- Hey, everybody, it's Bobby Deen here
0:02
with another quick, simple recipe for you
0:04
that I really think that you and your family are gonna love.
0:07
Spring and summertime are right here upon us,
0:10
thank you, hallelujah, finally,
0:12
and people are beginning to grill and smoke and barbecue
0:16
and cook all their favorite meats
0:18
and nothing goes with all of those things
0:22
like a good old fashioned potato salad.
0:24
Now, here's a version that I hope you're gonna like
0:28
It's got one of my favorite ingredients
0:30
and I could eat olives till the cows come home.
0:34
You've probably never seen a potato salad
0:36
that has Kalamata olives and pimentos in it
0:38
so today is your lucky day.
0:41
Now, if you don't like olives, sorry,
0:43
but stick with me and watch this anyway
0:45
'cause it's a very interesting recipe.
0:47
Now, I've told you all over the years many times
0:51
that my daddy, God rest his soul, Jimmy Deen,
0:53
I thought made just the best potato salad in the world
0:57
and it's funny how your food from your parents
1:01
has that effect on you
1:02
and you grow up loving whatever you get used to
1:05
but my dad used to cook the potatoes on the stove
1:09
in a big, really big tall pot
1:12
and then he would just make it warm right there
1:15
on the stove top and he would just use eggs
1:20
and mayonnaise and salt and pepper
1:23
and really, that was just it,
1:24
maybe a little bit of sour cream
1:26
but it was just, it didn't have any filler in it
1:28
so there was no celery or anything like that
1:31
and it was so simple but just so, so good.
1:34
It's funny, you know, your parents' food.
1:38
All right, we're gonna start out
1:39
with we got a couple of pounds of red potatoes.
1:42
They've already been cooked and they're cubed
1:44
and they're ready to go.
1:45
So this recipe is gonna be really just,
1:49
we're just gonna mix it all together.
1:51
So we're gonna start with mayonnaise.
1:53
We got a cup of mayonnaise here.
1:58
Also, corn on the cob.
2:00
Ooh, that's another great thing
2:02
for all your favorite summertime recipes.
2:05
You got your gardens going.
2:06
I've got my garden going at home.
2:08
We've got some good fresh parsley growing.
2:12
We've got all the things that we really like
2:15
in our summer garden coming up, bell peppers,
2:21
Okay, so I'm gonna whisk together some lemon juice,
2:25
mayonnaise and salt and pepper.
2:34
And whisk, whisk, whisk.
2:45
And you could do this one or two ways.
2:47
You could either go ahead and add,
2:49
you could go ahead and put this into your bowl
2:52
and then mix everything into it
2:54
but I think what I'm gonna do is put my potatoes in first
2:57
and I'll put my dressing right over the top of the potatoes.
3:02
So that's well combined.
3:05
And if you've got a pot like this, you're lucky,
3:11
I don't even know what that is.
3:12
It's not quite a bowl.
3:13
This looks old as Methuselah though.
3:15
I mean, I think Moses might have used that
3:18
but it's big and roomy, perfect for potato salad.
3:22
So in go our potatoes.
3:30
We'll add to that our dressing.
3:39
Mayonnaise, salt, pepper, lemon juice.
3:46
That's a good combination.
3:49
And if you wanted to add a little sour cream
3:51
to make it even creamier, you could
3:55
and if you have an aversion to mayonnaise,
4:02
Greek yogurt will substitute depending on what your,
4:13
My wife has an aversion to mayonnaise
4:15
so this wouldn't fly for her.
4:19
My kids and I would eat every bit of it.
4:22
Make sure we get all of our dressing there that we made.
4:29
Okay and again, we're gonna talk about folding.
4:34
I don't wanna tear these potatoes up
4:35
so I'm using a rubber spatula.
4:38
I don't wanna turn it into cream potatoes.
4:40
I want it to stay potato salad.
4:46
So we'll just fold all this together
4:49
and I think, you know what, I think I would serve this
4:51
right out of this beautiful old container.
4:58
This thing's been around a long time.
5:02
Okay, so now that I've got our dressing
5:04
and potatoes mixed together,
5:05
that already looks good just the way it is to me,
5:08
I'm gonna go ahead and add to that some pimentos
5:37
Some more folding action.
5:43
Little pop of red is beautiful and sort of unexpected.
5:52
Great and we'll give it a little bit more color
5:56
by adding some chopped parsley.
5:57
I've got some good fresh parsley right here.
6:11
About a quarter cup of parsley to a half cup
6:15
is what you're looking for.
6:24
You can avoid the stems if you'd like
6:28
but in the name of time, T-I-M-E,
6:35
I might leave these stems in there.
6:44
And give that just a good rough cut.
6:46
Parsley smells so fresh and delicious.
6:52
I've told y'all but I've got an AeroGarden at my house
6:54
that sits on the countertop.
6:56
So for those, for the off months
7:00
or for just, really just for convenience,
7:01
we've got a garden out in our backyard too that's wonderful
7:08
and a nice worm bed out there too connected to it
7:13
but for indoors, it's nice to have just a little AeroGarden
7:15
on your countertop and you can grow fresh parsley and basil
7:20
and I've got some Thai basil growing right on my countertop
7:31
It's the little things, you know?
7:34
You could add to this,
7:36
oh, well we already did, the lemon juice.
7:38
That's gonna give it a nice little zest.
7:41
Lemon juice works in so many recipes
7:44
just to give things a little zip, give it that little,
7:47
that little extra what is that, you know,
7:50
just what is that, that's so good.
7:54
That looks like a great potato salad
7:57
and I think when I bowl this up which let's bowl it up,
8:07
we'll plate it up rather.
8:11
I think when I plate this up for my guests or for myself,
8:19
oof, that's tempting.
8:22
I think that what I would do,
8:29
just get a little extra.
8:43
and you could squeeze a little bit
8:45
of extra lemon juice on that if you wanted to
8:48
and you could also hit it with just,
8:52
another touch of just black pepper.
8:56
And that is not your average
8:57
everyday potato salad right there.
9:00
That's got a little something extra.
9:02
So you're welcome from me to you.
