Scalloped Potatoes and Brussel Sprouts as Sides - What's Cooking with Paula Deen

Recently Paula showed us how to make a delicious flank steak, but we need to have sides in order to complete the meal.
How to make Scalloped Potatoes
1. Peel and slice 3 lbs of red potatoes 1/4 inch thick
2. Cook potatoes in salted water over Medium High heat until they are almost tender.
3. Pour into colander and drain well
4. Transfer to a 13 x 9 x 2 pan
Make a simple white sauce
1. Melt a stick of butter
2. Dice two shallots and lightly toast off in the butter
3. Add 1/4 cup of Wondra flour (great for sauces) and stir into the butter
4. Stir in 1 cup of 1/2 and 1/2. Make sure you are constantly stirring. If the sauce is to thick, add more 1/2 and 1/2
5. Top with 1 cup of shredded cheddar cheese and 1 cup of shredded gruyere cheese.
6. Put in 350 degree oven. Bake until hot and bubbly - about 30 minutes. If your cheese is browning, cover potatoes with tinfoil to keep your cheese from browning too much.

those wonderful scalloped potatoes we're

and I'm gonna slice them about a quarter

of an inch thick and I'm gonna cook

they're almost tender you don't want to

because we're cabbage lovers and they

look like cabbage and they kind of taste

like cabbage we're gonna start with a

pound of fresh Brussels sprouts that

we've washed and sliced in half we're

gonna take eight slices of bacon and I

just snipped my bacon up using scissors

and to like one inch squares and I'm

gonna lightly Brown that in a separate

skillet

all right so in a we've got our Brussels

sprouts washed and sliced into so in a

large skillet I'm gonna add a stick of

butter and I'm gonna saute several

cloves of garlic that I've sliced or

minced up and I'm gonna cook that four

to three minutes over low heat and then

I'm gonna add my Brussels sprouts and

sprouts are well coated and I'm gonna

cook that for a couple of minutes and

add one sweet Vidalia Onion that I've

cut in half and cut into petals and I'm

gonna cook that for 2 or 3 minutes and
