0:24
my mama and then we're gonna turn up the
0:27
grill because we're gonna have some of
0:30
the best southern barbecue from ribs to
0:33

0:34
y'all it's a first being the afar BQ
0:37
taking on the first family of five
0:39

0:45
[Applause]
0:50
[Music]

[Applause]
1:03
[Music]
1:19
my son's Jamie and Bobby get out on the
1:23
road with their show called Road tasted
1:26
well these guys came home after trip and
1:30
said mama we have found them first
1:34
family of barbecue and they're here with
1:36
us today
1:37
Hayley's you don't want I declare my
1:45
family the first family of fried foods
1:49
but Neely say their family's barbecue is
1:53
better sounds like a challenge to me so
1:57
what I want y'all to do right now is I
2:01
want to get the fried on one side of the
2:04
room and the barbecue lovers on the
2:06
other side
2:09
[Applause]
2:18
[Laughter]
2:23
[Applause]
2:38
well if y'all know anything about me at
2:41
all you know I like fried food and you
2:45
know I'm the mother of two hot sons
2:52
[Applause]
3:08
I'm a proud member of the first bride
3:11
family I'm telling you once you're a
3:16
knockout son oh that's for that blue
3:18
shirt oh thanks mom I just mama thinks
3:22
she's supported on y'all talk about
3:26
pretty I got a baby in the house that is
3:28
oh and mom I thought you were crazy but
3:31
that fried baby formula is perfect i
3:35
batter it up and deep-fry for just 2 or
3:38
3 minutes put a nice crust on it
3:39
oh he's four and a half months old he's
3:43
72 pounds so we're real real proud of
3:47
him and excited and his cholesterol is
3:50
real good it's about 300 it's about 300
3:53
so we're proud of them well let's just
3:57
start cooking we're gonna make deep
3:59
fried lasagna
4:01
yo this is simply my spaghetti sauce and
4:05
I've let it simmer for about an hour to
4:07
let the flavors blend did you decide if
4:10
the baby was gonna call you grand lady
4:12
or Big Momma you
4:14
[Laughter]
4:19
who told you about me I told Jimmy if
4:26
that baby calls me Big Mama he is cut
4:27
out of the week and that's home um I've
4:31
been embezzling for so long I don't have
4:32
to be in the way my brother Bobby
4:41
doesn't think that's funny at all look
4:46
I'm gonna tell you all this the secret
4:47
to your lasagna when you're making one
4:49
put cream cheese in it this is awesome
4:51
all right great Jamie's got four kinds
4:53
of cheeses here he's got a cheddar he's
4:54
got a Swiss he's got a greer and a month
4:58
Sorella so just alternate meat sauce
5:01
lasagna noodles and cheese and don't
5:04
forget your ricotta cheese Jamie that we
5:07
put an egg in to give it body are there
5:11
recipes you have that you don't share
5:13
the secret ingredient no no I've been
5:19
accused of telling it all you know there
5:23
was one recipe though that my ain't
5:27
Peggy gave to me she said Paula I
5:29
finally got this recipe I this woman she
5:32
said no you can't tell anybody the
5:34
recipe so to honor my aunt Peggy's word
5:39
I have never shared that recipe it's for
5:43
fruit it goes on fruit so while I've
5:47
made it for a hundred years I've never
5:51
shared the recipe because I don't want
5:54
to get my auntie in trouble all right
5:57
they're a little bit more sauce and
5:58
we'll top it with cheese yeah and then
6:01
we're gonna bake this for about 20
6:02
minutes all right we're gonna we're
6:03
gonna bake this then we're gonna tease
6:05
it again and get it just right we're
6:06
gonna pop it in the oven and we're gonna
6:08
take a quick break when we come back
6:10
we're gonna Friday
6:14
coming up I have never done this you can
6:17
call me a lot of things but you can't
6:19
call me a lasagna friar and later the
6:24
family feud heats up between the Neely's
6:26
barbecue and the deans deep fryer
6:31
[Music]
6:40
y'all okay I want to tell you that we're
6:43
usually very United in this audience but
6:46
today we're divided we got the fried
6:49
lovers on this side of the room
6:56
on this small piece of side of the room
6:59
we got the barbecue lover
7:06
and laughing and led today an egg dome
7:10
by the Neely family I'm telling you
7:19
they're troublemakers they're
7:20
troublemakers wait what are we gonna do
7:22
we're gonna we're gonna bake this and
7:24
we're gonna cheese it again and get it
7:25
just right we're gonna pop it in the
7:27
oven we're gonna refrigerate it
7:28
overnight and then I'm gonna drop it in
7:30
the deep fryer
7:41
yeah don't you I wish it were this easy
7:44
at home food fairies hang out with me I
7:51
just love it I have a two-year-old
7:55
little girl that is a picky diva feeder
7:58
and I want to know from Jamie what is
8:00
something that you made Paula when he
8:02
was a child that he ate every time and
8:04
loved it Vienna sausages yeah this was
8:13
my brother and I would stay under mama
8:17
in the kitchen I mean she would get a
8:19
pot started and we'd be in there
8:21
and to get us out of her way she would
8:23
take white bread and butter and sugar
8:26
and she would feed us those sandwiches
8:29
when we were children and I want y'all
8:32
to know I have been overweight every day
8:34
of my life I'm surprised he didn't prom
8:43
yeah look at her
8:44
there's the only thing that I really
8:47
that Mama's made that I didn't like was
8:48
bald okra I don't like boiled okra it's
8:51
kind of slimy I like it fried and dipped
8:54
in the honey mustard
8:55
but everything Goods fried and honey
8:57
mustard I'll tell you another thing that
9:01
when she's old enough to get into the
9:03
kitchen with you children are much more
9:06
prone to eat something that they
9:08
participated in the creating off so you
9:12
know encourage him to come in there make
9:14
say we're gonna make your supper I want
9:16
you to cook your supper and just make
9:19
sure it's green beans and she'll eat
9:23
them all right now this is nice and cold
9:26
we put this in the fridge got it real
9:28
firm you this is a great dish to freeze
9:30
if you want to make them ahead of time
9:32
and throw you some serving sizes in the
9:34
freezer
9:35
yeah it gets better you know with the
9:37
refrigeration because all those flavors
9:38
marry together oh well so this is nice
9:41
and stiff so you're gonna take that son
9:44
and you're gonna do want to it now I've
9:46
never done this I have never done this
9:49
you can call me a lot of things but you
9:51
can't call me lasagna fryer well what
9:55
we're gonna do we're gonna put it in the
9:57
flour yeah give it a nice flower dusting
10:00
yeah and then we're gonna put it in an
10:03
egg wash yeah and then we're gonna coat
10:06
it with these crackers and then once we
10:11
get all that flour look I'm gonna put it
10:13
right down in the fryer yeah what about
10:16
that
10:18
[Music]
10:20
let's do one more you want to yeah well
10:22
maybe three more like one for you one
10:24
for me and help me out
10:38
look at the a show I started to die
10:49
yesterday so today I'm gonna fry my
10:52
thigh
10:54
you see I gained some weight when we got
10:57
pregnant you know sympathy for my wife
11:01
say I'm hungry I'd say I'm hungry too
11:04
she'd say I'm tired I said I'm tired too
11:07
much I ate and laid down and she lost
11:13
all her weight in one day and I didn't
11:18
all right y'all
11:20
well I'm fixing to bring these out I'm
11:23
gonna look at I can't hardly wait
11:25
I see you got your plate wait I'm gonna
11:29
let these drain just a second we do a
11:34
Mexican lasagna - that's really good if
11:36
y'all can find that recipe with
11:37
tortillas and it's spicy it it's good
11:39
that's my favorite lasagna is the
11:41
Mexican lasagna so good really it's been
11:43
years since I made that Sun oh right
11:48
look I him look at him
11:51
that reminds me uncle George he used to
11:54
say him instead of here he'd say look at
11:57
him look at the cheese Oh
12:07
get Joseph up here come on sister come
12:13
on look I hear looking hey baby it's
12:19
mean you try this you won't
12:24
mind your own business back and saying
12:27
about barbecue I think it's gonna be hot
12:34
is that mmm good amen there's more than
12:48
one way to skin a cat baby you're not
12:50
good we're gonna get the barbecue yours
12:58
or Jim's coming up barbecue secrets from
13:06
the best barbecue family in the south
13:09
and later spaghetti like you've never
13:12
had it before barbecue
13:17
[Music]
13:23
hey welcome back welcome back
13:27
we got the fried over here we got the
13:29
barbeque
13:33
we got the bean family over here we got
13:37
the Neely family over here fried fried
13:40
fried fried
13:43
[Applause]
14:00
like let me show - oh wait it's doing
14:10
that long no y'all welcome the Neely's
14:17
Eugenia they are as I said at the top of
14:21
our party they're the mirror image of
14:24
the Deen family Jamie and Bobby came
14:27
home from Memphis Tennessee and said
14:29
mama we found him cooking barbecue in
14:31
Memphis Tennessee well I couldn't get up
14:35
there quick enough I've had my time up
14:37
here frying but now it's the Neely's
14:40
turn that's right I want y'all to show
14:41
me your stuff
14:43
all right Paula all of we're gonna wash
14:44
your hands we're gonna get them good and
14:46
clean wash your hands for my mama just
14:49
in case you touch the meat my mama's
14:52
with me how about mama and then I go
14:54
mama
14:56
we like to start at Neely's with a good
15:00
spare rib and we take it and what we do
15:04
is we come right down and we pull this
15:06
we cut this rib tip off you know that's
15:09
a rib tips barbecue neck bone yeah it's
15:13
exactly what it is so we pull that off
15:15
then we're gonna trim it will trim that
15:17
skirt off well you know Paula Jean and I
15:19
were highschool sweethearts
15:20
my mother and her mother they went to
15:23
high school together
15:23
well salt that meat baby all right and
15:26
keep telling me I want to hear every
15:28
minute of it some real genius gonna make
15:32
a dry rub which is a pepper Rica and and
15:36
she's gonna mix all that in and and you
15:38
know it's a barbecue seasoned dry rub
15:40
and we call it a dry rub because we're
15:42
gonna actually rub it in the meat we're
15:44
gonna spin it and y'all be nice and so
15:54
and we had a 10-year class reunion and
15:58
when I tell you honey did we have a
16:00
reunion
16:01
[Laughter]
16:05
let's flip it over very important that
16:08
you rub this dry rub all in here so I
16:10
can get him and get C's and girls and
16:12
you just rub it all in see that palm I
16:17
see your season is very very simple it
16:20
is
16:20
we wanted to marinate it this it
16:22
actually mayonnaise so what happens is
16:25
in all of our stores and even if you're
16:27
grilling at home you know you're gonna
16:29
grill we would take this and even go
16:32
into a trade and it would go into the
16:34
refrigerator for about 24 hours
16:36
we don't just like yeah after 24 hours
16:44
it's really sucked in that and I see
16:46
caramelized if you noticed our dogs I
16:49
got and then we're taking her using an
16:53
indirect heat we lay it across there 275
16:57
degrees and the secret I think the
17:01
secret to you well good the chicory and
17:16
the smoke and the aroma coming up I mean
17:20
it's just it makes your party you know I
17:22
think the real secret though patios ribs
17:25
is you use a quality premium real
17:29
absolutely you don't use an old real you
17:32
know Paula so you got to have something
17:34
pretty to start with well you see it
17:37
Carla can you smell it
17:38
oh yeah that's enough of that technical
17:40
stuff let's get down to the real
17:42
nitty-gritty so feel going all day with
17:44
that technical thing baby I mean let's
17:46
work with a pile and this is what you
17:48
get when you get done with it woohoo and
17:51
this can be eaten either wet or dry
17:54
you'll get it dry you do not get it wet
17:57
but I like it wet
18:01
because you are not my sister you like
18:04
it we had him drive when we when we were
18:06
in their Nashville store and they are
18:12
fab-u-foam me power okay come on just
18:15
cut you up a couple of bones here that I
18:18
have a question for you mm-hmm I like
18:20
the grill I like to grill a lot at home
18:22
but ribs to me or one of those things
18:24
that can be kind of intimidating mm-hmm
18:25
so I just I don't often throw rack of
18:27
ribs on my grill but would you par boil
18:29
them before you put them on the grill if
18:31
you were doing them at home I've never
18:33
I've never put river water just what I
18:35
do I rub and straight on to the grill
18:37
for for our Bobby and you and and your
18:39
home grills will be more intense heat so
18:42
it may not take us long depending on the
18:44
size of a rib you can use a much smaller
18:47
rib barbeque nerd he's got the best ribs
18:53
I've ever had that's the guy to ask and
18:55
if you don't put sauce on your honey
18:56
you're never seen you know this is good
19:01
I bought it's delicious it's delicious
19:05
it is slap delicious
19:14
[Applause]
19:15
Oh
19:16
[Music]
19:17
[Applause]
19:20
[Music]
19:26
[Applause]
19:47
coming up barbecue spaghetti and later
19:56
fried chocolate pound cake audiences
20:05
split but the deans have proved we can
20:10
find look at that phone just about
20:13
anything
20:19
barbecue secrets from the best barbecue
20:21
family in the south still to come we're
20:25
gonna be firing up the grill with an
20:26
outrageous family barbecue pros and
20:34
still to come y'all it's gonna be a
20:37
stuffed potato cooker
20:39
[Applause]
20:46
we've had a fun family feud going on
20:50
here today hat we we've had the Dean
20:52
family over here with the fried team
20:57
we've had the Neely family over here
21:01
with their wimpy barbecue we have really
21:11
had a good time today
21:12
now we've all met Pat Hatton we Pat
21:15
Neely Pat why don't you bring them two
21:18
big old brothers and years up here
21:20
Tony Tony and Mark there was a dish that
21:32
I had up there that was so good y'all
21:36
come on in guys come on in it was called
21:40
barbecue spaghetti I want you to get me
21:47
some food to cook it well I'm gonna
21:48
start with the sauce all right we
21:50
started with a base of ketchup and water
21:52
that's the base of our sauce
21:53
yeah we do balance we do Marcus over
21:56
here chopping up I don't know what he's
21:58
doing is the basil salt him in virgin
22:10
olive oil as opposed to a virgin oil
22:14
that's been around
22:17
let me just stop it we were growing up
22:19
as kids we didn't have a lot you know
22:21
father died we were young so mother had
22:24
to make all of everything she did making
22:26
a book she had to make all of us stews
22:28
you know we were all playing football so
22:30
we've come home we'd be starving and so
22:32
she would just make a big pot of
22:33
spaghetti and set it on the stove and so
22:35
when Patrick and I got ready to open we
22:38
were like we got to bring the spaghetti
22:39
in but we put a twister BBQ moving
22:42
forward so we got sugar just sorry
23:11
that's easier powder okay ground mustard
23:19
okay
23:20
little corn syrup yes sir
23:22
you got to put sugar now we need balance
23:24
problems we need balance you know what I
23:26
like about our sauce is it's really
23:28
balanced we've got vinegar we've got
23:30
sugars but you can not really tell
23:33
what's what other than when you put in
23:34
your mouth and you're like no no you
23:46
can't get his head through the door most
23:47
morning gotta have apple cider vinegar
23:51
now we're gonna cook this sauce are we
24:01
old days and you had to blow it to get
24:04
it going
24:07
all right so we're gonna put a little
24:09
olive oil in here just a little bit
24:11
warning more to try to do now is really
24:14
tall let's get this saute really Brown
24:17
really Browns really really get it
24:20
really dark and then we'll just pour
24:23
this right on overhead dude y'all cook
24:26
in the kitchen a lot with your mama you
24:33
can see they didn't miss too many meals
24:49
[Laughter]
24:55
we got all this stuff working I just
24:57
drained our pasta rested really well so
25:01
you mix in the pasta with the cooked
25:02
pork I mean you know what we really do
25:04
PO I take the bank and we let that
25:13
simmer and we let that cook in and
25:15
you're gonna need a certain amount of
25:18
time to just let it really cook in you
25:19
want those flavors and everything to
25:21
cook here weird let it simmer for an
25:22
hour I would have I'm gonna turn that
25:25
off
25:37
all right don't forget y'all nuts my
25:40
show let me pour it in it from me baby
26:01
em we're gonna put sauce the old time it
26:11
Charles house growing up was more fun
26:14
than you could check us oh yeah good job
26:17
it was like horses eating sweet feed to
26:23
spread it around baby no I'm scared oh
26:26
I'm scared dude I'm just hungry he runs
26:36
one of the stores in Memphis and it has
26:39
the highest food
26:50
[Music]
27:06
[Applause]
27:17
[Laughter]
27:32
Bobby's gonna help me from family
27:35
deserting and later it's gonna be a
27:38
stuffed potato cook Oh
27:40
[Applause]
27:43
[Music]
27:46
[Applause]
27:47
[Laughter]
27:48
[Applause]
27:55
well y'all met half of my lucky sons my
28:01
other son was talking to me early and he
28:04
said mama
28:05
you remember that chocolate pound cake
28:07
you used to make when we were the bag
28:10
lady and I said yeah I remember he said
28:13
you think you could fry it up and I said
28:18
yeah I just believe I can son Bobby hey
28:30
everybody
28:32
Neely's barbecue was one of my favorite
28:35
stops all through my summer came home
28:37
and told me that was Pat that's some of
28:39
the best food I've ever put in my mouth
28:43
[Applause]
28:45
you know Bobby I know this embarrasses
28:47
you but I'm got to say it one of the top
28:50
50 most eligible bachelors in the car
28:52
[Applause]
29:04
Jamie had so much fun with this of the
29:07
two of us I'd say I'm a little bit more
29:08
reserved I'm kind of on the shy side and
29:10
Jamie is not and when that magazine came
29:16
out we go in and Jamie precedes by every
29:18
copy of this People magazine they've got
29:20
on the shelves and parade around with it
29:24
like it was a championship belt over his
29:26
head everywhere we went he would enter
29:29
the room in front of me like this the
29:33
funny part is the young lady working at
29:35
the book store when I purchased 15 of
29:37
the sexiest bachelors in the gun all
29:49
right
29:49
Bobby's fixing to make the cake that he
29:52
probably had the most requests for when
29:55
he was running his bag-lady router
29:57
absolutely and that's the bag lady's
29:59
favorite chocolate cake all right so
30:01
what we're gonna do is we're gonna take
30:03
a variation of your pound cake and we
30:05
are going to batter it in deep fried and
30:09
I've got your recipe here all the
30:11
ingredients for your recipe here three
30:12
cups of flour 1/2 teaspoon of baking
30:15
powder salt cocoa butter vegetable
30:18
shortening eggs sugar buttermilk vanilla
30:21
extract and we could make this cake yeah
30:23
we could we could I was gonna make it
30:26
well we're not gonna make it we're not
30:28
because you know what I think that if
30:30
you really want deep fried pound cake
30:32
you know make the cake you know I'm just
30:36
gonna go get one
30:40
[Applause]
30:41
[Laughter]
30:43
[Applause]
30:48
you want it now I think that was said
30:51
like a true back you just don't get you
30:55
one so that's that simple okay
30:59
so let's cut this you know I really do
31:02
like Bobby to bake my cakes and throw
31:04
them in the freezer so what we're gonna
31:07
do I hope makes me more slap my mama oh
31:26
my god is so good I'm gonna cut this
31:33
into some little bite-size square so in
31:35
the squares about like this mm-hmm we've
31:37
got some already cut up right here yep
31:40
gosh and we can give that to the
31:43
audience you can why don't you make a
31:49
little girl real happy Bobby come out
31:53
the girl in this girl with the big ring
31:54
on right here bet you make those women
31:57
happy baby baby I don't know where he's
31:58
at I hope he ain't in the room no cake
32:02
for you oh it's almost too big to get in
32:04
your mouth
32:06
[Laughter]
32:16
she she liked it I knew she'd like yes
32:21
she liked me too
32:21
I'm you should like you hmm all right
32:25
now Bobby we're gonna take our pieces of
32:27
cake oh they're having their own party
32:29
out there I think we might have lost
32:32
control of the audience now we're gonna
32:48
take our cake mm-hmm I'm gonna just dip
32:51
it down into some beaten eggs that I've
32:53
added a tablespoon of water to and then
32:56
I'm gonna roll it in corn flakes that I
33:00
have sweetened with a little sugar and
33:04
some cinnamon and that's good mm-hmm
33:08
good yes so just like that and this is
33:13
not fattening at all no absolutely
33:16
okay now I've got some they have set up
33:20
that I've already rolled in the eggs and
33:23
the corn flakes it really is so good
33:25
no it's so good all right so how long is
33:28
this gonna fry just for a minute
33:29
oh just five minute it's gonna be
33:31
fabulous can you believe this have you
33:35
ever seen such a thing never seen it Hey
33:37
look at him he's disgusted his whole
33:39
family is disgusting
33:41
that's all right let go strut this I'm
33:44
in a minute I'm gonna be honest with me
33:46
now if I don't if I don't like this I'm
33:47
gonna tell you well I want you to but
33:49
you asked for this son so you're getting
33:52
it I'm just gonna pop them but we got
33:57
some powdered sugar you want some
34:00
powdered sugar on there let's see if
34:03
they look great oh really you think you
34:07
got enough powdered sugar I think you
34:08
need a little more who thinks that well
34:10
I get it I was kidding
34:17
or Gaz me so close to me I'm an organism
34:26
[Laughter]
34:42
