- Hey y'all, it's Jamie Dane.
0:01
I'm back in mama's kitchen.
0:02
Today,
0:03
I'm doing a recipe sent in
0:05
from one of y'all,
0:06
which is always so fun to do.
0:08
So, Audrey Barker
0:11
and I don't have my glasses on.
0:13
Audrey Barker, today is your day.
0:15
We're going to do
0:16
a sausage roll.
0:19
This is a really fun, easy, simple, delicious recipe
0:23
and Audrey has sent,
0:25
Audrey has sent us what she likes to do,
0:28
and I've done these a bunch of different ways.
0:30
But we're going to stick with her recipe this morning.
0:32
Now you can buy a frozen dough if you'd like.
0:35
It's really, really, really easy
0:37
to pick up a roll of prepared.
0:40
This is a pizza crust dough,
0:42
and we're going to roll it out a little bit.
0:44
I'll tell you, canned bread.
0:46
Don't look down on it.
0:47
It's pretty good.
0:47
And it saves you so much time in the kitchen.
0:50
And if you have kids
0:52
or if you have a busy schedule
0:53
and I have both.
0:55
This is a real lifesaver sometimes.
0:57
I've gone ahead and I've taken a roll
1:01
of one pound of sausage
1:03
and ground it off because I wanted this
1:05
to cool down a little bit.
1:06
So if you want to use the spicy or regular,
1:08
any kind of sausage that you want.
1:09
This is one pound of sausage,
1:12
and I've got one package of mozzarella cheese,
1:16
whole pack and then We're good.
1:19
And I'm going to beat up one egg in there
1:22
and her seasoning calls for just some Italian seasoning.
1:26
So I'm probably gonna put maybe
1:28
(rumbling)
1:31
Look, I'm making a mess all over the counter.
1:34
Call that 30 shakes.
1:36
- [woman] How much would you think that is?
1:37
- Ah, I'd say
1:38
maybe aa
1:40
maybe half a teaspoon or so,
1:42
it depends on how much you like
1:43
your Italian seasoning.
1:45
I really liked the fat,
1:47
the taste of sausage and cheese together.
1:51
So I don't want a lot of Italian in there for me,
1:53
but this is Audrey's recipe
1:55
and that's what we're going to do today.
1:57
Don't forget to flour up your rolling pin
2:00
because this stuff is sticky
2:02
and I'll let this into the refrigerator
2:04
right until before we got started,
2:07
because once this starts to warm up and fall out,
2:09
(can thudding)
2:11
it can become a sticky mess and really hard to work with.
2:15
And that's also why I like to cook my sausage
2:19
and then give it some time to cool off
2:22
because this is a finicky little bread
2:23
to work with sometimes.
2:25
And I don't want a bunch of hot meat getting on it
2:28
and heating it up and making it gooey
2:31
and just trust me.
2:34
Leave your dough in the refrigerator
2:35
until you're ready to work with it.
2:37
So, she said the roll this out
2:39
to where it's about a 8/13
2:43
pan.
2:44
It doesn't really need much rolling.
2:47
My mom used to make.
2:48
This reminds me of the homemade pizzas mom made for us
2:51
when we were kids.
2:54
I love
2:55
bread
2:56
dough
2:57
Any kind of that stuff,
2:58
I love.
3:00
It's not necessary that this is good enough
3:02
to hang in the loop,
3:03
cause we're going to roll it up.
3:04
You just want to make sure you have enough space
3:09
to hold everything that we have here.
3:12
Beautiful.
3:13
So, we're going to take our sausage
3:18
and we're going to spread that around the inside of here
3:21
and she says,
3:22
leave about an inch around the border.
3:28
- [woman] Oh, that smells so good.
3:31
- There are so many things
3:33
that I enjoy eating when we cook
3:36
for y'all.
3:38
And this one is going to be near
3:39
the top of the list cause it's got
3:40
- [Woman] I can tell, yes.
3:42
- sausage, bread and cheese in it,
3:44
which I love.
3:48
And if you wanted to,
3:49
you could do this with like ham and pineapple.
3:52
You could put rice or red tomatoes in here.
3:53
You could just do a straight vegetable one.
3:56
With this bread and a little imagination.
3:58
So many things can come together in your kitchen.
4:01
This is a really good tailgate snack.
4:04
Something you could put together
4:05
and eat at the ball game.
4:07
Fresh pepperoni and some mozzarella cheese in here.
4:10
You could do a, a pepperoni roll up
4:12
and you can just eat that stuff cold.
4:14
So this is perfect to pack up for your ball games.
4:16
- [woman] I'm just going to say this and it's so easy.
4:20
- Easy, easy.
4:21
Some of the best food in the whole world you can eat.
4:23
It's easy.
4:24
There's no need to complicate everything when everything is
4:26
already so complicated.
4:29
So, I'm beat her egg up in this cheese.
4:33
Try to get everything work as best as I can.
4:35
(bowl thudding on table)
4:41
I think this egg is going to give us a little bit
4:43
of binding agent in here
4:45
and it's also gonna cook up a little bit
4:48
when our roll is cooking.
4:52
- [woman] Gets a little fluff.
4:53
- [Jamie] So, I've got this mixed up.
4:58
It'll go right on top here
5:00
and spread this out
5:03
evenly up and down.
5:05
- [woman] Yum
5:06
- This is going to be dynamite.
5:11
(bowl clinking sound)
5:13
- [Jamie] Just going to take a little bit of time.
5:16
- [Woman] Jamie, you're headed to the game.
5:17
You could take one of these to the, to the Kentucky game.
5:21
- [Jamie] I could.
5:22
But this one I'm going to eat today.
5:24
(woman laughing)
5:25
- [woman] I'm going to make it to Saturday.
5:27
- [Jamie] You go into a lot of ball games this year.
5:30
Oh, I love college football so much.
5:31
And it's an exciting year when your team does well.
5:35
So take your time.
5:37
Roll it.
5:38
Roll it
5:39
- [woman] That's probably the hardest part.
5:40
- [Jamie] Roll it. Roll it.
5:42
Roll it, roll it
5:46
Now, from here to your sheet might give you
5:47
a little challenge.
5:50
So we're gonna, I'm going to pinch this end.
5:54
And so, I'm going to bring my greased bacon sheet
5:58
as close as I can.
6:02
Because I don't want this to be airborne for long
6:04
or you know what, how about let's use a tool?
6:07
Jamie's ugly
6:08
is my daddy used to call me.
6:10
We got a tool on that end and a tool on this end.
6:16
- [woman] Look, how easy.
6:17
- [Jamie] Beautiful
6:19
(tool clinking)
6:21
Now, I'm gonna go off script a little bit here.
6:24
She does not recommend that to do this,
6:26
but I'm going to score this just a little bit.
6:29
- [woman] You always have to put your own twist on it.
6:32
- [Jamie] So, I'm going to have a little design,
6:33
a little bit of texture to our coding here.
6:36
She says sometimes she does too.
6:38
So you use one with spicy sausage
6:40
and cracks a little pepper on top of it.
6:42
So you can tell the difference between what's for everybody
6:45
and what's for the, the hot at heart.
6:48
And that's it.
6:49
This is going to go into the oven
6:51
for
6:52
um
6:53
drum roll
6:54
350 degrees
6:55
for 20 to 30 minutes.
6:57
So, I'm going to take a peek at this
6:58
in probably about 15 minutes
7:00
and make sure mama's professional oven
7:03
does a burn my sausage roll.
7:04
All right,
7:05
we'll see y'all there.
7:07
Look at here.
7:08
Look here.
7:10
We were in mama's oven for about 20 minutes
7:15
and I did not want to cook it anymore
7:17
because edges are brown and nice and crispy.
7:21
Now, I got a bread knife here.
7:23
I'm gonna trim this end off.
7:25
This is where my extra dough was.
7:29
Checking you know
7:30
We're looking good, looking good.
7:33
(screeching sound)
7:35
Let me use a bread knife
7:36
cause I don't want this to tear up
7:37
because I want y'all to be
7:38
able to see
7:40
the layers and the cheese.
7:42
Oh my gosh
7:46
So you can call this a sausage log.
7:50
You can call it a sausage roll.
7:52
- [woman] Um
7:53
- [Jamie] You can call it anything you want,
7:55
but today
7:56
we're going to call this at lunch.
7:59
Thank you for submitting your recipe.
8:01
I know it's going to be delicious
8:02
and thank you all for tuning in today.
8:04
I'm Jamie Dane.
8:05
I'll see y'all around the kitchen.
