- Hey y'all, it's Jamie Deen. I'm here at mama's house.
0:03
There's only one football game left.
0:06
Oh, it's the best in the worst of times.
0:09
we're down to the big game y'all.
0:10
And nothing says big game better than chicken wings.
0:13
So today, we're gonna do a delicious
0:15
Asian sweet sauce with chicken wings
0:18
that we're gonna start off in a fry pan,
0:21
but we're gonna bake, so you can eat twice as much.
0:24
I'm here at mom's, and mom's standing over there.
0:26
And there's a lot of ingredients in front of me
0:27
so I'm all, mom, get in here.
0:30
- [Paula] Oh, I'd love to.
0:31
- If you are already subscribed to our YouTube channel,
0:34
you all make sure, and subscribe to mom's YouTube channel,
0:37
where there's hundreds of recipes just like this,
0:39
that are delicious and easy that we love to cook together.
0:43
And here's Paula Deen now.
0:44
- Just makes me sick that I can't pick him up
0:46
and rock him like I used to.
0:48
- I can't pick up either one of my two oldest boys either,
0:50
so I know how you feel.
0:51
Okay, mom, to the book.
0:53
- What would you like for me to do?
0:54
- Sweet and sour chicken wings. You start.
0:56
- I love anything with the Asian flare, Jamie.
0:58
- You start from here. - All right, sweet and sour
1:00
chicken wings. Whose book is this?
1:02
"At the Southern Table."
1:03
- So y'all, these ingredients,
1:05
we're gonna put into a sauce pan
1:06
and I'm gonna put them on a low heat.
1:09
And we're gonna mix all these together.
1:11
- So where do we start with mom?
1:13
- Well, you got your oven preheated to 350
1:16
and you've got pan lined with a with a foil.
1:19
- Not all the words, just the list of words.
1:23
- So in your large sauce pan,
1:25
you're gonna put a cup of pineapple juice.
1:28
- Oh, how handy that I happen to be holding
1:30
a cup of pineapple juice.
1:32
- [Paula] Two thirds cup of ketchup.
1:34
- [Jamie] We're gonna put our ketchup in.
1:36
- [Paula] Two tablespoons of firmly packed,
1:40
- [Jamie] Oh, you know, brown sugar is a great ingredient
1:43
to so many different kinds of sauces.
1:46
This is gonna give us the sweet
1:48
in our sweet and spicy sauce. All right.
1:51
- [Paula] Three tablespoons of rice wine vinegar.
1:55
- [Jamie] Three tablespoons rice wine vinegar.
1:57
- [Paula] Two tablespoons of soy sauce.
2:02
- [Jamie] Soy sauce adds a little bit of sodium.
2:04
- [Paula] A fourth of a teaspoon of garlic power.
2:08
- [Jamie] Garlic powder.
2:09
- [Paula] A fourth of a teaspoon of hot sauce.
2:13
A fourth of a teaspoon is not much.
2:15
Hot sauce isn't so, something like that.
2:19
You can do it according to your tone, your taste buds.
2:23
- We're using Paula Deen's hot sauce, too.
2:25
So why would you only settle for a little
2:26
when you can have more?
2:30
- Okay. So just bring that over to a boil
2:33
over medium high heat.
2:37
- [ Jamie] Well, I have a couple of ingredients
2:40
Are you sure we have everything in there?
2:43
- Remove from heat and simmer,
2:46
whisking constantly until thickened.
2:51
Let's see, so wait, I'm gonna tell you.
2:54
- Okay. How about that cornstarch?
2:56
- Bring to a boil over medium high heat,
2:57
whisking constantly, reducing and simmer,
3:01
whisking constantly until thickened, about two minutes.
3:07
- It doesn't say it need salt, pepper
3:09
or cornstarch in this part?
3:17
- Oh, oh, oh, okay. My mistake. My mistake.
3:23
Okay. After the soy sauce, you got your corn starch.
3:27
- As a matter of fact, I do.
3:28
- You got your garlic powder and you got your hot sauce.
3:34
Then you just got to bring that to a boil
3:35
over a medium high heat.
3:37
- I knew we were missing this cornstarch y'all,
3:39
'cause that's where the stir until thickened part comes.
3:43
- You know your old mama can't (mumbles).
3:48
- While we're doing this, mom,
3:49
do you wanna start cooking the chicken?
3:52
- So in a sauce pan, in like a fry pan,
3:55
like we have here y'all,
3:56
we've got two tablespoons of vegetable oil.
4:01
So mama, I'm gonna go ahead and put that in for you.
4:03
- [ Paula] Gotta season this chicken.
4:05
- [Jamie] We've got our raw chicken here
4:07
and do not cook that y'all without salt and pepper
4:12
on your chicken. Excuse me, mom.
4:16
- Okay. So once you get your pan warmed up
4:18
with your little bit of oil, we're just gonna brown these.
4:20
So we're gonna cook them probably two or three minutes
4:23
on each side, crisp up that skin.
4:25
Make sure that we flip them one time
4:27
and we're gonna coat them with our sweet and sour sauce
4:29
and finish the off in the oven.
4:32
- So kind of stir them and brown them.
4:35
It made me turn it up a little bit higher.
4:37
- How about we do this?
4:39
Let's take a break real quick.
4:40
That'll give me time for my sauce to thicken,
4:42
your pan can heat up and we'll come back.
4:44
We'll finish it all up.
4:45
- I'm with you. You're the boss.
4:47
- Chicken wings, y'all.
4:49
- Okay, y'all. Cooking right here.
4:52
We've taken our chicken wings,
4:54
now, we've salt and peppered them, right?
4:56
And we've browned them for about two or three minutes
4:58
on each side. - Over medium high heat.
5:00
- [Jamie] Medium high.
5:01
- You want it pretty hot.
5:02
- So mom, if you will put those on our cooking sheet,
5:06
our sauce has thickened up really nice here.
5:08
- [Paula] Do you have a preference?
5:11
I'm gonna hold some of this back in reserve,
5:14
so we can dip with it.
5:15
- I'm gonna put them skin side up, some down.
5:20
- [Jamie] Yes, that's what I would say.
5:21
- That skin on get totally crisp and sticky.
5:26
- Now this recipe calls for four pounds of chicken wings.
5:28
We're doing only two pounds this morning,
5:31
'cause it's just the two of us.
5:33
So I should have plenty of the sauce for whatever.
5:35
- Can I stick my finger- - Ooh, it's hot now.
5:38
- [Paula] Oh, I see it holding.
5:40
Oh my gosh. That is so good.
5:45
- So this is it y'all,
5:46
the chicken is going into the oven at,
5:50
we're gonna bake until cooked through, twenty-five minutes.
5:54
- Everything cooks at 350. - Every recipe says 350.
5:58
- I'm gonna all let these go for 25 minutes.
6:00
Now I'm working with chicken here.
6:01
So I'm definitely gonna put a probe into it
6:03
and make sure that we're at 165,
6:05
but I wish you could all smell this.
6:08
When these are done, going right back in that sauce.
6:11
25 minutes, y'all. Stick around.
6:17
There ain't no thing like a chicken wing.
6:21
These are all up the temperature.
6:22
You see how that sauce is bubbling on there.
6:24
Now, these are hot as fire.
6:26
I'm gonna let these cool off.
6:27
We'll come back in a minute and eat. Wooh.
6:31
Take a little bite, mama.
6:32
- I know, I love that sauce.
6:34
And we got our green onion here.
6:37
Just gonna garnish it with some chopped green onion,
6:40
make it pretty - And make it tasty.
6:43
- And see our leftover reserve? You wanna try it?
6:46
It's kind of hot, but you can have a bite if you'd like.
6:48
- Oh no, son. I've actually got to go help Bobby.
6:52
- Thank the Lord. Somebody is gonna help Bobby.
6:55
It's been so long. (laughs)
6:57
I love you. Tell him, I love him.
6:59
I'll see you later, mom.
7:00
- I won't tell him. - Okay.
7:02
- I'm there to help get them in the car seats.
7:05
- Bye, mom. - Bye, son.
7:06
I love you. - I love you more.
7:09
I love chicken wings, too.
7:15
Delicious and simple.
7:18
Y'all enjoy the game. I hope your team wins.
7:20
I'll see y'all around the kitchen.
