Today, we're doing summer squash boats

that are stuffed with sausage.

So, I got a couple of things started already

while y'all were gone.

- I got medium straight neck sausage

that I put in our pan here, filled up halfway-

- [Theresa] Squash?

- Squash, what did I call it?

Sausage, squash, who cares?

I got four medium yellow squash.

The straightest necks I could find,

they're in this sauce pan, half full of water.

I had it covered.

This has been cooking for about seven or eight minutes

and now I've turned it off because I want these to soften

but I don't want 'em to cook all the way through.

So, while I was doing that

I've got my pan hot here with some olive oil

and I'm gonna add these three sausages.

Now, I've got these from our local grocery store here.

These come in a casing, which I cut off.

My wife does recipes with this sausage,

she does stuffed shells.

So, we really like this sausage.

So, we just pop it right out of the casing.

It's what we've done here today.

I'm gonna brown these for about four minutes or so

and then I'm gonna add some other ingredients in here.

I have a pint of tomatoes that's comin' into this recipe

So, I'm gonna make sure to get those seasoned well

and now we're gonna deal with our squash boats.

So, how we're gonna do our squash here

is take this out.

We're gonna trim the edge off here,

and we're gonna cut it right down the middle.

It's browned a little bit on the edge

Now, I'm gonna stuff these boats with what we've cooked

I did four squash, which should be eight halves

So, if you wanted to save some of this off

it'd be a great way to start a soup

or a chili or any kind of stock that you have going.
