- It's summertime, y'all,
0:02
and if it wasn't for my air fryer,
0:07
I might not cook all summer long.
0:10
It's so hot out there.
0:12
- [Teresa] Yes.
0:13
- I got in my car yesterday,
0:14
and my temperature said 97 degrees.
0:18
It burned my butt.
0:19
- [Teresa] We went from zero to nothing.
0:22
It was beautiful and then all of a sudden
0:23
it was hot and humid.
0:24
- Over.
0:25
I don't have a speaker on.
0:27
I don't have a--
0:28
- [Eddie] Oh, I didn't mic you up today.
0:31
- I just realized I didn't have a mic
0:33
and I'm just a-talkin'.
0:35
- [Teresa] Oh well.
0:37
- Okay, I'll talk loud and we won't need one.
0:41
So, anyway, you know, this time of year,
0:45
most I don't even wanna cut on our stove.
0:48
So, I'm gonna do, of course I got my stove on.
0:53
But, I'm gonna share with y'all a dessert,
0:58
that tastes so good in the hot weather.
1:01
And, it's a vanilla bean caramel icebox dessert.
1:05
And, Michael and I adore ice cream (dog barks).
1:08
What Lulu?
1:10
Michael and I adore ice cream.
1:12
In fact, we'll eat every night.
1:16
We'll eat a little bowl of ice cream,
1:18
or I buy those little miniature cones,
1:22
you know the waffle cones.
1:24
And, we sat here last night,
1:26
and each ate two of those a piece.
1:28
'Cause they miniature, you know (laughing)?
1:31
So, this is very, very easy.
1:35
It takes more time than talent.
1:39
So, I'm gonna put in two cans of sweetened condensed milk.
1:47
(dog barks) What's her problem?
1:49
- [Teresa] She's not getting attention.
1:50
- Oh, does she want a treat?
1:54
- [Teresa] Probably.
1:55
- Do you want a treat, baby girl?
1:59
- [Teresa] Is that what you're looking for?
2:00
- See if she wants a treat Eddie.
2:04
See if she wants a treat.
2:06
- [Teresa] Well come here.
2:07
- Is that what you want?
2:08
Is this what you want, oh.
2:11
- [Teresa] Oh, I'm gonna be your best friend today.
2:13
There you go, oh, off she goes.
2:16
- You didn't make her pay for it.
2:18
- [Teresa] Oh, I'm sorry.
2:20
- (laughing) She got a free treat.
2:24
- [Teresa] And, that was the last one of this bag,
2:26
just so you know.
2:27
- Okay.
2:29
Well, that's their favorite treat.
2:32
All right, so this is to be done in a double boiler.
2:36
Well, somehow along the way,
2:41
my double boiler has gotten lost.
2:45
So, two cans of sweetened condensed milk.
2:49
And, I'm gonna add a tablespoon of vanilla paste.
2:58
That may take a while for this to come out.
3:02
See how thick it is.
3:04
- [Teresa] I have never used vanilla paste before.
3:05
- It's a lot richer than--
3:10
- -I mean, look at that, it's like those beans
3:12
have been cooked down
3:14
to insane taste.
3:23
Oh yeah, yeah.
3:31
Now, we're gonna just stir this
3:36
on top of this double boiler that we have rigged up here.
3:40
It's just a regular pot, whoa,
3:43
a regular pot with a glass bowl over boiling water.
3:50
And, we just gonna let this cook
3:52
'til it's a nice caramel color,
3:55
and that very well could take two hours, y'all.
3:58
But, it's worth it, we're gonna have a big amount.
4:01
And, I guess you could always buy caramel sauce
4:05
at the grocery store.
4:09
It's certainly less expensive to do it this way.
4:13
I'd have to go one more step further and say it's better.
4:18
So, two hours, just keeps stirring.
4:21
The little chocolate paste is, I meant the vanilla paste
4:26
is already giving it a little head start on the color.
4:31
Thank you, Teresa.
4:35
You know, there is something that I wanted to say,
4:40
just hold on Eddie.
4:42
You can look at that sweetened condensed milk,
4:49
while I'm gone.
4:51
But, this is important to me,
4:55
that I talked to Angie Renew.
5:03
Angie Renew sent me the sweetest letter, y'all.
5:09
And, I just loved what she said.
5:15
She said, "Dear Miss Paula,
5:19
"after watching one of your videos,
5:21
"struggling with getting the dough mixed up
5:24
"with your butter,
5:26
"I decided to order this blending for you."
5:32
Oh gosh, "It's stainless steel, so I hope it will last."
5:36
I love this.
5:37
This would be perfect for Michael to eat,
5:41
(laughing) or Jamie, he's got the biggest mouth.
5:44
"You can use it for multiple purposes.
5:46
"I saw this being used on another YouTube channel,
5:50
"and immediately thought of you.
5:53
"I hope it works for you."
5:55
How sweet is that?
5:56
- I'm gonna have to look up a recipe that we can use it.
5:59
- I know, well, anytime you're mixing up biscuit,
6:01
or any kind of dough.
6:04
She said, "Keep your awesome videos coming.
6:06
"After all these years, you're still my favorite."
6:10
That's so sweet, Angie.
6:13
And, I've got a picture here.
6:17
I think you may have--I don't know.
6:22
- [Eddie] I, in fact, put that together here.
6:23
- So, we gonna send that picture to you, Angie,
6:26
with a little message.
6:28
But, thank you so much about thinking about me.
6:32
And, I will say this, you know,
6:34
as you get older, you lose the strength
6:38
in your hands, in your arms, something fierce.
6:42
So, I do find that I'm struggling more
6:46
than I used to have to struggle.
6:49
So, this is gonna come in so handy.
6:53
I mean, isn't that a great thing
6:54
- And, people are so sweet.
6:55
- I wish I'd have thought about it, I know it.
6:58
The folks that watch my channel
6:59
and have followed me over the years,
7:02
are the sweetest people in the world.
7:05
They don't have a mean bone in their body.
7:07
- Nope, they don't.
7:08
- Which is so refreshing.
7:09
So, thank you, Angie.
7:14
- We'll be back.
7:15
(laughing)
7:17
- It's almost there y'all,
7:20
maybe 30 more minutes.
7:23
All right, so y'all, it really did take about two hours.
7:30
But, it's no trouble, just as long as you're gonna be
7:35
in your kitchen.
7:37
Just give it a stir once in a while.
7:40
Now, we're gonna add,
7:42
now that it is gotten the color we want,
7:45
I just poured in a half a cup of heavy whipping cream,
7:52
and then we're gonna put this in the refrigerator
7:55
and let it cool completely.
7:57
And then, we're gonna put our ice cream dessert together.
8:02
This is some serious, good stuff, y'all.
8:07
All right, y'all (rustling).
8:09
- [Teresa] 63, 63.9, so we're right there at 63.
8:12
- All right, so you saying it's gonna take this whole thing.
8:16
(rustling)
8:18
- Whoa, okay (laughing), I like that.
8:23
All right, so I'm lining our dish with parchment paper,
8:28
so when we get ready to take it out and cut us a slice
8:33
of ice cream, we can just lift it out with those handles.
8:37
And, I may have to swap jobs with somebody,
8:44
but I'm gonna see if I can't do it.
8:46
(clattering)
8:48
- How about I you get started.
8:49
- I'm gonna get a hard spoon.
8:54
(rustling)
8:57
Yeah, I think if we use the--
8:59
- Oh, yeah.
9:01
- --a firmer (beeping).
9:04
There we go.
9:08
That's too soft.
9:10
So, I'm gonna have to use something that'll let us dig.
9:16
Now, you can use any brand that you would like.
9:22
I think a coffee ice cream would be good,
9:25
but I tell you what, here at the Deen-Brewer house,
9:30
we love vanilla.
9:34
All right, now I'm just gonna take my hands,
9:37
and pack that down.
9:40
- I don't think so.
9:41
- And, that should be like half.
9:44
Woo, that's cold.
9:47
The recipe for the ice cream, y'all, calls for two 14,
9:53
isn't it two 14 ounce containers of ice cream?
9:58
So boy, Heidi, when you start putting your hands on it,
10:06
it melts pretty quick.
10:08
Oh, it's so cold.
10:10
If you're in a real big hurry,
10:12
and I have done this, not in a double boiler,
10:18
but you have to watch it very, very closely, you know,
10:21
just in a regular boiler.
10:24
Okay, I'm just gonna level this out,
10:26
and now, I'm gonna add one cup
10:32
of the caramel sauce over our ice cream.
10:38
- [Teresa] And we did let that cool down.
10:39
- Oh yes, you have to let this cool
10:41
or you will be having a milkshake,
10:50
instead of a slice of ice cream.
10:57
If you do this just on top of the stove
11:00
in a regular sauce pan, that probably would get much darker.
11:06
You know, I have in the past, Teresa,
11:11
caramelized the sweetened condensed milk
11:15
in boiling water and a sauce pan on top of the stove.
11:20
And, that works real good too.
11:24
Okay, look this at this.
11:28
You know, now at this point,
11:32
I'm thinking, who knows,
11:35
you might like some nuts (laughing),
11:39
or another spoon full of sugar (laughing).
11:45
I'm kidding (rustling).
11:46
All right, now we're gonna put this back
11:48
in the freezer and let it get hard again.
11:50
- [Teresa] No, you put more ice cream on top.
11:52
- Oh, I'm gonna go ahead and do that now.
11:54
- [Teresa] Yes, ma'am.
11:54
- I thought I needed to let that firm up some.
11:59
- [Teresa] Nope, we let everything firm up.
12:04
Cut it in slices.
12:06
- That, suits me.
12:07
- Let me help you.
12:08
(laughing)
12:10
Not that I'm much help, but--
12:15
- Frozen ice cream is hard to--
12:18
- Work with.
12:19
- Yeah, It's hard to work with.
12:20
- And, you really are not gonna need this whole container,
12:22
'cause this is a lot larger than what you need,
12:25
but at least you can buy one container,
12:28
instead of having to worry about the two.
12:31
And, they make it pretty easy by telling you half.
12:38
Let me know if you're gonna need more.
12:40
I don't know that you are, but,
12:43
knowing you, you will.
12:45
- Yes.
12:47
But, that's all right,
12:48
you know I don't mind using more than it called for.
12:52
- Versus less.
12:54
- Yeah, because you keep this in the freezer,
12:59
and all you have to do is take it out and slice it.
13:01
- Yeah, this will last.
13:04
Oh, I'm sorry, I'm shirking on my duties.
13:11
Okay, go ahead and finish it.
13:13
- Let me get this down first, please.
13:27
Yes, ma'am.
13:32
- That's all we have left.
13:33
- (laughing) Well, stick it in there.
13:36
- So, you can't have anymore.
13:39
Or, either we can eat it.
13:41
- All right, so we used a whole gallon of vanilla ice cream,
13:46
homemade vanilla ice cream.
13:48
And, we just covered it with a parchment paper.
13:53
It's going in the freezer now.
13:55
And, when we get ready to serve it,
13:57
I'll be able to pull it out by the handles
14:00
of the parchment paper.
14:02
And then, I will drizzle it with more caramel sauce.
14:07
This caramel sauce is unbelievable, y'all.
14:11
Worth every minute.
14:13
It's not hard, you just can't leave your kitchen
14:17
for a couple hours.
14:19
- [Teresa] Yum.
14:20
- Uh huh, uh huh (laughing).
14:23
Look at this wonderful summer dessert.
14:34
So good.
14:35
Can I cut you a piece?
14:36
- [Teresa] Yes, please.
14:37
- Yay (laughing), yay, yay.
14:40
Eddie, Eddie (laughing).
14:45
- [Teresa] Eddie says, "I said yes."
14:47
- Eddie's grinnin'.
14:52
Oh, my heavens.
14:56
- [Teresa] Ooey and gooey.
14:57
- I think we could have left it
14:58
in the freezer a little bit longer.
15:00
- [Teresa] You know, we don't wait very long.
15:02
We're not too good at waiting.
15:03
- I know, we're not patient.
15:04
- [Teresa] People.
15:11
- I'm so glad that we used the parchment paper.
15:15
All right, now, we just need another little spoon.
15:18
- [Teresa] I'll grab it for you.
15:23
- Thank you.
15:26
This is, yeah, and get you a spoon to eat with.
15:33
Okay, there you go, enjoy yourself.
15:35
- You have to grab your spoon too.
15:36
- Oh, I am.
15:38
Eddie can I cut you a piece now?
15:40
- [Eddie] I'll cut a piece in a minute.
15:42
- Okay.
15:43
- [Teresa] He waits, you know,
15:44
he does this whole dinner thing.
15:45
- He's got patience.
15:46
- [Teresa] We don't.
15:50
- All right, lets see.
15:54
(scraping)
15:56
- Michael, girl would wanna shoot me (laughing),
16:01
if he knew I was up here eating this stuff.
16:04
- [Teresa] Without him?
16:09
- Think liver lips likes it.
16:12
- Very much.
16:14
(laughing)
16:15
- Okay, Terese.
16:18
- Put that back in the freezer.
16:19
- See how easy by putting that parchment paper in there.
16:35
Whoa, now y'all this caramel sauce,
16:41
will keep in the refrigerator for a couple of weeks.
16:46
But, I'm thinking, let's freeze it.
16:55
(laughing) That 'bout knocked me off my feet.
17:02
Just when I thought ice cream couldn't get any better.
17:14
Oh my goodness, lets go sit on the back porch and rock.
17:18
- [Teresa] Love it.
17:19
- And, eat our ice cream.
17:22
It's out of this world, y'all.
17:29
Simple and wonderful.
17:33
One of the best dishes (laughing) in the heat.
