0:01
It's Bobby here on the Paula Deen channel at YouTube,
0:05
and I've got another great recipe for you today
0:07
that is a little bit seasonal.
0:09
It's perfect for this time of year, really hardy
0:12
and your friends are gonna love this.
0:13
Especially if you're sitting around watching the big game
0:16
or Braves or the Bulldogs or whatever the case may be.
0:20
It is a Vidalia onion, cheese dip
0:23
and this is from one of my mom's magazines.
0:26
My mom's magazines are super popular and they have
0:30
just tons and tons of great recipes
0:32
that are simple, delicious and just full of flavor.
0:36
So the Vidalia onion cheese dip,
0:38
let's take a look at what is involved here.
0:41
Two 8 ounce packages of cream cheese,
0:44
and these have been sitting out on the countertop,
0:45
so they've softened a little bit.
0:46
They're not, you know, straight cold blocks of ice
0:49
from the refrigerator.
0:51
Got some fontina cheese, also
0:53
Vidalia onion and some mayonnaise,
0:58
and of course, about eight pieces of nice crispy bacon.
1:04
This recipe has a lot of mixing involved
1:06
and not much else to it.
1:07
We're gonna bake it off in the oven
1:09
when we finish mixing everything.
1:11
So let's just go ahead and get started.
1:13
Our eight ounces of cream cheese
1:17
and our twin other eight ounces of cream cheese.
1:23
And to that, I'm gonna go ahead and add the whole jar.
1:26
This is eight ounces, so it's one cup of mayonnaise.
1:30
This is not a recipe that you're gonna eat all alone.
1:33
You're gonna invite some friends to,
1:35
to share this with you
1:37
'cause you don't want to eat that whole thing.
1:39
All right, mom has got a, yeah,
1:42
nice selection of tools here,
1:46
and this one's too big.
1:49
Oh, look at that, made it work, made it work.
1:52
Uh oh, technical error.
1:59
So I performed a simple surgery
2:03
on this mayonnaise jar to get the, uh,
2:05
to get the head of that spatula out was not easy.
2:09
It was a spat-edectomy to get to it,
2:17
eight ounces of mayonnaise
2:21
and you don't wanna waste a drop.
2:25
If you've got a little bit left in there
2:27
then make yourself a sandwich
2:30
and whatever your favorite brand of mayonnaise is.
2:35
You see the one my mama likes is
2:36
what she's got here in the house.
2:40
So our mayonnaise and cream cheese,
2:43
let's go ahead and start to beat this together.
2:55
Let's go ahead and beat our cream cheese
2:57
and mayonnaise mixture together.
3:03
Let's add to that our fontina cheese,
3:10
and I think I might just use the spatula
3:15
Now that we've got a soft cream cheese
3:18
and mayonnaise mix together,
3:19
I think what I'll do is just use a spatula
3:21
and sort of fold all this stuff together,
3:35
Here we go, and Vidalia onions, if you don't know,
3:38
if you're not from around here,
3:42
Vidalia onions are the most beautiful
3:45
delicious, sweet onion ever.
3:48
And they're grown right here in the city of Vidalia,
3:52
just down the road from Savannah
3:55
and they are wonderful
3:59
and seasonal, you can't get 'em year round.
4:01
They only grow at certain times of the year.
4:06
Just fold, fold, fold.
4:07
You can see my fontina cheese is getting married
4:10
in there with my cream cheese and my mayonnaise.
4:15
Looking good, getting married, coming together.
4:22
And you could still use your hand mixer at this point
4:24
if you wanted to, but ,um,
4:27
you know, little elbow grease never hurts.
4:31
Now to that we'll add our onion.
4:37
That's a big, big, old sweet Vidalia onion.
4:45
And if you have problems with your eyes watering on you
4:47
while you're chopping your onion,
4:49
you could always chew a piece of gum,
4:51
and that really helps a lot
4:54
to cut down on your eyes, watering and crying.
4:57
My mom has even got some really funny,
4:59
I don't know if she still got 'em or not, but she,
5:01
she used to have some really funny looking
5:04
onion cutting glasses.
5:05
Maybe some of you remember?
5:07
We used to pull 'em out from time to time on, on mom's show.
5:10
They were really funny.
5:11
We all, we all wore 'em one time or another.
5:14
So we'll just hand mix this.
5:19
That is looking really, really good.
5:21
Like I said, if you wanted
5:22
some roasted red pepper would really be nice in this,
5:26
or whatever else you can imagine.
5:30
Okay. I think we've done a nice job with that.
5:34
And we have got a small bacon dish here
5:38
and I've sprayed it with a little bit of olive oil,
5:42
hoping that we don't stick.
5:46
We'll just go ahead and
5:49
sorry, Teresa. I'm sort of going away.
5:51
- [Teresa] That's okay.
5:53
It's gonna be gooey and ugh,
5:56
- Gooey hot and delicious, ooh, what a great mix.
6:01
If you're liking well, like I said
6:04
if you're liking football season,
6:06
or if you're enjoying watching those good old Atlanta Braves
6:08
at this time of year though, man, October?
6:11
I think October might be the best month
6:13
out of the, excuse me, late September, going into October
6:17
these might be the best sports months
6:18
and also my favorite weather months
6:21
out of the year too I think,
6:22
but as far as sports is concerned?
6:24
If you're a sports fan,
6:25
September and October, you got it all.
6:28
You got college football, you got baseball, you got NFL.
6:34
You got all sorts of stuff going on,
6:35
and this is a perfect dip.
6:39
This is, this is looking more like a casserole,
6:42
but look how good, so creamy.
6:45
And you can imagine now,
6:46
we're gonna put this into a 350 degree oven.
6:48
We're gonna bake it for probably about 30 minutes.
6:51
I think that's what the recipe calls for?
6:55
40 minutes, 30 to 40 minutes.
6:57
We'll check it at 30.
6:58
Mamas' oven kind of cooks hot.
7:00
So that looks really, really good.
7:02
Dirty up my hands here, so.
7:07
They've been washed and I'm about to wash 'em again,
7:15
this Vidalia onion cream cheese mayonnaise.
7:19
Man, I forgot the bacon.
7:21
I'll put the bacon right on top,
7:22
you watch how I do it and fix it on top.
7:27
So I've got my mixture in the pan here
7:29
and the bacon is gonna come afterwards.
7:32
We'll bake this in 350 cream oven
7:33
for about 30 to 40 minutes,
7:35
and then when it comes out,
7:36
I'll cut up and sprinkle that bacon
7:39
all over top and it going to be fantastic,
7:41
and we'll take a little break.
7:43
Our Vidalia onion cheese dip has come out of the oven.
7:46
It's golden brown, it smells wonderful.
7:49
It looks so good and the last step is
7:52
I've got chopped bacon here,
7:56
got six slices of crispy bacon.
8:00
I'm just gonna evenly spread it across the top of that dip.
8:04
This is gonna be fantastic.
8:15
don't want any empty spots.
8:21
Ooh, that looks good.
8:22
Let's give it a taste.
8:29
Creamy, delicious, smells like Vidalia onion.
8:33
Look at that cheese dripping.
8:45
- [Teresa] Forgot how good it was, didn't you?
8:47
- Man, I don't eat like that every day.
8:56
Make this when you get a chance.
8:58
Till next time, I'm Bobby.
