- Hey, I'm JB Dean at the Chicken Box,
0:02
and if you're here with me now at the Chicken Box,
0:04
Theresa needs some videos,
0:06
so she comes chasing me down here at the Chicken Box.
0:08
Well, let's see, what have we done?
0:10
We've done our broccoli salad.
0:12
I think we did our chicken salad.
0:14
Maybe we've done our pasta salad.
0:16
Did we do our egg salad?
0:18
- [Theresa] We've done egg.
0:19
We have not done pasta salad.
0:20
- Well, maybe we'll do pasta salad one day.
0:22
We're not doing pasta salad.
0:23
Today, we're doing pimiento cheese.
0:24
Pimiento cheese is one third
0:26
of the Trio sandwiches that we sell down here.
0:28
So now you have your egg salad, you have your chicken salad,
0:32
and now you get your pimiento cheese.
0:33
Then you cut those in half
0:35
and you put the three halves together,
0:36
and that's a Trio sandwich.
0:38
So it's a sandwich and a half,
0:39
and it's one of the items that we've done
0:42
since Bag Lady days so many years ago.
0:44
This is really simple.
0:46
This was my brother's recipe.
0:48
He was in charge of doing the pimiento cheese.
0:50
So the first thing that we're gonna start with,
0:53
we got a nice big bowl here with 16 ounces of cream cheese.
0:57
This has been sitting out on the counter for a while.
0:59
Now you don't have to use five bags
1:02
of shredded cheddar at your house,
1:04
but you can if you want to.
1:05
All right, I like to do this with gloves,
1:08
'cuz this cream cheese,
1:10
just makes it a lot easier to work with.
1:12
We're gonna get all that working together in just a second.
1:14
We've got our pimientos that we've strained out.
1:18
I'm not sure how many that is,
1:20
but that looks like enough for here.
1:23
Don't y'all love every time that I've come on,
1:26
there is no more measuring?
1:28
I tell you what, after we opened May Day,
1:31
so coming up on two full months through here.
1:36
And the hardest thing for me
1:39
has been formulating the recipes.
1:40
I just don't ever do it.
1:42
I just say, that's enough.
1:45
And to this, just a little bit of salt.
1:51
We really don't need a lot of salt for this.
1:54
But what I do love is black pepper.
1:58
It's really pretty in there too.
2:00
So I'm pretty liberal with the black pepper,
2:05
I'm probably gonna go like maybe a tablespoon
2:11
of Texas Pete in here.
2:13
It gives it, it's that thing that people say, what is that?
2:16
I like to have a what is that.
2:17
So it doesn't make it taste like Texas Pete.
2:19
It doesn't make it hot, doesn't make it spicy,
2:22
it gives it something that people say, "What is that?"
2:25
So with our mayonnaise now and everything in here,
2:29
this is the fun part.
2:30
You can call your kids.
2:32
Gonna work all this together,
2:34
get this cream cheese spread out.
2:36
Now this is a great recipe,
2:38
'cause it will hold for a long time too
2:40
in your refrigerator.
2:41
This will last you easily a week.
2:43
But the challenge is cause of the amount
2:46
of cream cheese in it, it gets really stiff.
2:48
So if you want to be able to spread this out,
2:51
you might take it out, add a little bit more mayonnaise
2:53
after a day or so, or let it sit on the counter
2:55
before you start making sandwiches.
2:57
Cause you know what happens when cream cheese
2:59
when it gets into the refrigerator, it really firms up.
3:07
This is actually the funnest part of my day.
3:09
It's getting my hands back into the food.
3:16
Pretty good mix, looks good to me.
3:27
It's so funny, I just heard somebody
3:27
on the other side of the wall say,
3:28
"I've never had collard greens before".
3:30
We have so many different people that visit here.
3:34
They never have collards, they never have pimiento cheese.
3:45
Fresh pimiento cheese is one of my favorite things, y'all.
3:50
And thank you Bobby, for the recipe for pimiento cheese.
3:52
Now y'all get yourself down here to the Chicken Box.
3:57
We'll see y'all around the kitchen.
