- Hey friends,
0:01
I've gotten to share a recipe with y'all
0:04
that one of my little Yankee friends taught me years ago,
0:10
Joe and Jodie Moyer from Muncie, Indiana
0:16
moved to Albany, Georgia, I was still living there.
0:20
And one day she said, I want,
0:22
I want to have you over for a white bean sandwich.
0:26
And I said, well, that sounds good to me, honey.
0:29
So it was out of this world.
0:33
So I'm going to start by cooking,
0:38
a little sack of white Navy beans, and they're dried.
0:42
These dried beans are so good.
0:44
So this is going to take a couple of hours.
0:47
But I'm gonna cook it and, wait let me think.
0:53
I'm going to cook this with some hog jowl
0:57
that I have in my freezer.
0:59
So I'm going to season it up real good.
1:02
And then after these are done,
1:04
I'm going to show y'all how to put your sandwich together.
1:08
It's out of this world,
1:10
thank you so much Jodie, I love you girl.
1:13
And this is my hog jowl that I keep in the freezer.
1:19
You can really find this around the first of the year.
1:23
Hog jowl is out in all the grocery stores,
1:27
because this is one of the foods
1:28
that we have to have on January the first,
1:32
for our new year's day meal.
1:34
So I'm going to cook my peas in that.
1:38
And I'm going to wash 'em and these work out real well
1:43
if you wanna soak 'em overnight, they tend to cook quicker.
1:51
but I'm going to just give them a rinse
1:54
and make sure there's no stones or anything in the peas.
2:00
And then we can gone be in business.
2:04
Y'all day before yesterday,
2:06
I cooked a pot of white dried Navy beans
2:11
and Michael and I, I love them so much.
2:15
And you know, I don't get many cravings,
2:20
but I have been craving a sandwich
2:24
that one of my little Yankee friends taught me how to make.
2:29
She had moved to Albany from Muncie, Indiana,
2:32
Joe and Jodie Moyer.
2:34
And we became very good friends
2:36
and she taught me how to make a bean cake sandwich.
2:40
I've never heard of it.
2:42
So I have cooked this pot of Navy beans
2:47
just to make the sandwich.
2:48
We have been, I've been cravin'.
2:50
So I'm going to take up some of my navy beans
2:56
and I'm going to just heat them up
2:58
because I want to see how much juice it has in it.
3:04
Because this calls for two ingredients,
3:07
the navy beans and flour,
3:12
and we're going to fry them up in the pan.
3:18
They are so good on the freshest white bread you can get.
3:22
You know, the kind that sticks to the roof of your mouth
3:27
and sliced onion and it's heavenly.
3:31
All right, so let's see.
3:35
Nope, that wasn't long enough.
3:38
So I'll run it a little bit longer.
3:44
Let's see, I got my pan heating Teresa.
3:50
All right, I'm going to use a little vegetable oil.
3:55
To fry our bean cakes in, not too much, but just a little.
4:01
That didn't look like much did it?
4:06
Okay it should be warm enough now
4:09
to let me know how much juice we have to deal with.
4:16
And it's really not a lot.
4:19
They have thickened up, so I'm gonna come over here y'all
4:24
And this would probably be a good time to sample your beans
4:29
and make sure you've got them seasoned right.
4:36
It's very good.
4:39
Michael will love that with jalapeno.
4:44
All right, so I'm going to put couple of tablespoons
4:50
of flour to tighten this up.
4:58
So our bean cake will stay together.
5:02
It's been a long time since I've made these.
5:07
So, you know, I really don't have a stonched down recipe
5:17
as to how much, 'cause Jodie just showed me how you do it.
5:22
So these that's enough flour,
5:24
that these on these all stay in one place.
5:29
Okay, let's come back to our stove.
5:36
I want it to be hot,
5:39
(oil sizzles)
5:41
just get a little water on my fingers
5:43
and seeing how well it does.
5:47
Okay, so I think it's hot enough.
5:56
I like to make 'em, you know,
5:57
'bout the size of your white bread, 'bout like that.
6:07
You wanna eat one Teresa,
6:09
- [Teresa] Yum, yum.
6:12
- We gon' have enough there
6:13
to get us to Atlanta, you know it.
6:16
(Teresa laughing)
6:19
(oil sizzling)
6:24
- [Paula] Okay, start movin' that about.
6:33
You know, there are a lot of vegetarian burgers now,
6:41
so it's kind of, I think maybe
6:46
this sandwich that Jodie taught me how to make
6:48
was a little ahead of it's time.
6:53
Look at that.
7:01
And see that flour, how that flour keeps it together Teresa.
7:08
- [Teresa] That's amazing.
7:10
- [Paula] Uhhuh.
7:11
- [Teresa] Oh my gosh, I can smell one.
7:14
- [Paula] Kinda reminds me of the corn fritters.
7:18
I just flipped one.
7:21
Now I'm fixing to flip the other one.
7:24
Whahoo, Jodie, Jodie,
7:28
Jodie, Jodie, come odie.
7:32
Just into rhyme's today I think.
7:34
(Paula and Teresa giggling )
7:37
Mmhm, this one's the prettiest.
7:39
Like it had the most heat,
7:41
It was in a good spot in the pan.
7:46
- [Teresa] That's kind of a difference too, I feel like,
7:47
on gas ovens versus I feel like you don't get the same.
7:52
- [Paula] Oh honey, I am ready.
7:55
- [Teresa] To go back to gas?
7:56
- [Paula] Uh huh, but you know what?
7:57
I didn't think I would like this, cooking on this,
8:02
what is this kind of top called?
8:04
- [Teresa] A convc- is it convection?
8:06
- [Paula] No...its not that.
8:10
You know the one thing I have to say about it,
8:12
is it's so easy to clean.
8:15
- [Teresa] Mmhm.
8:16
- Where my gas range is a pain in the but.
8:23
But I'm still looking forward to getting back to my gas.
8:27
- [Teresa] It just cooks so much evenly.
8:29
- [Paula] This surface gets hot very quick.
8:40
So I hadn't seen Joe and Jodie,
8:44
since probably 1986 or 1987, they moved back to Muncie.
8:53
Joe was transferred down here
8:55
with Coca Cola or PepsiCo, I can't remember which one.
8:59
But we came to love them very much
9:03
and was sad when they went back to Muncie.
9:09
And I love Jodie's mother Bee, and the children.
9:16
Our children loved to play together.
9:23
Okay, they getting close Teresa.
9:26
I'm gonna come over here where I'm ready
9:29
to put our sandwich together.
9:40
Look at these Teresa, I think those are ready.
9:47
- [Teresa] I say yes.
9:52
- [Paula] Put 'em up here on a paper towels
9:54
and let them drain.
10:05
And now this is the way Jodie taught me to eat it.
10:10
And it was right up my alley.
10:14
She actually told me to use the white bread.
10:18
That's as fresh as you can get it.
10:20
I don't have swept white bread.
10:24
So I'm going to use what I've got,
10:26
which is I think they call it
10:29
a white-wheat or something like that.
10:33
- [Teresa] It's half healthy.
10:35
(Both laughing)
10:37
- Yes, and I put a good bit of mayonnaise.
10:43
'Cause like I said, I'm a condiment girl.
10:46
All right, and now we're gonna, slice us some onion,
10:57
and I'm gonna slice it, kinda as thin as I can.
11:07
Okay.
11:15
- [Teresa] Nice.
11:16
- [Paula] Mmhm, this is a fabulous knife.
11:20
I can't see, you know, I can't tell thickness anymore.
11:26
I probably could, if I could see again,
11:29
I probably could have gotten a little thinner.
11:36
Okay, so ennie meanie minie mo,
11:39
which one should we go?
11:42
- [Teresa] Go with the fatter one.
11:46
- [Paula] Gonna put that on there.
11:50
This is not a fancy, dainty sandwich.
11:59
But it's a good one.
12:00
Hear that crunch, do you hear that crunch Teresa?
12:02
- [Teresa] I did.
12:04
- [Paula] Whoa, so there we go.
12:08
Jodie Moyer's white beans sandwich.
12:15
Okay Teresa.
12:17
- [Teresa] Well you're just gonna have to bite in
12:19
and then I'll get it after.
12:20
- No, you gotta help me.
12:22
- [Teresa] I'm going to help you eat it, don't worry.
12:23
- Okay.
12:38
This is good as I remember Jodie,
12:41
I hope should you see this video.
12:48
I hope that it find's y'all well
12:50
and happy and hopefully you're a grandma now,
12:55
and hopefully Joe's retired
12:56
and y'all enjoying life together.
12:59
So I loved that the time I did
13:01
get to spend with you and your family Jody
13:04
and I'd love to hear from you, so love and best dishes girl.
13:10
Mm mm, mm.
