Paula visits with the Russo brothers to learn how they make their homemade chicken sausage for their low-country boil. The brothers and Paula even whip up a low-country boil for their families.

Russo's Low-Country Boil Recipe:
(feeds 6-8)
Ingredients
4 lbs. Large Georgia Wild Shrimp (26-30 count)
3 lbs. Chicken or Turkey Italian Sausage
12 Ears of White or Yellow Corn (halved)
5 lbs. Small Red Potatoes
6 Oz. Old Bay Seasoning
¼ cup salt
¼ cup White Vinegar
1½ Gallon Water
Directions:
1. In a large stainless steel outdoor cooker, combine water, salt, vinegar, and seasoning and bring to a boil.
2. Add sausage and potatoes, cover and cook for 10 minutes. Add corn, cover and cook for another 10 minutes.

y'all this all started from my uncle

when I first started my catering

business uh I was buying my sausage from

my uncle and then after he passed away I

started doing on my own and he gave me

the recipe the seasonings that go in it

and uh my Aunt Joan taught me how to

make it and from then on it's just been

only thing we do is use our chicken

sausage in a low country boil I'm taking

I cut it when I buy this I buy boneless

skinless thy meat and it's not 100% so I

come back and I cut off all that excess

fat so it's not into sausage I've tried

the other stuff once before the other

type of sausage and it took me an extra

half an hour to clean all the grease out

of my cooker after I cooked my low
