- Hey y'all, I'm Jamie Dean.
0:01
I'm back here in mama's kitchen,
0:03
sharing simple, delicious recipes with you.
0:05
Today we're doing something
0:06
I don't really cook a whole lot...fish!
0:10
I'm doing a zesty butter sauce over grilled mahi mahi.
0:18
Uh, Michael was just asking me, he has some trout,
0:20
if I would like some of the trout that he has.
0:22
I'm not a big saltwater or freshwater fish person.
0:27
I don't know, it's weird.
0:28
I like fish, but I don't like fish,
0:31
but if I cook fish, I like fish.
0:35
That's what I should say.
0:38
So today I'm sharing a really delicious recipe with you
0:42
and a lot of the flavor is gonna come from the fish,
0:45
but this sauce is gonna help it along too.
0:48
So I've got my pan warm.
0:50
We've got our butter going in.
0:52
I've got lemon juice, you cannot have fish without lemon.
0:56
We've got some pepper.
1:00
I've got some fresh garlic
1:04
Some seasoning salt rather than regular salt today.
1:09
And this is where a lot of the flavor's gonna come from.
1:11
I've got some fresh chopped basil.
1:16
So the zesty basil lemon sauce is really
1:19
what's gonna help set our fish apart.
1:22
So I'm gonna take care and not scorch this,
1:24
I've got it just on really low heat.
1:27
I want my garlic to cook a little bit.
1:29
The heat's gonna bring out a lot
1:30
of the flavor from our basil
1:32
and y'all know what butter does to not only fish
1:35
but everything else is good.
1:37
Seasoning salt is a little bit different.
1:39
It's got a different flavor, flavor profile for us
1:42
but really the fresh herbs with the lemon juice
1:45
are gonna be the primary flavors
1:46
that we're gonna be eating on our fish.
1:48
Now, while this is going a little bit
1:51
I've got three tablespoons of olive oil
1:54
in this pan that I've been heating up.
1:56
So it's ready to go for us.
1:58
We've got our fish filets that I've already seasoned.
2:01
These have got salt and pepper on 'em.
2:03
And I'm just gonna sear these
2:04
for just a few minutes on each side.
2:08
That we're just hot enough to get going here.
2:12
A mistake that a lot of people make with fish
2:16
Now, everybody out there's had their fair share of sushi.
2:20
you don't even have to cook some fish to eat it
2:23
but every fish that you cook probably needs to cook
2:26
a little bit less than you think it does.
2:29
'Cause food continues to cook once you take it off
2:31
just like your steaks or burgers, fish is exactly the same.
2:35
The heat is gonna continue to cook.
2:37
So I'm gonna keep a close eye on these.
2:40
This is about three minutes here.
2:41
We've got our sauce really going good here
2:44
and of course if you want to,
2:45
link into the description below,
2:47
that's where you can get the full recipe.
2:49
We're gonna take two second break here,
2:51
let this butter melt down and then we'll flip.
2:53
We'll flip our fish over.
2:55
See y'all back here in a second.
2:58
Okay y'all you see like right here on the edge
3:01
you can see that this is starting to cook up.
3:03
That's the way that if you're gonna flip something,
3:06
keep an eye on the sides,
3:07
and once this starts to kinda cook up a little bit,
3:09
you know that you're good to flip over.
3:13
Could have left this one more second longer,
3:15
I kinda like that brown marking on it
3:17
but it is what it is.
3:20
We're gon' cover it with zesty basil butter sauce anyway.
3:23
These filets are perfect.
3:25
And th- this only takes about three minutes on each side.
3:29
So while we finish this, I wanna remind y'all
3:31
be sure and subscribe to mom's YouTube channel
3:34
where you can find all of these delicious recipes.
3:38
and we're gonna be doing 'em for years to come.
3:40
So mom's YouTube channel is always gonna be a great resource
3:43
for y'all for simple, delicious recipes
3:45
that you share with your family.
3:47
Now gimme about two minutes
3:48
and we're gonna finish this fish off when we come back.
3:51
Okay y'all, it's time to eat.
3:53
Did you know that fish is brain food?
3:55
Maybe I should eat all three of these myself.
3:58
I'm gonna turn this off.
4:02
What I really love about this mahi too
4:04
is that it doesn't have a very strong fish odor.
4:10
I guess is one of the challenges
4:12
that I have to overcome when I'm doing fish.
4:16
I like fish that tastes like chicken.
4:21
now that we've got our - look how beautiful that is.
4:25
We've got our zesty lemon basil sauce here
4:29
and I'm gonna spoon over.
4:42
Mm! Really, really, really pretty.
4:45
I've got a little bit of fresh greens here.
4:47
If you have some fresh basil
4:49
that would be nice on the plate too.
4:51
I'm using a little bit of parsley
4:53
and I've got little piece of lemon
4:57
and I'm gonna squeeze right on top of that.
5:00
And so that's it y'all, the only thing missing is my lips.
5:05
Thanks for tuning in today,
5:06
I'll see y'all around the kitchen.
