- Who doesn't love a biscuit?
0:04
I don't know anybody that doesn't love a biscuit.
0:06
How about y'all? - [Theresa] Oh my lord.
0:08
- You know it just, a meal down south,
0:11
it just goes to, you know,
0:14
assume that you gonna get a biscuit with your meal.
0:17
But today I want to share with y'all,
0:20
and this is again from my "Celebrates Cookbook."
0:24
It's just full of so many wonderful recipes.
0:27
But I'm gonna share with y'all today a sweet potato biscuit.
0:31
And to do this biscuit,
0:33
I'm gonna be using the food processor.
0:38
And I'm putting in the sweet potato,
0:41
the cooked, peeled, mashed sweet potato.
0:50
- [Theresa] Actually, that's a can.
0:52
- [Paula] You did use can.
0:53
- [Theresa] That's what it says in the recipe.
0:54
- I thought it was a fresh one.
0:56
All right, now I'm gonna put in the sugar.
0:59
(bowl clinks) And I'm gonna put in,
1:00
it looks like a half a stick of butter.
1:04
So I'm gonna put the top on this.
1:09
And I like to kinda pulse. (food processor whirls)
1:12
Just makes me feel like I got a little control.
1:15
(food processor whirls)
1:16
All right, now I've got my flour, my plain flour.
1:20
And I'm gonna add, (bowls clink)
1:28
I'm gonna add some sugar.
1:31
Is that right?
1:33
No, that's salt.
1:35
Baking soda.
1:39
And baking powder, right, Theresa?
1:42
- [Theresa] Baking soda, baking powder.
1:44
- Ooh.
1:46
Let me come over there and look.
1:49
So I can give you the exact measurements.
1:51
It's three-fourths of a cup of canned sweet potato,
1:54
drained and mashed and then measured,
1:57
four tablespoons, a half stick of butter,
2:00
a fourth of a cup of sugar.
2:03
That's in here.
2:05
Two and a half teaspoons of baking powder,
2:09
a half a teaspoon of baking soda and a teaspoon of salt.
2:13
And finally, a third of a cup of buttermilk.
2:18
So there you've got the exact measurements.
2:21
(bowl clinks)
2:22
So it tells you to just sift these together.
2:27
But I have shared with y'all
2:30
that when it tells me to sift,
2:33
I'll just use my whisk because it's kinda like sifting it.
2:38
(food processor whirls)
2:40
I'm just gonna add the flour through
2:44
our little hole up here. (food processor whirls)
2:49
I'll make sure I get it in my hole.
2:51
(food processor whirls)
2:54
And I'm not gonna put it all at one time.
2:56
I'm gonna (food processor whirls)
3:00
slowly add it. (food processor whirls)
3:09
I wish it had a bigger mouth.
3:11
(food processor whirls)
3:16
What is going on?
3:18
Okay, it's forming a ball.
3:19
So I'm gonna
3:23
go ahead and add the buttermilk.
3:28
(food processor whirls)
3:39
Y'all I love
3:43
using an old tablecloth
3:46
that's been used that's soft.
3:48
I love using that for my flour board.
3:56
And if my memory serves me right,
3:58
this was one of my mother's tablecloths.
4:01
And I have toted it from here to Hahira.
4:05
Everywhere I go, it's been with me.
4:07
So we're gonna turn our dough
4:11
out onto my mother's tablecloth.
4:15
And I'm gonna put down some flour
4:18
because we are gonna need to knead this.
4:22
It was in a firm, firm ball
4:26
until I added the buttermilk.
4:30
So now we're gonna have to get it outta here
4:34
and we're gonna have to add more flour to it
4:36
to bring it back to that ball
4:40
that it had formed.
4:50
So here we go.
4:51
It's gonna take a good bit of flour.
4:55
So we're gonna start adding the flour.
5:03
And start our kneading process.
5:12
I love the feel of dough.
5:15
It feels so good.
5:22
It feels real good.
5:27
I think I brought just enough bench flour.
5:31
It's gonna take it about where it needs to be.
5:36
And you heard me say bench flour,
5:38
that's what we refer to as flour
5:41
that we had sitting on the bench.
5:49
For us to add to our rolling pin and
6:00
to our surface that we're cooking on.
6:03
All right, now my instructions tell you to roll this
6:08
into like an 8 by 10 rectangle.
6:19
And I think it
6:21
makes like about an inch deep.
6:28
All right.
6:33
You think that's an 8 by 10, Eddie?
6:35
- [Eddie] Looks more like maybe a nine by nine
6:38
or eight by eight.
6:39
- It's supposed to be a rectangle.
6:40
(Paula laughs)
6:43
- [Eddie] Get it stretched a little more.
6:44
- [Paula] Yeah.
6:45
And my instructions say to cut your rectangle
6:50
into triangles.
6:52
Okay. You know what Eddie?
6:55
I think it needs kneading some more.
6:59
Because that's a very soft ball.
7:03
So I'm gonna keep working it.
7:05
I don't like to overwork a biscuit.
7:08
But I don't want it too soft either, you know?
7:14
So, all right, let's try with a rectangle again.
7:28
Am I getting close to an 8 by 10, you think?
7:30
- [Eddie] Yeah, yeah, it kind of looks-
7:31
- [Paula] Kinda looks like an 8 by 10.
7:33
- [Eddie] Kinda does, yeah.
7:35
- [Paula] Okay.
7:42
Hey Mikey Mike?
7:43
- [Mike] Hey Mrs. Paula.
7:45
- [Paula] How are you?
7:46
- [Mike] Good, how are you?
7:48
- [Paula] I'm good.
7:49
- [Mike] What y'all cooking?
7:50
- [Paula] We're making sweet tater biscuits.
7:53
- [Mike] Yum.
7:56
- Hmm.
7:59
Two, four, six.
8:01
It's supposed to make 12 rectangular biscuits.
8:08
So there's one,
8:11
two,
8:13
three.
8:14
How many is that now?
8:15
Four, five, six, seven, eight, nine.
8:20
Still short, aren't I?
8:25
Two, four, five.
8:27
Two, four, five.
8:29
All right, so mine must be thicker
8:31
this go around.
8:32
So I'm gonna do
8:37
10.
8:40
What you think? - [Mike] Looks good.
8:41
- Does look good, doesn't it?
8:43
All right, now let's see.
8:44
I need a,
8:46
I need a, I need a,
8:48
I need a pan.
8:52
I'm gonna spray my baking sheet.
8:57
And when I make biscuits,
8:59
I like to make my biscuits where they're touching
9:02
because I love those soft sides to it.
9:05
So, let's see if I can
9:09
accomplish that here.
9:13
I may have to do it like that.
9:21
That one's gonna be a thick biscuit.
9:26
And you see I'm reversing them.
9:32
You know, turning the big end one way
9:36
and then on the other turning the other way.
9:42
So there we go.
10:06
These biscuits might be
10:07
a little bigger than those biscuits.
10:15
Okey-dokey.
10:19
Now for the good part.
10:22
Because I'm gonna
10:24
rub 'em with a little butter.
10:26
- [Theresa] Yum. - Because I don't,
10:29
get it real soft,
10:30
because I want to
10:34
cover that flour.
10:38
You know, I don't want it to be white on top
10:40
because of the flour on it.
10:46
I tell you what, it would behoove me to melt some butter.
10:49
I think, y'all, and just brush it on.
10:51
Okay, y'all, this is gonna be much easier
10:54
than trying to spread that butter.
10:56
Even though it's been on the counter,
11:00
it's cold outside so it won't get really soft
11:04
just sitting on the counter.
11:06
So this is definitely easier.
11:11
In fact, you don't have to even do this step at all.
11:14
This is just me because I want that flour
11:17
to be kinda covered up.
11:21
I don't want my biscuit to look real white.
11:26
So I'm gonna bake these in a 400 degree oven
11:29
for about 10 minutes.
11:33
And when I take them out,
11:36
I'm gonna serve them with some of my honey,
11:41
some Paula Deen honey, that is so, so good.
11:45
And butter.
11:50
Okay, so in the oven it goes 10 minutes, 400 degrees, y'all.
11:56
That's a big biscuit.
11:58
10 minutes at 450, y'all.
12:03
And they're light golden on top.
12:07
And they're getting nice and brown on the bottom.
12:11
All right, now I mixed up some honey butter.
12:15
So I just took honey and butter
12:18
and mixed it together.
12:22
So I wanna make sure,
12:26
these are hot just outta the oven.
12:31
Wow.
12:35
It kinda makes for an unusual shape.
12:38
Look, it reminds me more of a scone now.
12:45
(Paula chuckles) That honey butter
12:51
makes this biscuit insane.
12:56
Mm.
13:05
It's so good y'all.
13:07
And if you don't like honey,
13:09
you don't have to eat it with honey.
13:15
You can use just butter.
13:19
Or butter and jam.
13:20
Or just jam.
13:22
You can use a biscuit cutter and cut them.
13:26
Or you can cut 'em into the rectangles.
13:29
Whatever suits your fancy.
13:34
And there we go.
13:35
She's starting to whine, isn't she?
13:36
- [Theresa] Mm-hmm.
13:37
- Okay, it's cause you're sitting there.
13:38
She's waiting on a T R E A T.
13:41
And I'm the only one that's getting a T R E A T
13:44
right this minute.
13:46
- [Theresa] They won't let me give you a treat piglet.
13:49
- One of the best dishes, y'all.
13:52
Mm.
