In this week's podcast, Paula talks about Macaroni and Cheese and her tips for cooking her famous Lady and Son's Macaroni and Cheese.
1. Measure two cups of raw elbow macaroni
2. Always salt your water
3. Cook your macaroni noodles so they are soft and fully cooked
4. Make sure all the water is out of your noodles by placing it in a colander and stirring it to get out all the water.
5. Really toss the noodles with the cheese so the noodles are fully coated. Make sure the noodles are hot to get the cheese melted.
6. When you use cream cheese, pull it from the block cheese. Paula uses half a block
7. Use evaporated milk. It works GREAT in Macaroni and Cheese
8. When you add regular milk so that its the consistency of pancake batter
9. Add Eggs last so you don't curdle the eggs.
10. Spray your pan with non stick spray as mac and cheese will stick. 11. Make un covered for 35 - 45 minutes. About halfway through, stir the mac and cheese.
Enjoy! Mac and Cheese is something you can really make your own.

I'm gonna talk about the lady and Sons
0:02
macaroni and cheese I think I hear more
0:08
wonderful comments on our macaroni and
0:11
cheese and maybe besides our fried
0:15
chicken and our ho cakes and our cheese
0:17
biscuits people love our macaroni and
0:20
cheese so I'm gonna try to walk you
0:23
through exactly cuz you know I can give
0:26
you a recipe but then you know you're
0:34
gonna have to really make it your own so
0:37
I'm gonna I'm gonna share its close
0:40
Cassie this is one of those things I
0:42
really don't measure don't measure
0:44
macaroni and cheese but I do I do start
0:48
off by measuring two cups of raw noodles
0:53
and I put them that in a pot of salted
0:59
boiling water
1:01
and it's important that you salt your
1:04
your water if you don't get things
1:07
salted any kind of starches like that if
1:10
you don't salt them from the very
1:12
beginning it's gonna be a real challenge
1:14
to ever get them salty enough so you
1:17
want to pour your elbow macaroni into
1:20
that pot of ball and water and now here
1:25
is the best tip that I can give y'all
1:28
you know Italians say to cook pasta al
1:31
dente well I don't like my pasta cooked
1:36
al dente I like my pasta cook kind of
1:39
soft so here's the reason it's important
1:42
that you cook that elbow macaroni until
1:45
it's soft because if you cook it al
1:48
dente and you got to mix it with your
1:51
wet ingredients it's gonna have to
1:55
finish cooking and it's gonna soak up
1:58
that little bit of wetness that you got
2:01
going in it and it's gonna be nothing
2:04
but dried pasta so you'll want to cook
2:07
that macaroni noodle
2:09
and you want to put it in a colander
2:11
when it's done
2:12
and take your spoon and toss those
2:14
elbows because they're crooked little
2:17
elbows and they're full of water and you
2:19
don't want your macaroni and cheese
2:21
watery so you want to stir that and try
2:24
to shake out all the water from your
2:27
noodles the very first tip that I give
2:30
you is probably the most important when
2:34
it comes to making good macaroni and
2:36
cheese you must make sure your macaroni
2:39
noodles are cooked soft you have to
2:43
overcook it and cook it completely done
2:47
and you'll see I'm stirring this the
2:51
next important step is to get all the
2:53
water out of your shells
2:55
out of your noodles because you don't
2:59
want you don't want your sauce wiring we
3:05
want to make sure it's drained real well
3:07
and then we're gonna start adding their
3:09
cheese's I'll probably start with 2 cups
3:15
of a sharp cheddar and then I'll take a
3:20
cube of you know a block of white
3:26
cheddar or medium cheddar and I'll cut
3:31
it up into cubes and I will stir that in
3:34
and then I'm gonna add my butter because
3:39
my noodles are still gonna be a little
3:41
warm and that'll help melt that butter
3:43
and then I'm gonna add like a half of an
3:52
8-ounce block of cream cheese I'm gonna
3:56
take that box of cream cheese and I'll
3:58
cut it in half and I'll just pull those
4:01
off pull bites off of the cream cheese
4:03
and stir that in to my pasta my cheesy
4:08
pasta and then I'm gonna add two big
4:13
heaping tablespoons of sour cream and
4:16
I'm gonna stir that up and mix that in
4:19
there and then I'm gonna add a cup of
4:24
evaporated milk
4:26
the canned milk works so so well in
4:31
macaroni and cheese so I'm gonna use
4:34
that can of evaporated milk and then I'm
4:37
gonna add regular milk until it becomes
4:42
almost the consistency of say a rock
4:47
cornbread or a pancake batter something
4:51
along those lines and then I'm gonna
4:55
pour this into a prepared pan one that I
4:59
have sprayed very very well with a
5:01
nonstick and I'm gonna pour this into
5:06
that pan and I'm gonna put it in a 350
5:09
degree oven and I'm gonna bake it
5:12
uncovered now I love to mix my macaroni
5:17
and cheese up while my noodles are hot
5:22
because that helps give the cheese a
5:25
little head start on melting so the
5:29
first thing I'm gonna do is add some
5:33
cheese calls for two cups of cheese now
5:37
you can see I got a little bit more than
5:39
two cups now I like to do chunks of
5:44
cheese in my macaroni and cheese dish
5:47
it'll be a nice surprising chunk now my
5:52
little Bobby likes a little cream cheese
5:55
in here so it's one of those things that
5:58
you can do whatever you'd like to with
6:00
it but it should be satisfying
6:06
see that cheese starting to melt and
6:08
stick to my spoon all right now I'm
6:12
gonna put a couple of tablespoons of
6:14
butter okay three go to three I don't
6:18
ever recall my mom fixing a box of
6:21
macaroni and cheese when I was growing
6:22
up now my liquid but my macaroni and
6:25
cheese is an evaporated milk so I'm
6:29
gonna put about that much sour cream and
6:32
that's really the secret ingredient
6:35
sour cream makes it creamy and eggs take
6:38
it up like a souffle
6:40
all right so in goes the eggs and that's
6:47
the last thing I put in because my
6:50
ingredients have had an opportunity to
6:53
cool down you don't want to put raw eggs
6:56
into hot macaroni noodles because it'll
7:00
curdle it'll actually cook the eggs and
7:03
you don't want that to happen
7:05
all right now I'm looking at this y'all
7:08
and I'm fixing to make a judgment call I
7:12
almost think I want a little bit more
7:14
milk in there so I'm gonna add just a
7:18
little bit of regular whole milk to it
7:21
[Music]
7:23
and if I get too much milk in it I can
7:28
always let it cook a little longer there
7:32
somehow that just makes me feel a little
7:34
bit better
7:35

8:34
that's one eight hundred six five nine
8:37
3300 oh I forgot to tell you after
8:45
you've put your cream cheese in there we
8:48
want to add three beaten eggs or I say
8:52
let's change that for two cups of
8:55
macaroni noodles let's use two eggs and
8:58
so we're gonna beat those up and stir
9:01
those in the macaroni and it will have
9:05
cooled down enough by then that you
9:07
don't have to worry about your eggs
9:08
becoming scrambled eggs so we'll mix
9:10
them well and then we're going to pour
9:13
this into our prepared pan and bake at
9:16
350 degrees and it may take 30-40
9:20
minutes and about halfway through I will
9:25
stir my macaroni and cheese just to make
9:29
sure it's cooking completely and
9:32
thoroughly all the way through I think
9:34
I'll cook it in this pan it's very
9:37
important when you're making macaroni
9:39
and cheese that you spray whatever kind
9:42
of dish you're using because it will
9:45
stick
9:49
so here we go and I'm probably gonna
9:57
bake this like it 350 for probably 45
10:04
minutes how beautiful is that
10:08
now when it's almost done yo I like to
10:13
take it out and give it a stir at the
10:21
end of the cooking time I will take it
10:25
and I'm gonna cover the top of that with
10:28
um gosh probably a couple of cups of
10:32
more grated cheese and I'm gonna stick
10:36
that back in the oven for about five
10:38
more minutes or until it's completely
10:40
melted and I think you will have just
10:44
the most wonderful dish of macaroni and
10:46
cheese and to me the that's the southern
10:50
way you know the eggs make it like a
10:52
souffle you like almost so that's
10:55
perfect about ten more minutes and I'll
10:58
top it with all cheese and give it that
11:00
beautiful cheesy top and then we'll dive
11:07
into it and see what we got but I do
11:11
hope y'all enjoy and I hope that
