0:00
- Hey friends, come on in.
0:02
We're gonna have fun in the kitchen today.
0:05
I'm not cooking, but I've got a friend of mine
0:09
that is sharing a recipe,
0:11
one of his favorite recipes.
0:14
And I wanna just give you a little backstory.
0:17
My mother had two sisters.
0:20
One older, one younger.
0:23
Her, no, no, no, wait.
0:25
I'm getting mixed up.
0:27
Mama had two sisters.
0:30
Mama was the oldest and then aunt Peggy,
0:33
and then my aunt Trina,
0:36
who was not but three years older than me.
0:39
And we were raise more like sisters
0:42
rather than aunt and niece.
0:46
And aunt Peggy is still here with us kicking hard, y'all.
0:51
but mama and Trina both passed away of cancer
0:56
years apart, but they are no longer with us.
1:00
But we lived, the first 10 years of my life,
1:04
we lived on US-19 at River Bend,
1:08
my grandmother and grandfather's business.
1:13
And in my aunt Trina's later years,
1:18
she was very smart and she got on that computer
1:21
and she just interacted with people like crazy.
1:25
Well, she met this man that became my friend also.
1:31
And he's also a friend of my cousin, Dion, Trina's daughter.
1:37
So so much for the family tree.
1:40
But Greg and Trina were actually working on a cookbook.
1:45
Well, Greg was already working on this cookbook, y'all,
1:48
and then Greg, why don't you tell the story?
1:55
I was actually working on the cookbook
1:57
and then met Trina through Facebook.
1:59
She started following my cooking page and we got to talking
2:03
and became real close friends just over the internet.
2:06
And she had mentioned she had loved to help me
2:09
with my cookbook and the more we talked, it just,
2:12
it came together and she invited me up to Louisiana.
2:17
And it was a crazy trip, but that's where, you know,
2:20
me and her became best friends.
2:22
And we really bonded.
2:23
- Isn't that funny how the internet brought y'all together,
2:27
and y'all both had a lot of love for--
2:33
- For cooking and the restaurants
2:36
and the food that was on this old highway
2:40
going from up north to down south, all the way into Florida.
2:45
So what did, now we called it US-19.
2:50
- It's actually the Dixie highway.
2:52
- The Dixie highway, okay.
2:54
- It went from Miami all the way up to Michigan.
2:57
My grandfather actually had a restaurant
2:59
on the Dixie highway himself.
3:01
- Did he? - Yes, that's how I got it.
3:03
- So y'all did have a lot in common.
3:06
Well, I understand today that you're gonna be
3:10
preparing one of aunt Trina's dishes.
3:13
And it's one of her shrimp dishes, I believe.
3:17
You know, she taught me over the phone,
3:21
I love Louisiana cooking.
3:25
And so she gave me a couple of really good lessons
3:30
on some of the New Orleans dishes.
3:34
And so this is her shrimp.
3:38
- Scampi, shrimp scampi. - Scampi, yes, yes.
3:41
- And we change it up,
3:42
instead of using Italian seasonings,
3:44
we use Cajun seasoning or Old Bay,
3:46
so she changed it up to her way.
3:48
- You know, Greg, what is so funny?
3:51
I pulled out my cookbooks,
3:54
and I'll go to one of my recipes and you know,
3:58
I can't go right by it.
4:01
That little devil sitting up on my shoulder
4:04
makes me change something.
4:07
I just have a hard time following recipes.
4:12
- Right, I do the same thing.
4:19
- Oh, I said I do the same thing.
4:20
I start with the original recipe,
4:21
and that's how me and Trina both did it.
4:23
We just started adding things, taking things out
4:25
and they're done. - There you go.
4:27
You know, I think formulating recipes
4:29
was one of the hardest things I've ever done
4:34
because it's hard when you don't use a recipe
4:38
and then you have to narrow it down.
4:40
So, you know, I've always said do it by the recipe
4:43
the first time, but the next time, make it your own.
4:47
- And Greg is gonna prepare a dish for us today.
4:52
And I hope y'all love it.
4:53
I know it means a lot to me.
4:55
So let's go to the video.
18:27
Well, Greg, I thank you so much, honey, for coming in
18:30
and sharing one of my aunt Trina's recipes with us today.
18:34
And you know, I just,
18:37
I'm happy and privileged to have your friendship
18:40
and hopefully I will be seeing you
18:43
maybe not too far in the future.
18:46
Maybe at Key West or something.
18:49
- Maybe down there, yeah.
18:50
I appreciate your friendship and treasure it as well.
18:53
Have a wonderful day, love and best dishes.
18:56
And tell everybody where they can,
18:58
the website that they can get into your world.
19:02
- My world's just gregs-kitchen.com
19:06
- Okay, gregs-kitchen.com
19:11
- He's got some good recipes, y'all.
19:14
And I know firsthand because I have eaten his cooking.
19:19
- Thank y'all, everybody.
19:21
Love and best dishes.
