You know, the other day I said it's fall y'all,
0:06
and have any of y'all seen hints in the weather
0:12
that says it's fall outside?
0:15
And I said "No, we hadn't,"
0:18
but last night we got out,
0:20
Jamie plays softball on Monday nights
0:23
so Michael and I decided we'd go to a game,
0:27
which come to find out it had gotten canceled,
0:31
but Jamie forgot to call me and let me know,
0:34
but anyway, Michael and I enjoyed getting out.
0:38
There was a nip in the air, it was so wonderful.
0:42
I even took Lulu with us
0:45
because I knew she'd be fine in the car
0:47
because the weather was so agreeable.
0:50
All right, so it is fall,
0:54
and a little nip is coming in
0:56
every now and again in the air.
1:00
I'm doing a sausage and sweet potato soup for y'all today.
1:05
And this recipe is from "Cooking with Paula Deen Magazine"
1:10
and it's a wonderful, tasty soup
1:16
that's full of good stuff.
1:19
Now I am browning off some Italian sausage
1:26
that we had to take out of the casing.
1:29
Sometimes you can find it in bulk at the grocery store,
1:35
But usually you find it in the casing,
1:37
looking much like a hot dog.
1:41
So all we have to do is just take that casing out,
1:46
or off, and scramble it up.
1:47
One teaspoon of olive oil.
1:52
Just enough so it won't stick.
1:55
Okay, y'all, our sausage is almost done.
2:04
So it'll, I just don't wanna overdue it
2:06
'cause it'll finish the longer it cooks.
2:09
All right, so in now goes our onion.
2:14
Like I said a lot of good flavors in this soup,
2:20
and some chopped celery.
2:25
And speaking of celery,
2:31
what would you call it?
2:33
but a bundle, I don't know, more than a stalk.
2:41
Don't ever throw away all those beautiful green leaves
2:46
because they give such flavor,
2:48
and they add interest and color and pretty.
2:52
So you wanna make sure that you don't
2:57
throw all those beautiful, flavorful green leaves away.
3:04
Put 'em in your dish,
3:07
or save 'em for a rainy day
3:09
when you need some color.
3:14
you think you're getting away from me, but you ain't.
3:25
Okay, so we'll just cook that for a couple of minutes.
3:30
So that was our onions, our celery
3:36
And can you peek in here, Eddie, with the camera?
3:47
Looks and smells delicious, doesn't it?
3:56
real easy soup to make.
3:59
All right, a little pepper.
4:08
And now I've got two kinds of potatoes y'all.
4:11
I've got sweet potatoes and white potatoes.
4:18
So in go our potatoes, our sweet potatoes
4:21
and our white potatoes,
4:25
and we'll let that cook for a couple of minutes.
4:29
Now the next thing we're gonna add
4:31
is fire roasted diced tomatoes.
4:36
And these are so good.
4:38
see the black on 'em where they charred 'em.
5:07
All right now I'm gonna add 32 ounces
5:23
I couldn't get it out.
5:32
That's a lot easier than trying to make your own pork stock.
5:38
Y'all I am such a goofball. (laughs)
5:42
As I was pouring this in,
5:45
and telling y'all it's pork stock,
5:49
the reason I thought it was pork
5:51
'cause I was reading Dijon pork chops.
5:57
So we're gonna use three 32 ounce containers
6:02
of chicken stock, not pork stock.
6:06
But pork stock would make it very, very good.
6:09
This is smelling good now.
6:12
So the next thing that's going in
6:15
is a bundle of thyme.
6:19
And you can either put that in some cheese cloth
6:22
or just tie it up with kitchen twine,
6:25
which is what I'm doing.
6:27
And hopefully all those leaves
6:30
will cook off and get all in my soup.
6:33
This will probably take 20 to 25 minutes
6:38
for the potatoes to get done.
6:41
All right, our soup, our potatoes are tender
6:46
so now I'm gonna add our four cups of kale,
6:52
and it says in two-inch pieces
6:55
so I'm just giving it a rough chop.
6:59
I don't think it matters 'cause it's gonna
7:08
And it's gonna give it beautiful color.
7:12
I love when my food has all different colors to it.
7:20
I'm gonna let this cook for about 10 minutes,
7:22
until it's wilted down.
7:25
Okay, so about 10 more minutes,
7:27
and we're gonna call it soup.
7:33
This soup is so very, very hot y'all.
7:38
I'm gonna go ahead and dip some up.
7:47
And I'm gonna put my shredded Parmesan cheese on top,
7:56
and then I'm gonna put the lid on it,
7:59
and when it's cool enough that it won't
8:02
take my tongue out of my mouth we'll taste it.
8:09
Maybe it's cooled enough y'all
8:14
Ooh, look at the cheese.
8:26
I just adore Italian sausage.
8:38
I really think y'all are gonna love this
8:42
especially with the weather
8:43
starting to cool down a little bit.
8:47
This is such a beautiful meal.
8:50
Look at all the colors in there.
8:55
And you just think gosh, that's got to be really good for us
9:03
I'm gonna try and get me some of that green stuff,
9:20
Oh and there's a white potato.
9:28
Y'all know how I feel about a potato.
9:33
Love, love, love 'em.
9:36
So I think that we're right on time
9:39
that I'm sharing this recipe with y'all.
