
to add a four of a cup of wandra flour
1:40
that's w n d r a and uh wandra flour is
1:46
a much finer flour than than normal
1:50
flour and you usually uh won't have to
1:54
worry about any lumps or clumps when you
1:57
use wand
1:58
flour so we've got our melted butter
2:02
with our shallots that have uh been
2:05
cooked off a few minutes then we're
2:08
going to stir in our flour and then
2:10
we're going to stir in uh one cup of
2:15
half and half and you'll want to make
2:17
sure that you're constantly stirring as
2:21
you pour in your half and
2:23
half so it's just that simple you'll
2:26
want to just let that cook up until it's
2:29
ni nice and thick now speaking of thick
2:33
if it's too thick all you have to do is
2:36
add a little bit more half and half and
2:41
just pour that over your sliced
2:44
potatoes and then we're going to add one
2:48
cup of cheddar cheese and one cup of
2:52
Grier that we have
2:54
grated and we're going to put those in a
2:56
350 degree oven and we're going to
3:01
bake them until they're nice and hot and
3:04
pebbly probably about 30 minutes and
3:08
you're going to have a great
3:11
uh pan of scallop potatoes now if your
3:15
cheese is brown and remember you can
3:17
always cover your potatoes with some
3:21
tinf um just to make sure that your
3:24
cheese don't get over brown or
3:28
hard and I I think uh that you'll really
3:32
like that as a change from a baked
3:35
potato and uh you know we have to have
3:39
something
3:40
green by
3:42
um by order of the food law we just have
3:46
to have to serve a vegetable although I
3:49
have to tell you I'd be completely happy
3:51
with just a steak and potato so my
3:54
family really loves brussel sprouts and
3:58
um they they have gotten real um real
4:03
hip in in uh your your finer restaurants
4:08
you will find those almost on every menu
4:12
like I said in the upscale restaurants
4:15
and uh I love cooking uh brussel sprouts
4:19
because to me it looks and tastes very
4:22
similar to cabbage and my family are big
4:26
cabbage
4:27
eaters so I'm going take a quick break
4:30
y'all and then we come back I'm going to
4:33
talk about that green vegetable that we
4:37
must have say the food
4:40
police all right our potatoes are
4:43
cooking we're going to par cook our
4:47
potatoes until they're almost done Tom
4:53
mhm do you want to know what I'm making
4:55
you I I do scallop potatoes yes Scarlet
5:01
potatoes and I've got your brussel
5:03
sprouts uhuh in the oven and I'm
5:06
probably soon going to have to take
5:07
those out cuz they're going to be ready
5:09
and then I'm going to cook you a flank
5:11
steak M so I hope it all turns out good
5:16
yeah I like those like right so I'm
5:18
going to put half the potatoes
5:21
here and then I'm going to cover them
5:23
with a cheddar and Grier do you like
5:26
Grier yes I love it
5:31
I've got some butter over here with our
5:33
shallots so I'm going to put us some
5:35
half and half in here Tom now I've got a
5:38
little WRA here you know what I'm saying
5:41
when I say that no okay it's that real
5:45
real fine flour that you can't screw up
5:48
making gravy with it won't be lumpy so
5:51
normally you couldn't do something like
5:53
this so we're just going to let that
5:55
cook a minute and let's see where did I
5:59
put our shallots oh I I heed those in
6:02
here y'all I am so involved in every
6:05
word Tom
6:06
saying I might be forgetting an
6:09
ingredient or
6:10
two but that's all
6:13
right I don't want it too thin but I
6:16
certainly don't want it too thick
6:19
[Music]
6:31
you just set them right here Tom mhm oh
6:34
I've given you the dirty job yes right
6:37
there how does that look to you oh it's
6:40
delicious yeah yeah smells good too all
6:43
right and I got the grill hot I mean it
6:46
was piping hot a second ago and we had
6:48
to turn it down I think thank
6:52
you all right we've got that turned off
6:55
thank you thank you now I'm not going to
6:56
ask you to lift anything heavier than
6:58

7:49
3300 that's 1 800 659
7:56
3300 hey friends welcome back all right
8:00
so let's talk about brussel sprouts you
8:02
know my family actually likes them
8:05
because we're cabbage lovers and they
8:07
look like cabbage and they kind of taste
8:10
like cabbage we're going to start with a
8:12
pound of fresh brussel sprouts that
8:15
we've washed and sliced in half uh we're
8:20
going to take eight slices of bacon and
8:23
I just snip my bacon up using scissors
8:27
into like 1 in square sares and I'm
8:31
going to lightly uh Brown that in a
8:35
separate Skillet all right so in a we've
8:39
got our brussel sprouts washed and
8:42
sliced into two so in a large Skillet
8:45
I'm going to add a stick of butter and
8:48
I'm going to
8:49
sauté uh several cloves of garlic that
8:53
I've sliced or minced up and I'm gonna
8:56
cook that for two or three minutes over
8:58
low heat and then I'm going to add my
9:01
Brussel sprouts and I'm going to stir
9:04
those until my Brussel sprouts are well
9:07
coated and I'm going to cook that for um
9:11
a couple of minutes and then I'm going
9:13
to add my onion I'm going to add one
9:17
sweet via onion that I've have cut in
9:21
half and cut into petals and I'm going
9:24
to cook that for two or three
9:27
minutes and
9:30
um then I'm going to Salt and Pepper it
9:33
I'm probably going to use about a half a
9:35
teaspoon of salt and a four of a
9:37
teaspoon of black uh pepper so I have
9:41
par Cooked our bacon so I'm going to
9:43
take my brussels sprouts and onions and
9:46
put them onto a cookie sheet and then
9:49
I'm going to pour my bacon and the Bacon
9:54
Fat all over my Brussel sprouts and I'm
9:58
going to cook that in a
9:59
350° oven for probably about 30 or 40
10:04
minutes and at the end of the cooking
10:07
time it should have just started to
10:09
Brown nicely and it really is a
10:14
delicious nutritious
10:17
vegetable you can eat a lot of those
10:20
with barely any calories
10:23
consumed so I hope you've liked this
10:26
idea for my two sides today and you know
10:29
I always try to send your love and best
10:37
dishes okay Tom I've got our brussels
10:40
sprouts going I'm just trying to get
10:42
them a little bit done but I I told you
10:45
that I was going to show you how to cook
10:47
the fastest bacon in the whole entire
10:50
world I could fry bacon for a crowd of
10:52
30 in like 5 minutes uhhuh it's
10:56
unbelievable now I cut this up because
10:59
because it's going to go in with our
11:01
brussel sprouts but I'm going to par
11:03
cook it just a minute not long cuz I
11:06
want some of that fat to still be left
11:08
in this bacon to to marry up with our
11:12
brussel sprouts so come look come look
11:14
at the way it's frying 5 minutes oh it
11:18
won't it won't take 5 minutes and I'm
11:21
just going to kind of par cook this just
11:23
like that little pink because I want
11:25
that
11:27
bacon to um still have some fat in it
11:30
yeah these by the way are my favorite
11:32
vegetables Brussel sprays yeah I like
11:35
those I love them too to me it tastes
11:38
just what it looks like uh little
11:40
cabbages
11:43
cabbages mm this is
11:48
beautiful beautiful
11:50
beautiful I'm I'm about to get mixed up
11:53
I think I'm going to put the onions in
11:54
here and I got shallots I'll put that in
11:57
our
11:59
potatoes our scallop
12:01
potatoes how's that do you like onion
12:04
please tell me you like I do I do yeah
12:06
onions and shallot both okay good
12:11
so do you like the honors of doing the
12:14
butt
12:16

12:19
here or no we going to put it in the put
12:21
