- If y'all are sick of hearing me say fall,
0:03
y'all, just send me a note and let me know.
0:07
But you know, to me, when I think about fall,
0:11
I think about sweet potatoes too.
0:13
In fact, I've been doing a lot
0:15
of recipes using sweet potatoes
0:17
so I'm fixing to do a shrimp stuffed sweet potato.
0:23
I have shared the recipe with y'all
0:26
for Michael's shrimp stuffed potatoes that we always serve
0:34
on Christmas and everybody just loves them so much.
0:40
So I've got my shrimp here, I've got my spinach.
0:44
I put a little olive oil in here.
0:47
So I'm gonna saute my shrimp and my spinach
0:55
and my garlic and a little salt and pepper
1:03
and they're both in there, the salt and the pepper.
1:07
So we are just gonna saute these until the spinach
1:13
is wilted and our shrimp are a pinky color.
1:19
So I've cut our potatoes in two
1:23
and you'll wanna be careful taking the meat
1:27
out of the shell, especially on a sweet potato.
1:33
I think I'm gonna use a smaller spoon.
1:35
Maybe I can do less damage
1:38
because this is gonna be our boat.
1:42
This is gonna be our boat
1:46
to hold our shrimp and spinach.
1:52
Now these are gonna bake for about 20 minutes
1:56
after we get them assembled so they don't have
2:02
to be all the way done, just mostly done.
2:09
Okay, this is just about done.
2:16
Okay, got one more potato to do.
2:37
Okay, I don't want those to overcook
2:47
because will if you overcook a shrimp,
2:48
they can turn out like the consistency
2:53
of an eraser and we don't want that.
2:59
So that gets our potatoes mashed up.
3:06
And now we're gonna add our sour cream and our cheese.
3:19
And one of the great things about a twice baked potato,
3:23
you can put them together
3:25
and put them in the refrigerator.
3:28
And when you go to cook them, you'll wanna take them out
3:32
and let them warm up a little bit,
3:36
get to room temperature.
3:38
Okay, I'm gonna add my sour cream
3:54
And I'm gonna add my Parmesan cheese
3:58
to the potato and then I'm gonna wind up
4:04
putting everything in this bowl right here.
4:18
I want you to tell me what you think, Eddie?
4:30
- [Speaker] Yeah, I mean it's still got that sweet.
4:34
- A little sweet. I'm gonna add a little salt though.
4:37
And little bit more pepper.
4:48
It's got a light on it y'all
4:51
for us blind babies that can't see too good.
4:58
All right, this would make a nice side,
5:09
for many many dishes out there.
5:18
A piece of fish, nice wonderful piece
5:20
of brawl fish or, heck, even fried.
5:32
Look how pretty that is.
5:36
And you'll wanna try to keep up with the shrimp.
5:44
Make sure everybody gets a fair share of shrimp.
5:56
This along with some corn bread or heck,
5:59
for that matter even french bread, would be a complete meal.
6:06
Okay y'all, that gets it,
6:14
now we're just gonna sprinkle the other half
6:17
of our Parmesan cheese on top
6:20
and we're gonna bake these for about 20 minutes.
6:27
Just long enough for them to get hot again.
6:31
I just know y'all are gonna love this
6:35
and I'm so happy to share the recipe with y'all.
6:40
And like I said, you can do everything to them.
6:43
Put them together, put them in your fridge
6:47
and look that one bite and I got a piece of shell.
6:56
Only piece of shell in the whole bunch, and I got it.
7:06
Yeah, I think you're gonna love it.
7:22
It's delicious y'all.
7:24
Another great recipe for year round
7:29
but it sure does scream fall, doesn't it Eddie?
7:32
- [Speaker] Yes, it does.
7:45
- Another piece of shell.
7:50
So, loving Best Dishes y'all.
7:53
I'm going somewhere and finish eating my potato
7:59
and I'll see all you kids later.
