0:00
- It is the start of a new year,
0:03
and I'm gonna talk to y'all today
0:06
about a book that I don't talk about very often,
0:09
and that's my "Celebrates,"
0:10
and I love this book.
0:13
I love it, love it, love it.
0:17
So I'm gonna be cooking out of it today.
0:21
And the thing I love about "Celebrates"
0:24
it's all about holidays.
0:27
And like I said, it's just a book that I love
0:31
and I never talk about it.
0:32
So today I'm going to actually the Easter section
0:39
and share with y'all a recipe for succotash,
0:41
which my family adores succotash.
0:46
So, I'm gonna start with a nice big skillet,
0:51
(spray can hisses) and I'm gonna give it
0:53
'cause sometimes bacon can kind of stick.
0:58
by browning our bacon.
1:02
When I was in the kitchen every day at Lady & Sons,
1:09
I loved making succotash there
1:11
because we had all of our vegetables
1:17
So I could just go down
1:19
and dip outta each pot
1:21
and have the most fabulous pot of succotash made
1:24
you've ever put in your mouth., so
1:29
The only thing I'd really have to do was cook bacon.
1:32
- Mm hmm. - You know,
1:33
and then go dipping in my pots,
1:36
my butter bean pot and my corn pot.
1:42
putting together for everybody.
1:44
So, there's several different ways you can make succotash.
1:52
I am using, like I said, because it's winter,
1:55
I'm using frozen butter,
1:59
this is, yeah, butter beans,
2:01
almost looked like butter peas for a second.
2:03
Butter peas are a little fatter than butter beans.
2:06
And I'm using frozen corn
2:11
because it's like the butter beans.
2:13
It's processed really, really good now.
2:16
So, I'm gonna get this bacon nice and brown.
2:24
we'll come back and get the rest of it going.
2:27
(bacon sizzling) All right,
2:28
so that's going now, it's sizzling good.
2:37
and I'm gonna put two cups of water in there
2:41
along with my house seasoning
2:46
and my seasoned salt.
2:50
And I recommend in this recipe
2:53
using one chicken bouillon
2:57
or one teaspoon of granulated bouillon.
3:00
But you know, I have moved on
3:02
because I love the wet bases
3:05
that they've made available for us today.
3:07
They're, to me, so much better
3:16
They've just really got a great hold on me, so.
3:19
And I've noticed in the grocery store,
3:21
they've added many, many more
3:26
bases like Mexican, Italian.
3:30
- Oh, I haven't seen those. - Yeah.
3:31
Yeah, they're just new. - And it's a one teaspoon
3:34
to one cup ratio. - To one cup, yeah.
3:36
So I should use two teaspoons
3:39
since this is two cups of water,
3:44
So I'm gonna put that on,
3:46
let that come to a boil.
3:48
And then I'm gonna cook my butter beans.
3:50
And these are done in maybe 15, 20 minutes.
3:54
Let's see, this says 25 to 30 minutes
3:57
or until desired tenderness.
4:01
But in the recipe now,
4:02
it says to cook the bacon real crisp.
4:11
preferred not to cook it that much.
4:14
I like to get it done,
4:15
but it still have some of that softness
4:23
when you go to eat your succotash,
4:28
the softer bacon just makes it so incredibly --
4:35
It's just, the seasoning really pops out.
4:39
While I was waiting on my water to boil, y'all,
4:43
to see how many different recipes for succotash I have,
4:46
and I've got several.
4:48
Several that you can choose from.
4:51
It's one of those recipes
4:52
that you can really make it your own
4:53
and put what you like in it.
4:55
So our water is boiling now for our butter beans.
4:59
I'm gonna put them in,
5:03
and the bag recommends cooking 25 to 30 minutes.
5:07
So we'll just let those go.
5:10
(spoon thumps on pot)
5:11
They've got the seasoned salt,
5:15
and chicken base in that water.
5:16
So it'll season 'em up good.
5:19
And now, I'm going to, (pan rasps on grate)
5:21
I've got the bacon cooked
5:25
just the way I love it.
5:27
So there again, if you like your bacon crispy, crispy,
5:32
go ahead and cook it.
5:33
But to me, this is the most flavorful way
5:38
All right, let's see.
5:40
Let's get this going again.
5:43
And next I'm gonna add our corn.
5:45
And we're using a frozen
5:48
Silver Queen white corn
5:52
we do love Silver Queen.
5:57
It seemed like I heard one time it was first planted
6:00
to feed the livestock.
6:03
Well, moo. (assistant laughs)
6:04
Moo, moo. (Paula chuckles)
6:08
Down here, we just love our Silver Queen corn.
6:11
So, I'm just gonna let this cook, and you know it,
6:14
all you really have to do
6:15
is just kind of heat that corn.
6:17
It cooks very, very quickly.
6:19
But I do recommend using a white corn.
6:23
And if you can find silver Queen,
6:28
(corn and bacon sizzling)
6:33
sharing the succotash recipe with y'all.
6:36
I'm gonna add just a little bit of pepper.
6:39
And our butter beans are just beautiful.
6:44
And I did, I wound up cooking 'em for 20 or 25 minutes.
6:47
So I'm gonna - (strainer scrapes on pot)
6:50
remove the butter beans from the liquid.
6:53
And remember, I put them in two cups
6:58
along with a wet chicken base,
7:07
that you hold some of this back,
7:11
(pan clangs on grates)
7:12
some of your liquid from your butter beans,
7:16
that you hold it back
7:18
and create a little bit of sauce
7:22
to go along with this succotash.
7:26
Ooh, I hope y'all will try it.
7:28
I hope you will try it
7:31
(spoon claps on bowl)
7:32
because I think you'll love it.
7:36
Calls for two tablespoons of butter
7:43
Ooh, there's a little piece of bacon.
7:46
And like I said, remember,
7:47
I did not cook that bacon crisp
7:55
at this cooking stage
7:57
that it's in right now.
8:01
And it reminds me of,
8:05
oh gosh, what did I say it reminded me of,
8:07
the other day when I was cooking?
8:08
- Pork, pork? - Pork belly.
8:10
Yeah, it reminds me of pork belly
8:11
when you don't, you know,
8:15
(pan clunks) (spoon clatters on pan)
8:16
So there you go, y'all.
8:23
(cupboard door clunks)
8:25
(glass bowls clattering)
8:26
You know, with a little cornbread,
8:35
and maybe a sliced tomato,
8:38
especially during the summer months.
8:42
Now, I actually wanted more bacon
8:43
than I just put on my plate.
8:50
I'm gonna cut that off now
8:52
and put the lid back on it.
8:53
(plate scratches on counter)
8:56
So if anybody comes in,
9:02
So that is your basic,
9:04
very basic succotash recipe, y'all.
9:12
And everything I put in there
9:16
And you can see how beautiful it turned out.
9:20
You just have to be selective
9:23
in your frozen vegetables
9:26
(fork clangs on plate)
9:38
I hate eatin' in front of y'all.
9:43
Y'all want some? - Mm-hmm.
9:47
- I know. - It is incredible.
9:51
So love and best dishes, y'all.
9:53
I'm gonna wrap this thing up
9:54
'cause I think Eddie might be swallowing hard
9:59
(fork clangs) (Paula sniffles)
10:00
and I don't want him to swallow his tongue.
10:04
Love and best dishes, y'all.
