- Hey, y'all Jamie Deen here.
0:01
I'm in mama's kitchen again.
0:04
And today I'm doing a delicious marinated summer salad.
0:09
I have steamed green beans and carrots.
0:14
Now I want these still crunchy.
0:18
So the first thing I'm gonna do is put 'em in an ice bath.
0:21
So I've steamed these over about an inch of water.
0:24
Just some green beans and carrots
0:26
and I don't want 'em cooked all the way through.
0:29
See, they got a little bit of pop right there.
0:32
Ooh, I love it when you do that.
0:36
"I didn't tell y'all," is what my mama said.
0:40
So taking these and cooking 'em for just a few minutes
0:44
and then dropping 'em in ice water
0:46
stops that process because things continue to cook
0:49
if they're hot, like when you're scrambling eggs
0:51
you take your eggs off
0:52
because your eggs are gonna continue to cook.
0:55
And I want these to stay nice and fresh and crisp.
0:58
So straight into the ice bath, with those.
1:01
Our marinade for this,
1:03
I'm gonna go through, this is a long list of things y'all,
1:07
and I wanna make sure I get it right.
1:12
this is our marinade, now.
1:14
We've got our third a cup of extra virgin olive oil.
1:19
We've got two tablespoons of tarragon vinegar.
1:31
I'm doing all this wrong.
1:33
Do not do not measure your ingredients over your bowl
1:36
'cause you'll spill it.
1:38
Make sure you use the correct thing.
1:40
This is a teaspoon, not a tablespoon.
1:43
So I need two tablespoons.
1:45
So I'm gonna do three teaspoons of our tarragon vinegar.
1:54
And then we've got one tablespoon of mustard.
2:00
I'm using, this is a Gray Poupon
2:03
which everybody knows that brand.
2:04
This is the country Dijon.
2:06
If you can find a Cajun Dijon
2:09
that adds really good flavor to it, too.
2:13
Then we've got a half of a teaspoon of
2:15
Worcestershire sauce.
2:21
I love Worcestershire sauce.
2:23
And then we're gonna put our garlic in here.
2:26
I've got one clove of minced garlic
2:30
and I'm gonna do a quarter of a teaspoon of dried oregano.
2:34
So just a shake, shake, shake, shake, shake.
2:37
I'm gonna mix all this together.
2:40
We're getting very close to our summer salad.
2:42
Y'all this is, it's a Jamie Deen special.
2:45
Delicious, easy, fresh and delicious.
2:49
So y'all stick around, when we come back
2:50
we're gonna put all this together.
2:52
We're having salads for lunch today, y'all.
2:56
I've just been busy working away, y'all.
2:58
I took our green beans and our carrots outta the ice bath.
3:01
And I'm draining these.
3:03
I don't want 'em too wet.
3:04
I've got our marinade here.
3:06
So we're gonna combine all of our ingredients into one bowl.
3:10
Now, if you have watched my family
3:12
or if you've listened to me, rambling, rambling, rambling.
3:15
You know that salad is really my favorite food.
3:21
I love all the vegetables, the tomatoes.
3:24
The best part about a salad is
3:27
you put in it whatever you want.
3:29
So this recipe is calling for our carrots, our green beans.
3:35
Look at the, we're gonna add some red.
3:38
I'm gonna go with these grape tomatoes.
3:40
We've got some purple onions, which is,
3:44
I would not add but this is my mom's recipe
3:51
I prefer a lighter, sweet onion.
3:57
We're gonna add some black olives.
4:00
I would put green olives in here.
4:03
I'm just thinking of all the things
4:05
that I would put in here.
4:07
And next we're gonna add our cucumbers.
4:09
There's lots of different ways to do cucumbers.
4:12
Our baby Davis at the house, who just turned two.
4:14
He's startin' to eat cucumbers.
4:16
So for Davis, I might do this.
4:23
Take some off and then
4:24
you can leave a little bit of green between,
4:27
it adds some color to it.
4:29
I picked up the absolute worst knife.
4:34
You don't have to be perfect with it
4:36
'cause you want a little bit of that green.
4:39
And then when you slice it, so you have the different
4:43
pretty colors and textures on here.
4:47
That's one way to do it.
4:49
You bang this out real quick,
4:54
get our cucumbers in.
4:56
And then this is another way you can do it.
4:58
If you score it with a fork
5:03
- [Paula] That's the way I like to do mine-
5:08
And if you score it with a fork,
5:10
you see the design that you've left in the side.
5:13
So there's lots of different ways
5:15
to skin this particular cap
5:16
depending on what you like.
5:19
Now for Davis I do take the skin off
5:22
and I add just a little tiny bit of salt for him,
5:27
but we've got everything in here.
5:29
Our marinade is all twisted up.
5:36
It would be good, in this dressing,
5:38
would be a little bit of maple syrup too.
5:42
Now we're gonna toss all of our things together.
5:45
Now, if y'all want to,
5:47
we can cover this and put it in the refrigerator
5:50
and let it chill for 30 or 45 minutes.
5:52
Let all these flavors marry together.
5:55
Or if you're in a pinch
5:56
and you're hungry and you're ready to eat, find you a plate.
6:01
We're gonna park this right on top
6:02
of this iceberg lettuce that I had laying around.
6:06
Look how pretty this is.
6:09
Now, if you wanna put this
6:09
on top of a traditional chopped salad,
6:12
You can add cheese to it.
6:14
I'm telling y'all, when it comes down to the salad family,
6:19
You put what you like
6:20
in that bowl and sit down and eat it up.
6:24
Appreciate y'all tuning in today.
6:25
Y'all, I'm Jamie Deen and this is good food.
