0:00
hey y'all welcome to what's cooking with
0:02
Paula Deen's podcast today and you know
0:05
uh Phil and I were talking and we
0:07
thought you know sometimes when you're
0:10
shooting positively Paula you're kind of
0:12
rushed and you don't get everything said
0:15
that you want to get said so we thought
0:18
today would be a great opportunity to go
0:21
over some of the entrees that I prepared
0:24
and we'll walk through them slowly and
0:27
like I said I'm hoping that if I forgot
0:30
anything that I'll remember to share
0:34
that with you too so today we're gonna
0:37
be talking about my fried chicken you
0:40
know I don't know of one southerner that
0:43
doesn't love fried chicken
0:45
and there is an art to frying chicken at
0:48
home you know it's a little bit of a
0:50
challenge but you can do it you can do
0:54
it and I'm gonna share with y'all some
0:57
of the things that my mother told me one
1:01
of one of the first things when you're
1:04
selecting your chicken is to buy a small
1:07
chicken your small chickens are more
1:11
tender and more flavorful than the old
1:15
birds and you know I have found today I
1:18
really have to go out and hunt very very
1:22
hard to find a two or two-and-a-half
1:25
pound chicken they're feeding them
1:28
something that causes those chickens to
1:31
get so big so quick and a small chicken
1:35
to this day is still the best my mother
1:38
always said Paula don't go bigger than a
1:41
two and a half pound chicken that's a
1:43
tall order for today but these breasts
1:46
are so big look they're the size of my
1:49
face that's a breast so I like to buy
1:54
like a two and a half pound bird that's
1:57
the perfect size and my grandmother Paul
2:02
taught me that when I'm gonna have fried
2:05
chicken for dinner that morning I should
2:08
take my chicken cut it up unless you
2:12
have bought it in pieces
2:14
season it and put it back in the
2:16
refrigerator and let it have that day to
2:19
drink up the seasonings that you put on
2:21
this so grandma always taught me I've
2:26
said it a hundred times when I was
2:29
having chicken for dinner pollen season
2:31
your chicken that morning honey
2:33
put it in the refrigerator so it can
2:35
just drink up all those seasonings that
2:38
you put on it now when you're ready to
2:43
start your supper you'll want to take
2:47
your chicken out and let it sit on the
2:49
counter you know maybe for an hour it'll
2:53
you want to just let some of that chill
2:56
get off your chicken because we're gonna
3:00
be frying this and we're gonna be
3:01
putting it in hot grease and we don't
3:04
want our temperature to fall any more
3:08
rapidly than we can help the space that
3:13
you live in really affects the way you
3:15

3:51
noble.com slash Paula that Smith &
3:55
noble.com slash Paula or call one eight
3:58
hundred six five nine 3300 that's one
4:03
eight hundred six five nine 3300 you
4:09
know I like to take my chicken out and
4:11
let it sit on the counter for about 45
4:14
minutes to an hour I like to kind of
4:16
bring it down to room temperature
4:17
because when we add it to our hot oil if
4:21
it's ice-cold it's gonna drop that
4:23
temperature and that could really give
4:27
so just remember that tip but you'll
4:30
find that that will really give you a
4:31
nicer fried chicken if you'll do that
4:35
now at the lady in sons and at home when
4:39
I'm cooking chicken I will take say if
4:43
I'm frying one chicken y'all I'll take
4:45
maybe two eggs and a half a cup of Paula
4:49
Deen hot sauce if you don't have Paula
4:51
Deen hot sauce then a good Louisiana Hot
4:55
Sauce will will certainly be okay and
4:58
you beat that with your two eggs and and
5:01
you know maybe 1/4 of a cup of water you
5:06
beat that up real good and then you let
5:09
your chicken kind of soak in that and
5:13
you can leave it for 30 seconds or 30
5:17
minutes it's it's really not a problem
5:19
I've got three eggs three beaten eggs a
5:24
little water and now I'm gonna add a cup
5:27
of my hot sauce and I know right now
5:30
you're probably saying whoa whoa aah
5:32
that's gonna be so hot we can't eat it
5:35
but it's really not you don't have any
5:38
of the heat but just the flavor that's
5:41
all you're gonna have so we're gonna
5:47
dunk our chicken and I really like if I
5:52
have time y'all I like to go ahead and
5:55
put this in the refrigerator and let
5:58
this sit for a couple of hours we've got
6:02
our Dutch oven or our deep fryer
6:05
whatever we're using the fryer chicken
6:07
in we want to fill it like 3/4 of the
6:13
way full with peanut oil now I reckon
6:16
man peanut all because it gives chicken
6:19
such a wonderful flavor but it has the
6:22
highest resistance to burning like a
6:25
if you're using a vegetable or are
6:28
a solid shortening that's gonna burn
6:33
easier than the peanut oil will so we
6:37
want to bring that to 350 degrees
6:40
and that's important that's important
6:44
that you have a way to gauge the
6:46
temperature of your peanut oil so we're
6:51
gonna shake shake the egg mixture off of
6:55
our chicken and we're gonna roll it in
6:57
self-rising flour and I always add some
7:02
extra pepper to my flour cuz mikey likes
7:05
black pepper fried chicken so then I
7:08
roll my pieces in that in that flour
7:12
mixture y'all and then you'll want to
7:16
start by adding your dark pieces first
7:18
your dark pieces would be the legs and
7:21
the thighs and the back if you cut your
7:25
back out so we want to drop those first
7:29
because those are gonna take longer to
7:31
cook your breast and your wing your Puli
7:34
bone all those are white meat and
7:37
they're not gonna take us long to cook
7:40
so drop the dark meat first and then let
7:45
that cook for a couple of minutes and
7:47
then drop your white pieces and you'll
7:52
not want to crowd your pan too too much
7:56
I do like a full pan somehow a full pan
8:00
of chicken will fry better than just two
8:02
or three pieces so all your all eight
8:07
pieces of chicken should fit nicely in
8:10
your Dutch oven which is a piece about
8:12
that tall about that big around so it
8:15
should fit nicely and we're going to
8:18
cook the white pieces too for about 12
8:22
minutes and the thicker thighs and and
8:26
legs we're going to cook for about 14
8:29
minutes so I'm giving you those times
8:34
but you would have to be the true judge
8:37
of this because my chicken may be bigger
8:41
than your chicken or your chicken may be
8:44
bigger than my chicken so you'll have to
8:47
make those adjustments yourself
8:49
so we are almost there kitty I think
8:58
I'd say it's been in there a good 14
9:05
but I'm just gonna let this cook and I
9:08
kind of got a mess here y'all so I'm
9:10
gonna be cleaning this up and then I
9:15
think that needs to try oh my settle
9:17
lips what you think see if my lips fit
9:21
that leg but I hope this little short
9:26
podcast will take you on the way to
9:30
Fried Chicken like your family will say
9:35
nobody fries chicken like my mama I hope
9:40
that happens the space that you live in
9:43
really affects the way you feel so my
