Now the recipe that y'all will see

in the cookbook just calls for canned peaches.

And that's what we use in the restaurant

because that's the only way we can guarantee consistency.

I tried doing it with fresh peaches.

Sometimes they'd come in green and hard,

sometimes they'd be overripe.

So that continuity, the canned peaches really works for us.

But today I'm using fresh peaches

and I have got on a pot of water to boil,

and I'm gonna slip the skins off of these

by dunking them in a hot water bath.

And the first thing you wanna do is just make a little notch

in the top of that, kinda like a little cross or a little X,

because that will help give it a head start

on that skin coming off.

So it's almost there, y'all.

And it's taken a good while, but, oh, there it comes.

It's starting to boil.

So I'm gonna go ahead and put my stick

of butter into the dish that I'm gonna bake this in

and I'll put that in the oven and let the butter melt.

But right now we're gonna finally drop these peaches

down into some boiling water.

So remember I notched them out

and Eddie fixed me up a bucket of ice water

for me to bathe them in.

So this doesn't take but a couple of minutes

and you can watch where we made that notch in the tip

of the peach because it'll start to curl back.

So when it starts doing that,

we'll throw them in the ice bath

and the skin will come off so easy.

You know, when I try to peel them by hand,

I just feel like I'm losing so much of the meat

of the peach and y'all know how I feel about waste.

All I have is the waste that goes in the trash can,

but I just know this way I'm getting every bit of the meat.

I've got a couple that's kind of popped

So to our peaches, in the recipe,

I tell you if you're using fresh peaches,

really depends on how much fruit you actually like

in it and how much crust, I love a good crust.

But anyway, I tell you to use two cups

of fresh sliced peaches

and I tell you to put them in a pot.

And I've got more than two cups here.

And because these are so full of water,

So I'm gonna add like a half a cup of water

and I'm gonna let them cook down

for about 10 minutes, and they look beautiful.

But we're gonna let those cook for about 10 minutes.

All right, so we are gonna add, to make our batter,

And we're gonna add three fourths of a cup

of self-rising flour.

That's a half a cup.

Now I need a quarter of a cup to make three quarters.

Because the only mistake you can make with this

Okay, so now all we've got to do

is let our peaches soften a little bit.

So you can see this went in the oven long enough

And this is our batter.

And here's the magic about this peach cobbler.

We are gonna pour our batter on top of our butter.
